Board Dressing
Once I have grilled a piece of meat, I want to capture the flavors of the delicious juices that emerge on the cutting board when I slice it and then build upon them, so I make what I call a board dressing. I often add some olive oil, or some of the rendered fat trimmings from the baste, or perhaps a little balsamic vinegar, to the juices.

Gnudi
One day I swear I'm going to take gnudi off the menu at The Pig. We'll probably end up closing down, because it's one of the most popular items on the menu. Yet it might be worth the risk—it's been seven years of sheer hell making these little things. For cooks without a restaurant to run, though, gnudi are a dream. They're extremely simple—just a mixture of ricotta and Parmesan formed into stubby dumplings, then coated with semolina flour. They hang out in the fridge until the moisture in the ricotta has fused with the semolina to form a delicate skin. But when you must have them ready every day for service, it's another story. They're so temperamental—sometimes they're ready to cook after a day in the fridge, sometimes it takes two or three. I often jump the gun, cooking them too early and tearing my hair out as I watch them fall apart in the water. At home, though, there's no need to rush the process. It's easy to get right, as long as you give them three days to develop that skin—but not much longer or the skin will get too dense. In the spring, I'll occasionally leave out the brown butter and spoon Basil Pesto here and there.

Butternut Squash Tortelloni with Cranberry Walnut Sauce
This recipe has several steps, but give it a try; I think you’ll find that none of the steps is difficult, and you can prepare the recipe in stages if you like. Make the filling one day, fill and cook the tortelloni the next, or make and fill the pasta to freeze, and cook anytime you want! The autumn flavors of squash, nuts, and cranberries make this the perfect side dish for a big holiday meal, or a vegetarian alternative for the non-meat eaters at the table.

Fresh Ricotta and Egg Ravioli with Brown Butter
I’m generally turned off when people describe food as being “sexy,” but sexy is the best description I have for this warm, luscious, pillowy raviolo. The word raviolo is the singular for ravioli, and this is one big, square raviolo filled with ricotta and a raw egg yolk. We are not at all ashamed to tell you that this is a direct rip-off from Michael Tusk, the chef and owner of Quince restaurant in San Francisco. The first time I had it, I thought it was one of the best things I had ever eaten, and for sure the single best pasta dish I’d ever put in my mouth. When our servers bring this to the table, they suggest to the guests that they cut into the raviolo starting from the center so the egg pours out onto the plate into the pool of browned butter that the raviolo sits in. It’s sexy. What else can I say? We recommend you use farmfresh eggs with bright orange yolks. You will need a 3 × 3-inch fluted cookie cutter or a fluted pastry cutter to make these.
Crisp Duck Leg with Lentils Castellucciano
We serve this as a daily piatto special in the Pizzeria with Lentils Castellucciano and fried sage sprinkled all around. We included it as a variation to the Duck al Mattone because the preparations of the duck, with the exception of cooking times, are identical.

Farro, Orange, and Pine Nut Dressing
You can make the dressing through step 2 a day ahead; refrigerate in an airtight container. Just before serving, stir in oranges, pine nuts, and parsley.
