Dense and Fruity Banana Bread

Wholesome and seductive all at once, this dark bread can be made in a flash. It’s wonderful with tea as a dessert or as a breakfast bread.

Gado Gado

I’ll always have a pleasant association with this classic Indonesian salad platter, as it was the first meal I had on my first trip to Paris. The tiny, cozy Indonesian restaurant was right next door to our hotel, and coming straight from an all-night flight, my friend Wendy and I were too tired to venture further before a meal and a nap. Served with plenty of rice, the salad (which always combines raw and lightly cooked vegetables) made for a filling and memorable meal. Here’s my Americanized, but still appealing interpretation.

Chana Masala

This simplified version of an Indian favorite is a delightful way to showcase tasty chickpeas.

Golden Tofu Triangles with Rich Peanut Sauce

Amsterdam is host to a number of Indonesian restaurants (Indonesia was once a Dutch colony), and on a visit to this charming city with my sons, we were informed that a rijkstaffel (“rice table”) meal would be a memorable experience. A big bowl of rice is served with several tasty little dishes. My sons were especially keen on the golden sautéed tofu on skewers that was accompanied by a rich peanut sauce. Once home, I tried to reproduce the flavors of the luscious sauce to serve with triangles of sautéed tofu. Though my version is likely not truly authentic, what counts is that it tastes good, it’s easy, and my sons are still crazy about it. Each time I make it, we’re transported back to Amsterdam, if only briefly.

Tofu Shakshouka

Common to many regional Middle Eastern cuisines, this is one of those supersimple dishes that, with the right ingredients, is amazingly tasty. Especially welcome as a fast summer dish, this is a good showcase for the abundance of delicious tomatoes in season. Shakshouka, in its original version, is made with eggs; in this vegan rendition, only one change needs to be made—silken tofu replaces the eggs.

Date-Bran Muffins

Be sure to use unsulfured molasses—not sulfured or blackstrap—in this recipe. Also, buy the freshest, moistest dates you can find.

Sticky Toffee Pudding Cupcakes

Unlike the creamy American dessert of the same name, puddings from Great Britain are dense and cakey. This small-scale version includes pureed dates and a splash of brandy; after baking, the puddings are coated with a delectable toffee glaze.

Date-Nut Mini Cupcakes

If you grew up eating tiny sandwiches made with date-nut bread and cream cheese—or even if you didn’t—you’ll appreciate the wonderful flavor combination of these tiny cupcakes. Crème fraîche is a rich and velvety update, and soft enough for dolloping on top of the spiced cakes. A little batter goes a long way when baked in mini muffin tins, but the cupcakes freeze well and thaw quickly, so you can serve some now and save the rest for later. Or, if you prefer, you can bake the batter in standard muffin tins for about thirty minutes; you’ll end up with about three dozen.

Turkish-Style Lamb Sausage with Fig and Fennel Seed Marmalade

Lamb sausage spiked with pine nuts and raisins, masterful fare from Turkey found around the Mediterranean, is exactly right for a summer grill party. The figs and fennel practically insist on being combined into a marmalade to accompany the lusty sausage. It can also be used as a compote for pork or chicken dishes or as a topping for toast or scones. If you happen to have a fig tree, or know someone who does, use its leaves to wrap the sausage. They impart an aroma and flavor of cinnamon that greatly enhances the lamb and evokes the Garden of Eden, after the Fall.

Date Triangles

Pastry-like in texture and appearance, these cookies pair the intense sweetness of dates with the delicate flavor of almonds. The filling is enhanced by fresh orange zest and juice, as well as orange-flower water; look for the latter in specialty foods shops and Middle Eastern markets.

Whole-Wheat Date Bars

These date-filled cookies get their soft texture from applesauce; wheat flour and bran add wholesome notes.

Oatmeal Bars with Dates and Walnuts

These fruit-and-nut-rich cookies are like soft granola bars; they make a hearty and delicious after-school snack.

Mujadara

This dish comes straight from my mom, who made it nearly every Friday during Lent. It’s hearty and savory, and the rice and lentils together make it a perfect vegetarian protein. The burnt onion garnish is key; it adds depth and richness to the overall effect. Mom often served this with a rustic tomato, cucumber, and red onion salsa seasoned with lemon and mint, which lend acidity, texture, and fresh flavors to the plate.

Buttery Black Lentil Dal

There are as many varieties of dal (the nourishing lentil soup) as there are towns and villages in India. Our recipe is inspired by the one served at Kasa Indian Eatery, just down the street from the Market. It gets a dose of butter, which makes the soup incredibly rich in flavor, and pureeing half gives it extra creaminess. This recipe can easily be doubled.

Indian Lentil Soup

As Cakebread Cellars expanded sales overseas, we began inviting chefs from abroad to participate in the Workshop. Predictably, some new and intriguing scents soon emerged from our kitchen. This warmly spiced lentil soup is Brian’s invention, but he devised it after working with Indian chef Sujan Mukherjee at the 2008 Workshop and observing his spicing. Now Brian makes this wholesome soup with the Napa elementary school students that he teaches regularly, and he demonstrates the recipe at our employees’ wellness classes.

Date and Vanilla Crème Brûlée

Dates were always around the house for snacking when I was a kid. Now I absolutely love to use them in both sweet and savory dishes. Large, dark-skinned Medjool dates are grown in the United States, Jordan, Israel, and now in Baja! I think they add a whole new dimension to an otherwise classic crème brûlée.

Carrot, Spinach, and Rice Stew

This is a stew of carrots, spinach, and rice cooked, you might say, to death. I first ate it at a Turkish lunch counter and was taken by its depth of flavor. The whole is definitely greater than the sum of its parts.

Lassi Namkeen

If you like ayran (preceding recipe), the slightly savory yogurt drink of Turkey, you might try this, the even more unusual yogurt beverage of India. Like many beverages, it comes with a variety of health claims, but regardless of those, it’s refreshing and—obviously—protein packed. I have had this with a clove of garlic included and with so much black pepper—probably around 2 teaspoons for this quantity—that I was stunned. This version is relatively tame.

Ayran

A popular drink throughout the Middle East, ayran is a refreshing protein-packed beverage for a hot day. In some places sugar is added instead of salt; try it either way. The amount of water you add will depend on the thickness of your yogurt; very thick yogurt will take almost an equal amount of water, and very thin yogurt may need only 1/2 cup or so.

Lassi Meethi

While Lassi Namkeen (preceding recipe) is an acquired taste for most people, this is instantly appealing. Be sure to try the fruit variation.
