Fried Herbs
Ingredients
Preparation
Heat 2 1/2 inches of sunflower or other neutral-tasting oil in a small pot over medium-high heat to 275° to 300°F. Working with a few leaves at a time, drop herbs, such as basil, sage, or parsley, into oil and fry until translucent but not taking on any color, 20 to 30 seconds. Remove carefully with a spider or slotted spoon; drain on paper towels. Use immediately.
