I've learned that garnishing soup can turn an everyday first course into something elegant. This cream goes particularly well with lentil soup and puréed carrot soup.

Ingredients

1/2 cup well-chilled heavy cream
3/4 teaspoon curry powder
2 teaspoons bottled horseradish

Preparation

  1. In a chilled bowl beat the cream until it holds soft peaks, add the curry powder, the horseradish, and salt to taste, and beat the mixture until it holds stiff peaks. Float spoonfuls of the cream on hot soup.
