Feta-Stuffed Cherry Tomatoes

These aren’t hard to make, but it does take a while to clean out the insides of all of the tomatoes. The good news is that they can be made up to a day ahead and the taste is most definitely worth the effort.

Ingredients

32 cherry tomatoes
4 ounces cream cheese, softened
1/4 cup sour cream
4 ounces feta cheese
2 tablespoons chopped fresh chives or green onion
1/4 teaspoon Italian seasoning

Preparation

  1. Step 1

    Cut the tops off the cherry tomatoes. Run a small knife around the inside of the tomatoes, remove and discard the seeds, keeping the tomatoes whole.

    Step 2

    Place the cream cheese in a bowl and stir until smooth. Add the sour cream, feta cheese, chives, and Italian seasoning and stir until smooth. Spoon some of the cheese mixture into each of the tomatoes and arrange on a serving plate. Cover with plastic wrap and refrigerate until ready to serve.
