Ingredients: 2 garlic cloves; 1 to 2 anchovy fillets (depending on how anchovy-y you like it); 2 extra-large egg yolks; Juice of 1 lemon; 1/4 cup red wine vinegar; 1 tablespoon Dijon mustard; 1 cup olive oil; Kosher salt and cayenne pepper to taste; 2 tablespoons olive oil; 2 cups sourdough bread cubes (1/2 inch); 2 teaspoons chopped fresh parsley; Pinch of kosher salt; 1 head romaine lettuce; 1/4 cup freshly grated Parmesan cheese, plus more for the top of the salad
