Kaki-Age Soba
Kaki-age is a kind of tempura where a variety of ingredients are mixed with batter and deep-fried. The result is a delicious tempura patty that is paired here with soba and hot broth for a wonderful play of flavors and textures. You’ll experience a progression of tastes as you enjoy this dish: a crispy and crunchy patty at first, then the broth infusing it more and more, all the while, the tasty tempura crumbs enhancing the broth.
Scallop Dumplings
Delectable scallop dumplings often combine scallop and shrimp, but I prefer a filling that features just scallop. The silky plump flesh gets a boost from rehydrated shreds of dried scallop, the stealth ingredient that gives this dumpling its distinctive savory-briny-sweet edge. Shredded carrot imparts a pinky-orange glow. Dried scallops are sold at Chinese markets in 8-ounce plastic packages in the refrigerated foods section near the dried shrimp, as well as by the ounce. The packaged ones are small, the size of bay scallops. Larger ones, resembling thick checkers pieces, are individually sold by weight because they are pricey; buying two of them, however, is not prohibitively expensive. I mostly purchase little ones, refrigerate them in a zip-top plastic bag, and use a little more than I would otherwise. The instructions here are for shaping big ruffly dumplings like the Chiu Chow dumplings on page 137. If you prefer cute pleated morsels, substitute this filling for the one in the har gow shrimp dumpling recipe (page 135).
Scallops with Red and Yellow Peppers
I love the rich, decadent sensation of scallops in my mouth, but you can make this recipe with any kind of seafood, fish, or poultry For a south-of-the-border kick, add a tablespoon of tequila to the sauce mixture and sprinkle with a tablespoon of chopped cilantro before adding the spinach. Be sure to liberally coat the inside of the lid with oil so that the spinach will not dry out and stick.
Scallops and Sweet Potatoes
The sweet potatoes soften in the broth to emerge creamy and bursting with flavor. Even though this exciting meal doesn’t contain chile peppers, ginger adds considerable zing. Be careful not to overdo the black pepper as it will intensify during cooking. Chanterelle or hedgehog wild mushrooms heighten the flavor in this dish, but shiitake or button mushrooms will taste good in a pinch. To make julienne sticks, cut the potato into thin disks. Stack the disks and cut into thin sticks lengthwise.
Pacific Island Seafood
Adapted from a recipe out of Guam, the bananas give this meal a tropical flavor that my mother and mother-in-law both love. Be sure to cut any brown spots off the bananas before slicing. Sweet potatoes and yams range tremendously in size. You may be able to use all of a medium sweet potato in a single meal. However, if it is ten inches or longer, use only part of it. To make this dish even spicier, add a diced fresh jalapeño or serrano pepper to the onion layer at the bottom.
Cioppino
Cioppino, or fisherman’s stew, had its origins in San Francisco by way of Italy, but all Mediterranean countries have similar fish stews. Make this version your own with your favorite treats from the sea. Traditionally, this dish is not very soupy; for more broth, do not drain the can of tomatoes. I prefer to avoid precooked seafood for Glorious One-Pot Meals. If your frozen shrimp is pink, it’s precooked. While using precooked seafood certainly won’t ruin your meal (it’s difficult to fail with a Glorious One-Pot Meal!), raw seafood results in a stronger flavor and will be more tender after cooking.
Sautéed Scallops
As a child, and well into adulthood, I was allergic to scallops. But little by little I got over it. It can happen; the body does change. So I’ve been making up for my years of deprivation and quite often treat myself to a full plate of carefully cooked sea scallops. I remember Julia Child emphasizing how important it was to use a large pan, so the scallops would have plenty of space to brown. And because they needed to cook over high heat, clarified butter was essential. We were once having lunch at an elegant French restaurant in New York, which will be nameless, and Julia ordered scallops. After her first bite, she put down her fork and proclaimed that the chef hadn’t used clarified butter. As she tucked away most of the flawed dish, she emphasized again the importance of using clarified butter when browning over high heat, although she did admit that most Americans aren’t going to take the trouble to clarify their own butter, and that it was okay for the home cook to use half butter and half light vegetable oil, which would temper the burning. I am always careful to watch the pan, as if Julia is still looking over my shoulder, whenever I make this dish.
Seafood Lasagna Rolls with Panko Crumb Topping
Unlike layered lasagne, which can lose its shape and become messy when served, these individual rolls are an elegant alternative that look as lovely on the plate as they taste. Crisp white wine and the nutty flavors of sherry come together beautifully in a creamy white sauce, adding a delicate accent that’s perfect for the shellfish. Easily portioned, this dish is excellent for entertaining. Remember to do your prep early, as this recipe does take some time to assemble.
Grilled Sea Scallops with a Watermelon Three-Way & Dandelion Greens
I don’t think there’s anything terribly exciting about grilled scallops—but I do think you can put them together with interesting ingredients and make them exciting. That’s why I pair scallops with—wait for it—watermelon! I know, who would think of putting scallops with watermelon, let alone three kinds (watermelon, watermelon rind pickles, and watermelon radishes)? It may seem wacky, but the sweetness of the watermelon offset by the bitterness of the dandelion and the sharp red onion makes this a spectacular combo. And, if you’re thinking ahead (like we always try to do!), make the pickles a day (or a week) in advance and keep them in the fridge. These pickles make anything taste tangy and delicious; I keep a jar on hand for whenever a salad or sammie needs an extra little pickle-y punch!
Harvey Cedars Fish Stew with Parsley Croutons
Every summer my family vacations in Harvey Cedars on Long Beach Island, New Jersey. Say what you want about New Jersey but let me tell you, when it comes to produce and seafood, it’s hard to beat. Most people you talk to know all about the tomatoes and corn, but there is so much more. How about the clams? My family gets ours from a local clammer. The scallop boats come in daily. The swordfish is exceptional and the crabs are as good as they are anywhere. I’m inspired by all of these things, and I’ve included most of them in this one dish. It may seem like a lot of ingredients, and it is. If you want to leave something out go ahead, or add something to it by all means. All the action happens in one pot, making this a great beach house dish.
Grouper Ceviche with Mango, Citrus, and Cilantro
Ceviche is a much-loved dish in Miami, with a million delicious variations. In a nutshell, it’s seafood that is prepared by marinating in citrus juice, which makes the fish more opaque and firm, just as if it had been cooked with heat. I like to keep my recipe pretty straightforward and often use grouper, a favorite local fish. If you want to play around with other kinds of seafood, snapper, striped bass, scallops, and halibut are all the right texture. Whichever you choose, it’s important to start with the freshest, cleanest fish possible. The bright, refreshing combo of orange, lemon, and lime with creamy avocado and sweet mango makes for a great balance of texture, flavor, and visual appeal. If I had to describe it, I’d say it tastes like sashimi salsa! A little of the kimchi base adds another level of pow. You can sub a good hot sauce but trust me; it’s crazy good with the kimchi! As with all cold preparations, all of the ingredients should be cold to start. Also take the time to chill your serving bowls to ensure the dish is enjoyed at the proper temperature. For a cocktail party, serve the ceviche in tablespoons or wonton spoons as single bites.
Scallop Burnt Ends
Here’s a barbecue-style surf and turf! This recipe combines both barbecuing and grilling techniques, with slow-cooked brisket slices wrapped around fresh scallops and cooked on a hot grill. Our tasty way to use up leftover brisket slices was featured on Live with Regis and Kelly in 2007. Serve it hot off the grill as either an appetizer or a main course.

Crisp Pan-Fried Scallops
These scallops are pan-fried, but the effect is very similar to deep-fried. Panko crumbs or flakes are Japanese-style bread crumbs. They’re coarser and more irregularly shaped than regular bread crumbs, and although they look fresh, they’re dry. When used for frying, they absorb less oil and make a lighter, crunchier, more tender and delicate coating that stays crisp longer than ordinary coatings.

I serve most risottos as a side dish, but this is an entrée-style risotto. With a fresh green salad and a glass of crisp Pinot Grigio, this is one of my favorite light suppers—and it’s based on leftovers!
Grilled Seafood Salad
This is a beautiful dish, which I discovered on vacation with my family in Capri. Every year, we visit the same hotel—Hotel Quisisana—on this beautiful island in southern Italy. The region is rich in seafood, which they use for everything from antipasti to entrées. Some of the seafood can be a bit exotic for most American palates, especially squid. But don’t be afraid of it: You can buy squid that’s already cleaned from your fishmonger, and all you need to do is rinse, grill, and slice. Just like chicken. (Okay, not really just like chicken, but the steps are the same.)
