Fluffy texture (thanks to less-starchy converted rice) and the right balance of flavors (bay, thyme, and white pepper) earn this foolproof rice its name.

This recipe is an accompaniment for Gumbo Z'Herbes.

Ingredients

1 tablespoon butter
1/2 cup finely chopped onion

1/2 teaspoon salt
1/4 teaspoon dried thyme
1 small pinch of white pepper
2 cups converted white rice (about 13 ounces)
3 cups low-salt chicken broth

Preparation

  1. Melt butter in heavy large saucepan over medium heat. Add onion and bay leaf and sauté until onion is translucent, about 3 minutes. Stir in salt, thyme, and white pepper. Add rice; stir 2 minutes to coat. Add broth and bring to boil. Reduce heat to low, cover, and simmer until rice is just tender and broth is absorbed, about 17 minutes. Discard bay leaf.
