Sour Cream

Wild Mushroom Soup with Horseradish Cream

This classic regional dish is from Ralph Potter, chef at Darley's at Lilianfels in the Blue Ridge Mountains west of Sydney. "Wild mushrooms are so plentiful when the sun has come out after it's been raining for a few days, why not be indulgent and make a special soup out of them to celebrate the season."

Ashkenazic Sour Cream Coffee Cake (Smeteneh Küchen)

Coffee cakes rank among the most popular of comfort foods, welcomed at breakfast, lunch, afternoon tea, dinner, and as the name indicates, coffee breaks. A coffee cake batter is generally more liquid than a quick bread one and contains a bit more sugar, and as a result, the final product is lighter and moister. On the other hand, coffee cakes tend to be less sweet than butter cakes. There are many versions of kuchen, this streusel-topped sour cream type being a very popular one. It is commonly served at the meal following Yom Kippur, or Shavuot, and on Sabbath afternoons or the melaveh malcha ("accompanying the queen") party following the Sabbath. For the later occasion, spices are added to the batter and topping, reflecting those used during the havdallah ceremony signaling the end of the Sabbath.

Fruit Tartlets in Pistachio Phyllo Shells

Chocolate-Caramel Easter Eggs

It's important to use an imported chocolate, such as Lindt or Callebaut, for this recipe. The high cocoa-butter content of the imported type produces chocolate eggs that are more flexible and easier to remove from the molds. You can make all the eggs out of white chocolate, all out of bitter-sweet chocolate or a few from each.

Cherry-Almond Coffee Cake

I'm still telling my friends about the cherry-almond coffee cake from the White Rose Inn in Emporia, Kansas. I had it for breakfast in the morning, then requested it again with my tea the same afternoon. Virginia Doser Corona Del Mar, California

Parsley-Potato Pancakes

These can be topped with caviar or smoked salmon for a special-occasion appetizer, but they are also good with fried eggs or as a side dish for grilled fish.

Blazing Beet Soup

This rich red nectar may be eaten hot or cold. I serve it in a demitasse or other small cup. Scrub the beets well before cooking. Taste as you prepare the soup, because getting the right balance of sweet and sour is important.

Halibut with Sambal Vinaigrette and Wasabi Cream

"At Highland's Garden Cafe in Denver, Colorado, I had an unusual and delicious lunch entrée of fish with sambal vinaigrette and wasabi cream," says William Starret, Jr. of Washington, D.C. "I would greatly appreciate it if you could get the recipe for me."

Smoked Salmon and Sweet-Potato Hash

This is a nice starter for brunch or supper. It can be made a day ahead and rewarmed before serving.

Sour Cream-Orange Coffee Cake with Chocolate-Pecan Streusel

The streusel here is both a filling and a topping — for twice the crunch and flavor.
