Potato Salad with Haricots Verts, Roquefort and Walnuts
If you can't find haricots verts--thin French string beans--buy the slenderest green beans you can find. Pack the prepared potatoes and beans separately, then arrange them on a platter when you reach your destination.
Mixed Berry and Pecan Shortcakes
It's so easy to make these processor-quick biscuits ahead if you like. Then reheat, split and fill them with ice cream and berries just before serving.
Herb-Crusted Grilled Lamb with Apricot Relish
The lamb top roast is one of the three "subprimal" cuts that can be cut from the leg of lamb. The equivalent of the beef top round roast, but smaller and more tender, it provides a succulent boneless lamb roast when you don't want to deal with a whole leg.

Frozen Amaretto Cream Baskets with Berries
"I started cooking when I was a 'young married' in my twenties and realized I liked it," writes Sheryl Hurd-House of Jupiter, Florida. "But I'm having even more fun cooking now that our three children are grown and it's just me and my husband, Garry."
Frozen berries — thawed, of course — can stand in for fresh ones in the winter. Prepare the frozen "baskets" (made from cream cheese that’s lightened with whipped cream) at least two hours and up to three days before serving.
Peach Blackberry Pie
When you brush the bottom pie crust with an egg wash, you keep the fruit from making the pie soggy as it bakes. By sprinkling the top crust with sugar, it makes for a great sugary crust.

Grilled Marinated Flank Steaks
There's nothing like grilling some meat on the barbecue pit to make a weekend complete. Go ahead and serve this with potato salad. Oh, and remember, when slicing flank steak or London broil, you always want to cut across the grain. I made this for a kicked-up tailgating show on Emeril Live, and it definitely was one of the hits of the party out in the parking lot!

Barbecued Beef Ribs with Molasses-Bourbon Sauce
Beef rib meat becomes tender and succulent with slow cooking over low, indirect heat. Marinate the ribs overnight and allow for three hours of cooking time on the grill.

Grilled Vegetable Salad with Greens, Tomatoes, Herbs, Olives and Cheese
For this fabulous salad we used red onions, beets, zucchini, eggplant, and bell peppers, but any mix of summer vegetables would work. The salad gets served with grilled bread and is nice with a white wine, like Sauvignon Blanc.
Cantaloupe Curls with Spiced Wine
An old-school ice cream scoop turns out beautiful curls of melon; the pink peppercorn and bay–infused wine syrup keeps things interesting.
