Apple & Olive Oil Cake with Sautéed Apples & Mascarpone

This is a super-yummy cake that you can whip together easily once you’ve got your mise en place under control. Start by preparing all your apples at once—then just break off what you need to sauté for the cake first, and put the ones for the topping in a bowl off to the side. After you’ve grated the lemon zest for the cake, squeeze the juice from the lemon and toss it with the reserved apples for the topping—this adds flavor and keeps them from turning brown while you make the cake. If you really have it together, you can make the topping ahead of time and keep it in the fridge until you’re ready to serve the cake. You don’t even have to serve the topping warm, but I think it’s really special this way. Got leftovers? This topping is great over ice cream, on pancakes, or, of course, on second helpings of cake!

Vegan Gluten-Free Irish Soda Bread

My brothers and sisters cringed when I told them I was including Irish soda bread in this cookbook. I can’t really blame them. Grandma McKenna used to force it on us when we’d pop by her house after church, as if it were punishment for interrupting her Sunday afternoon cleaning spree. My brother Bill pointed out that Grandma would ask him if he wanted some candy and when he said yes she’d sit him down with a thick slice of Irish soda bread. My brother Frank noted that her solution to gripes was, “Put some butter on it!” Instead, I decided I’d simply update this old-world snack so that it stands a fighting chance against the evolution of tender tastebuds.

Rugalach

This is another Jewish recipe that became an instant favorite at the bakery. I don’t know about you, but I’m a complete sucker for any and all rolled pastry. Pulling apart the layers and investigating and indulging in the different textures inside are activities I would do all day if asked. Normally, rugalach recipes call for nuts but I made them optional in honor of the allergy-plagued among us.

Oatmeal Cookies

Until Bob’s Red Mill came up with a totally affordable gluten-free oat, you would never have seen these in the bakery. Thank all that is holy—once again—for Bob’s! Today these cookies are a best seller in both New York and Los Angeles. If you hate raisins (I do . . . sorry, raisins!), try subbing in chocolate chips or dried cherries instead. If you’re some sort of oat maniac, you can dump in as much as another 1/3 cup of oats and be just fine.

Wonder Buns

The slightest whiff of cinnamon and melted sugar is likely to send any lady into a nostalgic reverie for the food court of her youth. Today this recipe commands center stage at the bakery whenever we fire up a batch—no small feat considering the competition of fragrant apple muffins, nutty cornbread, and dozens of other aromatic samplings. Whole Roasted Chicken with Plumped Raisins, Toasted Pine Nuts, and Arugula

Succulent, tender, and aromatic, roast chicken is a dish that all cooks should have in their arsenal. There are many schools of thought on how to master the perfect roast chicken. My philosophy is the simpler the better. I don’t use a big roasting pan or rack, truss the bird, or change the oven temperature fifty times. As far as technique goes, I like to start roasting the chicken breast side down to protect it from drying out in the initial intense heat. Gravity also works on your side that way; all of the juices gather in the breast meat during the first half of cooking, keeping the meat really moist. Then I turn the bird over to finish cooking and brown the breast. Swiss Chard and Caramelized Onion Panade (page 183) makes a terrific side.

Caponata with Pecorino Romana

Similar to ratatouille, this Sicilian classic is a vibrant stew made with eggplant, roasted bell peppers, tomatoes, onions, raisins, and olives mixed together with lots of good olive oil. It’s one of those dishes where the final product exceeds the sum of its parts. Fruity olive oil is essential to the success of this dish; it is the facilitator of all the ingredients. Caponata can be served warm or at room temperature, as an antipasto, a side dish, or a topping for Crostini (page 27) or pizza.

Pineapple Chutney

This colorful chutney, better than any you can buy in a jar, adds a sweet-and-sour note to curries, baked tofu, or any spicy dish and can even put a new spin on that same old peanut butter sandwich.

Pan-Fried Eggplant with Buffalo Mozzarella, White Anchovies, and Raisin-Pinenut Relish

Eggplant is like a sponge, soaking up whatever moisture it encounters. This, at least in part, is why it is typically breaded when fried—the bread crumbs serve as a shield to limit how much oil is absorbed. In this recipe, however, we salt the eggplant for about an hour to remove excess moisture and then fry it without a coating so it absorbs some oil. Decadent? Absolutely; the eggplant becomes luxuriously creamy and custardy. As buffalo mozzarella is a bit milder and softer than regular mozzarella, it is a perfect complement to the eggplant, but you can use whichever mozzarella you prefer. Interestingly, both the eggplant and the cheese are really the supporting cast in this sandwich; it is the relish that’s the star. The secret ingredient? Anchovies. If you need a purely vegetarian sandwich, leave them out, but they lend a subtle kick, and with the sweetness of the raisins and texture of the pinenuts, you have a picante and assertive relish.

Sauteed Broccoli Rabe with Raisins and Pine Nuts

In my family, this is a traditional side during the holidays, but that’s just my family—it’s really perfect any time of year. The trick is to blanch the broccoli rabe in boiling water for a minute or so to get rid of some of the bitterness and partially cook it.

Chicken with Mole Negro Sauce

Authentic, fiery mole sauces from the southern region of Mexico take days to prepare. This is a relatively quick version of the chunky, spicy, and chocolatey, mole negro or “black sauce.” To experience the full flavors of peppers, native spices, and fresh chocolate, book a culinary vacation to Oaxaca, Mexico, the Land of Seven Moles, where you can explore a district known as the Trail of Chocolate. In the meantime, get fresh ingredients from your local farmers’ market. You can substitute jalepeños for the poblano chiles, but the dark dried ancho and mulato chiles are important to bring the sauce to its characteristic deep chocolate brown. This will make a large batch of sauce designed to thin and use for a meal, then freeze and thaw as needed.

Fruitful Brown Rice Cereal

This sweet, fragrant breakfast dish is even more delicious and healthful when topped with slices of banana or strawberries and additional fat-free milk.

Nana’s Caramel Pecan Rolls

Gina: I don’t know if any of you have an appetizer before breakfast, but that’s what we sometimes do in our house, and it sure is fun. ’Course, when we do, the only appetizer we make is Nana’s Caramel Pecan Rolls. Nana was my godmother, who lived across the street from us while we were growing up. Nana is one of the best cooks in our family, and one of our most cherished matriarchs. She took care of me from the time I was six months old until I started school. Later, Nana took care of Shelbi when she was a baby. Nana always made the best caramel pecan rolls, and when we didn’t want to make them ourselves, we’d call her and request a batch for a special Sunday breakfast. After making these, you’ll know why.

Boozy Baked Apples

Gina: Nothing is as warm or as inviting as an old-fashioned baked apple. Our baked apples are even more inviting because we pack them with golden raisins, dried cranberries, and nuts, splashed with rum for extra goodness (or try Calvados, an apple-flavored liqueur from France, for a special twist). Serve these warm, fragrant little gems with a scoop of caramel or rum-raisin ice cream. In the unlikely event that you have a few left over, there’s nothing like a cold baked apple for breakfast, served in a pool of cold half-and-half. (Chances are your sweet-tooth husband is also on to this secret, so don’t be surprised if he beats you to the kitchen.)
