These minty carrots are tasty and aromatic. Serve them hot or warm as an appetizer or to accompany grilled or roast meat or chicken.

Recipe information

  • Yield

    serves 4

Ingredients

1 pound carrots
Salt
2 garlic cloves, crushed
1 tablespoon dried mint
2 tablespoons extra virgin olive oil

Preparation

  1. Step 1

Peel or wash and scrape the carrots and trim off the tops and tails, then cut them crosswise into slices about 1/3 inch thick. Put the carrots in a pan and barely cover with water. Add salt and simmer, covered, for 10 minutes, or until almost tender. Uncover to let the liquid reduce, and cook for about 10 minutes more.

    Step 2

Add the garlic, mint, olive oil, and more salt to taste, if necessary, and cook for a few minutes more.
