Vegetable Garnish Plate

One of the distinctive aspects of eating Vietnamese food is the large plate of lettuce and herbs that accompanies many grilled and fried dishes. For example, Sizzling Crepes (page 274) would be incomplete without the texture, flavor, and color of the lettuce, herbs, and cucumber that arrive with them. It is this final layering of cooked and raw ingredients that contributes to the uniqueness of Vietnamese food. Select lettuces with pliable leaves. Butter, red or green leaf, or soft varieties of romaine are ideal. Baby lettuces make a beautiful presentation and usually don’t need to be torn into smaller pieces. Always avoid crisp lettuces and those without broad leaves, such as oak leaf. They don’t wrap well. This plate can accompany any Vietnamese dish that is typically eaten with vegetable and herb garnishes. In the case of the herbs, a minimum of cilantro and mint must be included. Some foods taste particularly good with certain herbs, however, so specific recipes may suggest including red perilla, Vietnamese balm, fish mint, or sorrel. For details on these herbs, see page 17.

Southern Salad Rolls

Sometimes listed on restaurant menus as fresh spring rolls or summer rolls, salad rolls, along with pho, have come to embody Vietnamese food to many non-Vietnamese. They typically combine the elements of a classic Vietnamese goi (salad) but wrapped in rice paper. Southern Vietnamese cooks usually slip a few aromatic Chinese chives into the mix. The chives, dark green, flat blades with a mild garlic flavor, are sold in Asian markets and are also easily grown from seeds. If they are unavailable, omit them and the rolls will still be tasty. Part of the genius of Vietnamese cooking is in how simple ingredients can be crafted into something that is both flavorful and attractive. These rolls reflect that talent.

Blackberry-Bourbon Julep

Each year on the first Saturday of May, you will find me at Churchill Downs, drink in hand, cheering the horses to victory at the Kentucky Derby. The derby is the first jewel in the Triple Crown of Thoroughbred horseracing and is a magical event steeped in tradition. One of those traditions and the drink in my hand mentioned above is the Mint Julep—bourbon, mint, and sugar served in an ice-frosted silver julep cup. My version of this drink may not be traditional, but it is definitely a winner.

Homecoming Iced Tea

Those of us who grew up within spittin’ distance of Louisiana know that unsweetened iced tea is practically un-American. Furthermore, a family get-together in Texas just isn’t right without a big, fat, sweating pitcher of sweet iced tea. So here’s my latest, most favorite iced tea recipe, inspired (ironically) by a vendor at New York City’s biggest farmers’ market—the Union Square Greenmarket. I discovered it on a broiling August afternoon after buying a paper-cupful for one dollar. It was beyond refreshing, with a hint of mint, a kiss of citrus, and just the right touch of New England maple syrup. Naturally, I substitute Texas honey for my version. My mother always made iced tea the old-fashioned way, by boiling water, steeping the tea, and cooling it off with loads of ice. But my coauthor’s mother, Patricia Oresman, gave me a better idea. She used to make sun tea by leaving a pitcher full of water and tea bags in the sun for several hours. One day she put the tea bags in a pitcher full of water but never did get around to setting it out on her sunny backyard porch. She returned to the kitchen a few hours later to find perfectly brewed no-sun sun tea. Now she makes kitchen-counter iced tea year-round, no solar energy needed. How long does she let the tea bags steep? “I let it sit until it gets the color I think it should be,” she says.

Jal Jeera

The true taste of a place is found in its little oddities, and northern India is no exception. Nowhere are the distinctive attitudes and sensibilities of a people better captured than in the lemonade of northern India. Jal jeera is Hindi for “cumin water,” but it’s the wild and unruly yet ultimately constructive influence of India’s famous, sulfuric kala namak salt that lends this drink its edge. It’s traditionally drunk before a meal, but any hot day provides a great excuse to duck into the shade, mix up a tall iced glass of jal jeera, and tilt your face up to the sun to offer a prayer to the sun god Surya.

Spicy Zucchini with Mint

Another great make-ahead dish, this is an appealing way to serve zucchini at room temperature or chilled. Salting the zucchini and letting it sit for about 30 minutes gets rid of excess liquid and keeps this dish from becoming watery. If you make this ahead of time, remove it from the refrigerator about thirty minutes before serving and taste it. You may find that you need extra shakes of salt and pepper, and an extra squeeze or two of lemon juice.

Baked Marrow, Ground Pork

A contemporary take on the ground meat–stuffed marrow. This economical supper stands or falls by the way the meat is cooked. The real flavor here comes from the caramelization of the sugars in the meat. To make the most of this, I have the oil at quite a high temperature as I add the meat, then resist the temptation to stir or turn the meat too soon. Continual movement will result in “wet” rather than crisp-edged, golden ground pork.

A Lemon-and Garlic-Scented Side Dish

Middle Eastern cooking is flecked with the cool pepperiness of fresh mint. Italian, and especially Sicilian, cooks include mint with zucchini, often in tandem with garlic and lemon. I find mint invigorating with all summer squashes and often make a dish where they (pattypan is particularly suitable) are cooked in olive oil with mint and the merest hint of garlic. It is very good with grilled fish.

Herbed Potato Cake

This is my version of the Spanish omelette, being lighter, crisper, and more studded with herbs than the norm. The point here is that you can mix the herbs to suit your taste. Tarragon and mint are a must for me, but any of the more unusual herbs is worth using too: chopped sorrel leaves, salad burnet, lovage, or any of the lesser-known basils. Because the herbs are only lightly cooked in this recipe, their flavor will stay true.

A Lamb Steak with Peas and Mint

It’s mid-June and I have returned home with four lamb steaks. It’s the sort of thing I buy when my mind is elsewhere. I think I was after a “nothing-special” lunch of ease and straightforwardness, yet once the steaks and their fine frame of white fat had been brushed with olive oil and the leaves and flowers of thyme, and were sizzling on the blackened garden grill, I realized I had an extraordinary treat on my hands. Instead of a mound of petits pois at the lamb’s side, I blitzed the peas to a smooth purée with mint and melted butter.

A Green Soup for a Summer’s Day

Midsummer is a time of extraordinary activity in my garden. Every day brings with it a new shoot, a newly opened rose, a froth of lettuce seedlings. At this point I make a soup of the older lettuces and peas, and yet there is no reason why I shouldn’t make it throughout the year with frozen peas and produce-market lettuce.

A Salad of Beans, Peas, and Pecorino

Among the charcoal and garlic of midsummer’s more robust cooking, a quiet salad of palest green can come as a breath of calm. Last June, as thousands joined hands around Stonehenge in celebration of the summer solstice, I put together a salad of cool notes: mint, fava beans, and young peas—a bowl of appropriate gentility and quiet harmony.

Braised Lamb Shanks with Leeks and Haricot Beans

Users of The Kitchen Diaries may feel they recognize this recipe. Previously I have always made it with cubed lamb, but I recently tried it with lamb shanks and left it overnight before reheating it. The presence of the bone and fat and the good night’s sleep have made such a difference that I thought it worth repeating here. You could make it a day or two in advance to good end.

Chicken Broth with Pork and Kale

Kale is just one possibility for bulking out this supper of pork balls and broth. I use it because I like the fullness of its leaves with the smooth pork balls. You could use any member of the greens family, and particularly Savoy cabbage. The important bit is not to overcook the greens.

Creamed Beans with Mint

Fava beans are gentle, soothing, calm (particularly so when they have been skinned), a vegetable without the vibrancy of spinach or even peas. Surely we don’t always want vegetables to be full of fireworks? Rather than fight this mild character with an addition of spice or bright tastes, I go along with it, and often serve the beans as a side dish with cream and perhaps a stirring of parsley. A dish as soporific as it is beautiful. Some poached ham would be nice here, as might a piece of lightly cooked white fish. Though I would be more than satisfied with some triangles of hot brown toast. Should you happen to have any summer savory in the herb bed, this is your chance to use it.

A Green Hummus

Elderly fava beans are possibly not on everyone’s shopping list, but in late July, when their sugar has turned to starch and their skins are as thick as writing paper, I have still made a good meal of them. They make a fresh-tasting hummus that always surprises people with its green notes. A silk purse out of a sow’s ear if ever there was one. There is another recipe for this in The Kitchen Diaries, but with dill. Good with bread, roast lamb, even alongside a piece of grilled fish. Like the popular chickpea recipe, somewhat addictive.
