Fruta Cristalizada
Crystallized fruit is basically fruit that’s been cooked for a long time in a sugar or piloncillo syrup until it is almost translucent (hence the name). t is customary to presoak the fruit overnight in lime or calcium oxide so hat it retains its shape after the long cooking process. The town of Santa ruz Acalpixa in Xochimilco is one of the best places to appreciate the normous variety of candied fruit, including prickly pears, figs, oranges, cactus paddles, and even chiles. A word of caution, though: beware of bees when making this! The process takes several days, but it’s quite simple and the fruit will fast for a several months and up to a year if stored properly. You can use he same method for many kinds of fruit, so pick some that are in season but slightly underripe so they don’t fall apart.
Roasted Fruit
This dessert is more interesting when prepared with a variety of stone fruits, but if you can’t find one particular type, substitute more of another. You could also use apricots in place of any of the other three fruits.
Plum Tart
This party-perfect showpiece recipe is pure simplicity: fresh plums, flour, sugar, butter, salt, and water. Once it cools, free the tart from its springform pan and you’ll have a golden-crusted beauty with a jewel-toned plum center that advertises—in an elegant but low-key way—the wonders of summertime fruit. If you feel your guests need more, serve it with a scoop of vanilla bean ice cream.
Duck Breast Tacos with Plum Salsa
You know you’ve got a taco problem when you make a duck breast recipe from a destined-to-be-classic Chinese cookbook and think, “Wouldn’t these be good in tortillas?” Yes, that’s what happened to me when I tried Eileen Yin-Fei Lo’s simple baked duck breasts from Mastering the Art of Chinese Cooking. I served them for a Chinese dinner that night, but pretty soon I was playing around with a riff on five-spice powder, combining Asian and Mexican ingredients and rubbing them into the breasts before using Lo’s baking technique. A sweet, sour, and spicy plum salsa was just the thing to cut through and complement the deep flavors of the rich duck.
Peach, Plum, and Blackberry Breakfast Crumble
Serve this as a starter: It’s nice to have on the table as a beginning for a brunch. You might also serve it as a summery dessert.
Fall Fruit Focaccia
Choose your favorite fall fruit to adorn this sweet focaccia. The great Italian cook who taught me how to make it recommended throwing three tablespoons of water into the lower part of the oven (below the pan of focaccia) three times during the first ten minutes of baking. The steam created results in a crispier crust. Try it, but be careful not to extinguish the pilot light or soak the focaccia!
Plum Granita
One of the best-tasting plums for cooking and eating is the Santa Rosa plum. Their meaty, succulent yellow flesh contrasts in color and flavor with the tangy purple skin. When cooked together, the sweet-tart flavors meld perfectly to make a heavenly granita. If you find it a bit too tart, serve it with a dollop of Whipped Cream (page 170).
Plum-Raspberry Sorbet
Plums are the last of the summer fruits to arrive, and they stay around long enough to welcome in the fall. Having a batch of this sorbet in the freezer is the perfect way to extend the warm glow of summer just a few more weeks.
Plum Ice Cream
For many years, I was delighted to work with Lindsey Shere, the founding pastry chef at Chez Panisse. She was constantly surprising us with amazing fruits and berries from neighbors’ backyards and nearby farms. Without fail, Lindsey would come in one weekend each summer carrying a big plastic Tupperware container, which, due to its distinctive rounded shape, left no question that it was precisely designed to hold a canned ham. But instead of a ham, inside would be a jumble of tiny, tender, smushed wild plums picked by her mother. Eaten raw, they were puckery-tart, but once stewed, they made an incredibly flavorful plum ice cream. Each year I would wait patiently for that one late-summer weekend when Lindsey would walk though the door lugging her now-infamous canned ham container. Although wild plums may be hard to come by, you can use whatever plums are available with equal success.
Plum-Strawberry Jam
In my humble opinion, red plums make the best preserves, and certainly one of the easiest. Their skins give the jam a pleasant tartness and contain so much pectin that even inexperienced jam makers will be blushing like rosy plums with the pride of success. Tossing the fruit with sugar and letting it stand for a few hours intensifies the color of the strawberries so that the jam cooks up with a vivid crimson color.
Spiced Plum Streusel Cake with Toffee Glaze
There seems to be an irksome theme in dessert books suggesting that a particular cake or pastry be served “with tea, in the afternoon.” I don’t know who has time to sit around and sip tea in the middle of the day, but I know at least one person who can usually be found foraging in his kitchen in the late afternoon, on the prowl for something to snack on. This cake combines everything I crave: tangy plums, toffee with a bit of salt, and buttery cake. If you do take tea in the afternoon, I’m sure it’d be a fine accompaniment. But I’m happy to enjoy it all by itself, whenever I can.
Plum-Blueberry Upside-Down Cake
This is the classic upside-down cake that takes advantage of the summer season, when plums and berries are in full swing. I love how the flavor of tart plums contrasts with the toffeelike brown sugar topping. But feel free to swap out other favorite fruits of summer; I offer a few of suggestions in Variations, below.

Spiced Summer Fruit Soup
This and the following berry soup are the only fruit soups in this chapter that need a bit of cooking. The wine and spices give it a wonderfully complex flavor.
Plum Salad
When something is really impressive, it is declared “plum good.” As summer wears on and I grow tired of plum pies and tarts, I crave this simple, colorful salad. It is such a pretty mix of green and purple flecked with creamy white. The flavors offer sweet and sour, and the combination of textures—smooth, crunchy, and juicy—is really plum good.
Warm Plums with Mascarpone
Warm caramelized plums are delicious paired with cool and creamy mascarpone. You can also cook the plums under a broiler for about 10 minutes or on a tabletop grill for 5 minutes.
Grilled Summer Fruit
Place the fruit on skewers and let your kids sprinkle on the sugar. When you grill the skewers the sugar caramelizes, giving them a nice crunch; but you’ll know it’s still a very healthy dessert that is mostly fruit. You may use apricots and peaches in place of any of the suggested fruits if you like.
