Paella, Fast and Easy

Some people argue that a true paella must contain only meat or seafood, never both, that a true paella can be prepared only in a paellera, or that true paella must be cooked outdoors over wood. Perhaps they’re all right. What’s clear to me is that you can produce a fabulous rice dish I call paella in just over half an hour, which makes it a great option for weeknights.

You can use any short-or medium-grain rice you like for this dish, which is most easily made with leftover rice

Carrot, Spinach, and Rice Stew

This is a stew of carrots, spinach, and rice cooked, you might say, to death. I first ate it at a Turkish lunch counter and was taken by its depth of flavor. The whole is definitely greater than the sum of its parts.

Avgolemono

If Stracciatella is egg drop soup’s less-well-known cousin, avgolemono is its neglected stepchild and it can be prepared easily, quickly, and almost effortlessly from ingredients that most of us always have on hand.

Horchata

Horchata (which can be used to describe any sweet drink, but has come to mean, by default, this one) is sold all over Mexico (and throughout southern California). It’s an addictive, deliciously creamy drink that contains no dairy but is based on ground rice. Traditionally it’s made in a mortar and pestle; you’ll be glad you live in the age of blenders.

Garlic Duck and Rice

This Laotian version of arroz con pollo is a rich, flavorful, and gorgeous one-pot dish, unusual and quite easy. See page 500 for information on Thai fish sauce (nam pla).

Arroz con Pollo

You can make arroz con pollo, the Caribbean specialty, fast or slow. For weeknights, go with the stripped-down variation. But when you have a little time—and you don’t need much—make the full-chicken stock for extra flavor, and saffron for best color and complexity. If you don’t have stock, don’t worry too much. Since the chicken and vegetables are cooking in the liquid, the dish will taste good even if you make it with water. A few slices of tomatoes would go well here, or any salad you like. You don’t need much to round out this meal.

Chicken Korma Pulao

This variation of Biryani (preceding recipe) is spicier, creamier, and somewhat more complicated. Go easy on the cayenne: this is meant to be a fragrant dish, not a fiery one. Serve with Dal (page 433) or any Indian-style vegetable.

Chicken Biryani

When you open the lid of a pot containing good biryani—the Indian equivalent of arroz con pollo or paella—the smell should drive you wild: chicken (or lamb), butter, and spices should dominate, followed by the subtle aroma of basmati rice. When it’s prepared correctly, it seems to me, you can even smell the salt. This is one of India’s—indeed the world’s—great dishes, and yet too often in restaurants it is underwhelming, underspiced, and made without care. The spice mixture makes the dish exotic, but though it must be made carefully it isn’t difficult. (The chicken isn’t browned, which actually makes it easier than many similar preparations.) One key is to use real butter (in sufficient quantity; I’m sure the ultimate biryani has more butter than this version) and good spices: cardamom in the pod, whole cloves, cinnamon stick, and real saffron. Good coarse salt doesn’t hurt either and, needless to say, the better the chicken, the happier you’ll be when you bite into it. It’s also important to leave the lid on as much as possible. I’m not one of these people who believes that rice must be cooked undisturbed (on the contrary, I think it stands up to all kinds of abuse), but in this instance you want to make sure the chicken cooks fairly quickly and that as much of the aroma as possible remains in the pot. The goal, remember, is to smell everything. Serve with Dal (page 433) or any Indian-style vegetable.

Chicken and Chickpea Tagine with Vanilla

This tagine is similar to the preceding Chicken and Lentil Tagine but, with the addition of dates and vanilla, far more exotic. My version of this tagine may not compare with those that begin with toasting and grinding spices and peeling grapes, but it’s easily executed (especially since the chicken is not browned first, which spares the cook a fair amount of time and energy) and, I think, quite divine. Some things to look out for: First, work with dark meat chicken only. In Morocco, the breast might be propped up out of the way so it almost steams and remains moist, but this is impractical without a special pot (also called a tagine). Be aware that tagines are on the dry side, so don’t add liquid to the sauce unless it’s threatening to burn. Home-cooked chickpeas and fresh tomatoes are, of course, preferable to the canned varieties, but in this dish the differences are not marked. Do, however, use a vanilla bean. If all you have is vanilla extract, omit the vanilla entirely.

Asopao de Pollo

This soupy rice and chicken stew is a cousin to Arroz con Pollo and Paella (pages 293 and 520), but it’s much looser, and you must eat it right away; otherwise, the rice will absorb too much of the liquid and the stew will lose its soupy texture. For the ham, it’s best to buy a thick slice and cut it into chunks; you don’t want shreds of thinly sliced ham. Very lean bacon or a piece of smoked pork will work nicely too. Some ideas for varying this dish: Don’t add the chopped tomatoes, but put them in the bottom of each bowl before adding the soup; garnish with chopped fresh avocado; add fresh lime juice, onion, or chopped fresh cilantro leaves to taste, just before serving; or serve with chopped chiles in adobo (from a can) or Tomato-Chipotle Salsa (page 611).

Hainanese Chicken Rice

A Chinese dish that is also seen in parts of Southeast Asia. Serve with Ginger-Chile Sauce. Even more than usual, be sure to use a good-quality chicken here; its flavor is what makes the rice special.

Lamb Pilaf with Cinnamon

Great for a small crowd, this one-pot meal is intensely flavorful and sweet and will fill your kitchen—indeed, your home—with the wonderful aromas of cinnamon and simmering meat. If you have the time and the energy, this is even better if you brown the lamb chunks first: Put about 2 tablespoons of olive oil in a separate skillet, turn the heat to medium-high, and brown the chunks on all sides, turning as needed; this will take about 15 minutes. (The lamb chunks can also be browned in the oven; just put them in a skillet or roasting pan and place in a 450°F oven. Roast, stirring occasionally, until they are browned all over, 20 to 30 minutes.) Other cuts of meat you can use here: boneless beef chuck, boneless pork shoulder or leg (fresh ham).

Lentils and Rice with Caramelized Onions

A slightly labor-intensive but wonderful vegetarian dish that, with its contrasting textures and slight sweetness, makes a terrific main course or a first-rate side dish. Other legumes you can prepare this way: split yellow or green peas.

Meat Filling for Grape Leaves, Cabbage Leaves, Peppers, and Tomatoes

The more-or-less standard meat filling for stuffed vegetables, made with a lot of herbs and spices. It’s so delicious that you can bake the vegetables with no sauce around them, as in the recipe on page 492, or use one of the preparations on pages 445–447. You can add pine nuts and currants to this mixture if you like or make the vegetarian version that follows.

Rice, Pine Nut, and Currant Filling for Grape Leaves, Cabbage Leaves, Peppers, and Tomatoes

A flavorful vegetarian filling for stuffed vegetables (pages 445–447 and 492) that is simple, quick, and easy to make in advance. If you have a mild chile powder (like one made from Aleppo or New Mexican chiles), use 1/2 teaspoon or more of it in place of the cayenne. Some cooks add about 1/2 cup grated hard sheep’s cheese, of a type like pecorino Romano, to this mix.

Bean and Nut Filling for Grape Leaves, Cabbage Leaves, Peppers, and Tomatoes

You can definitely use leftover beans for this recipe, but especially White Beans with Garlic (page 441) or Aromatic White Beans with Chicken Stock and Tomatoes (page 442). If you must cook beans from scratch, it would be best to combine them with some garlic and other aromatic vegetables and a few sprigs of thyme while they cook.

Catfish or Other Fillets with Rice

Think of this as a simpler take on paella. It’s Eastern European in origin, so it was often made with freshwater fish, but you can use any fillets you want. With a salad, this is a wonderful—and very fast—one-pot meal. If you’re using water instead of stock, you might augment its flavor slightly by simmering it for 15 minutes with a carrot, an onion, and a celery stalk, along with a few peppercorns, a garlic clove, a bay leaf, and a teaspoon of vinegar; strain before proceeding. If you don’t have time for this, that’s fine too—the dish will still be good, even if you just use water.

Braised Leeks with Olive Oil and Rice

A simple little thing (the hardest part is cleaning the leeks) but delicious. The sweetness of the carrots really comes through, and the reserved olive oil adds a nice touch. Good with sautéed or roast poultry or meats. Other vegetables you can prepare this way: Belgian endive (cut in half the long way), bok choy, and chard are all good.

Halibut or Other Fish Steamed in Banana Leaves

This dish is dead easy to make and will wow everyone you serve it to. Dried banana leaves are sold at many Asian food markets, and though they’re not likely to be the kind of thing you use every week, they are cheap and keep forever. For steaming Sticky Rice (page 508) or a dish like this, they are enormous fun and add a wonderful woody, smoky flavor. Furthermore, they seal in so much moisture that it’s difficult to overcook the fish this way. See page 500 for information on Thai fish sauce (nam pla).
