Colonial Times Apple-Cranberry Pie with Cornmeal Crust

Thanks to the native Wampanoags, the Pilgrims who landed at Plymouth Rock in 1620 were quickly introduced to such important New World foods as cranberries and corn. The newcomers returned the favor by planting apples, which flourished and were soon available in many American varieties. This wonderful holiday pie, with its cornmeal crust and mixed-fruit filling, celebrates that early culinary sharing. It's a delicious combination of some of our most traditional American flavors.

Pumpkin-Pecan Pie with Whiskey Butter Sauce

This dessert was inspired by my good friend and great Cajun chef Paul Prudhomme. He prepares his with sweet potatoes, which are available year-round, and hence, give his version a longer seasonal shelf life than mine. If there's anything better than pumpkin pie or pecan pie, it's the two of them together. The whiskey butter adds a thoroughly Cajun twist to this sweet ending.

Plum-Glazed Roast Turkey with Spinach, Bacon, and Cashew Stuffing and Plum Gravy

We think all turkeys are improved by brining (soaking in salt water), but it's a cumbersome task that few holiday schedules can accommodate. We find kosher turkeys, which are salted during the koshering process, to be just as flavorful and succulent as brined ones, without all the fuss. However, if you'd like to try brining, stir together 8 quarts water with 2 cups kosher salt in a 5-gallon bucket lined with a large heavy-duty plastic garbage bag and soak your raw turkey, covered and chilled, 10 hours. *Note: The Spinach, Bacon, and Cashew stuffing for this turkey is contained in the Stuffed Onions recipe.
