Flaxseed and Cracked Pepper Crackers
Crackers are one of the easiest things to pop into the kitchen and make. They're simple and impressive. People will do a double-take when they hear that you've shown up at their party and brought homemade crackers. Served with goat cheese, an aged cheddar cheese, or spicy hummus, these crackers shine. Oh! P.S. They're healthy, too.

Black Bean Salsa with Baked Chips
This zesty salsa is high in protein and fiber and low in fat, and it makes a great accompaniment to grilled meat, chicken, or fish. It’s quick work to make your own baked tortilla chips, and they are so much more healthful than anything you can buy from the store.
Beet Chips
A mandoline makes easy work of slicing beets paper thin; if you don’t have one, you can use a very sharp knife, but the slices will take longer to dry out in the oven and won’t be as crisp once cooled. You’ll need four rimmed baking sheets to make the chips, or you can bake them in batches.
Artichoke-Spinach Dip
Fiber-rich artichokes are the base of this vegetable-cheese dip—and their tender leaves stand in as “chips.” The combination of part-skim ricotta and mozzarella cheeses replaces the sour cream in original recipes for this crowd-pleasing party food, resulting in the same creamy texture but less saturated fat.
Buffalo Sausage
Buffalo was (and still is) the primary game meat of the American Indians of the Southwest pueblos. They either hunted buffalo or, if they were an agrarian society like most pueblo tribes, they traded corn and other supplies for buffalo jerky and buffalo skins. Originally, there were over 60 million buffalo or bison roaming the continental United States from the Northwest all the way to Virginia. But by the 1920s, they were almost extinct from overhunting, with only 1,200 left. Fortunately, they have been brought back through effort and careful husbandry, and there are many suppliers of buffalo meat today. When planning my fall menus, I always include buffalo and pair it with local New Mexican fruits like our excellent apples from the Velarde Valley. Any high-quality buffalo sausage will work for this recipe, or substitute a game or lamb sausage.
Flautas and Taquitos
These fried filled taco tubes are actually more Tex-Mex than Mex, but have become a popular Mexican street snack and restaurant favorite. Flautas (flutes) are larger, about the diameter of a cigar—about 4 to 5 inches long, and about 1 inch in diameter. Taquitos are smaller, more like a cigarillo—about 3 to 3 1/2 inches long and 1/2 to 3/4 inch in diameter. Both flautas and taquitos are great choices for entertaining. Serve either as finger food, figuring 2 to 3 per person as an appetizer, or include them as part of a main course combination plate. In Mexico, both flautas and taquitos are usually made with corn tortillas, rarely with flour. For taquitos especially, it’s very difficult to find flour tortillas thin enough to roll up into the proper tight little tubes and seal them securely. At the end of many of the recipes in the book is a feature called Tortillas that notes fillings that work well as flautas or taquitos. Among the many delicious choices are all-vegetable Squash Blossoms with Green Chiles and Cheese (page 23) or Wild Forest Mushrooms with Garlic (page 25) to meat-based Yucatán Chicken with Achiote (page 48), Turkey with Mole (page 52), Pork Carnitas (page 78), or Braised Beef Short Ribs (page 96). In general, the best fillings are cheese based as they hold together and cook evenly. Meat or chicken should be shredded, rather than in big chunks, which can take too long to heat up, causing the tortilla to overfry and burn.
Blue Cheese Dressing
Buttermilk and low-fat yogurt replace some of the mayonnaise and the usual sour cream for a lighter, more refreshing dressing. This is a favorite for spooning over chilled wedges of iceberg lettuce, and it also goes well with hearty Belgian endive spears. The dressing can be made with any crumbly blue cheese, ranging from mild Danish blue to the more pungent Roquefort, Stilton, or Gorgonzola.
Barbecued Chicken Wings
You can bake the chicken wings a day ahead and store them, covered, in the refrigerator; bring them to room temperature before grilling.
Lavash Crackers
Here’s a simple formula for making snappy Armenian-style crackers, perfect for breadbaskets, company, and kids. Lavash, though usually called Armenian flatbread, also has Iranian roots and is now eaten throughout the Middle East and around the world. It is similar to the many other Middle Eastern and North African flatbreads known by different names, such as mankoush or mannaeesh (Lebanese), barbari (Iranian), khoubiz or khobz (Arabian), aiysh (Egyptian), kesret and mella (Tunisian), pide or pita (Turkish), and pideh (Armenian). The main difference between these breads is either how thick or thin the dough is rolled out, or the type of oven in which they are baked (or on which they are baked, as many of these breads are cooked on stones or red-hot pans with a convex surface). Some of the breads form a pocket like a pita bread, and some, like the injera of Ethiopia and Eritrea, are thicker and serve as sponges to soak up spicy sauces. The key to crisp lavash, which is becoming one of the most popular of these flatbread variations, is to roll out the dough paper-thin. The sheet can be cut into crackers in advance or snapped into shards after baking. The shards make a nice presentation when arranged in baskets.
Potato Skin Nachos
Using potatoes instead of tortilla chips as the base for beans, salsa, and other traditional nacho toppings helps you control your sodium intake. The potatoes are a good source of potassium, an important nutrient in helping lower blood pressure.
Hot and Smoky Chipotle-Garlic Dip
This spicy mixture is delicious on cucumber rounds or unsalted baked corn tortillas.

Adding horseradish to sour cream and dill gives you a dip with zip!
Cheater Super Pollo
Super Pollo is a hybrid Mexican-American barbecue chicken restaurant in Nashville that combines Tennessee hickory smoke with chili-rubbed chicken, corn tortillas, and fresh salsas. Unlike the more traditional barbecue shack approach where chicken doused in sweet sauce plays second fiddle to pulled pork, ribs, and brisket, here the cumin-and-chili-rubbed chicken is the star. Handmade corn tortillas replace the usual corn cakes, and rich soupy pintos replace the standard sweet barbecue baked beans. We smoky-brine our Super Pollo first and spice it up with Cheater Chili Dry Rub. Serve with tortillas, pintos, rice, and plenty of salsa and pickled jalapeños.
