Vegetable Shepherd's Pie

Lentils and fresh and dried mushrooms give this vegetarian casserole its meaty character. You can prepare most of it in advance and bake it just before your guests arrive.

This appetizer is a total fake-out and a lot of fun to serve. Ellen and Portia absolutely loved these the first time I served them. They both had fond memories attached to caviar, and this recipe brought back those fun times without compromising their vegan diet. Serve these little morsels with a glass of Champagne and share them with some cool friends.

Mujadara

Lentils, rice, olive oil, and onions—this Middle Eastern standard is the ultimate pantry recipe. It's also the classic example of a dish that's greater than the sum of its parts. There are literally dozens of recipes for mujadara out there—each country, possibly even each family, seems to have its own version. The one I like best is adapted from Claudia Roden's Book of Jewish Food. The crispy onion topping is the best part, so go ahead and make a lot. NOTE: Lentils, like all dried beans, vary in their cooking time depending on several factors, including age. Yours may take longer to become tender, but they shouldn't take much more than an hour. Hard water can also affect the cooking time—if your water is hard, use bottled water.

Arctic Char with Orange-Lentil Salad

Can't find Arctic char? Salmon works just as well. Opt for green (aka French) lentils, which hold their shape better when tossed into a salad.

Green Lentil Spread

A great alternative to hummus (and a fixture with crudités or on sandwiches in the BA Test Kitchen), it seems there's nothing this spread can't do. French green lentils work best here, but the most important ingredient, notes chef Antonio Prontelli, is top-quality extra-virgin olive oil.

Ellen Levine's Vegetarian "Chopped Liver" a la Dragon

There are countless variations on this much-loved recipe, which has its origins in kosher cooking. By making a meatless (pareve) version of chopped liver, Jews who keep kosher get to enjoy a much-loved dish while sticking to the dietary requirements of nonmeat meals. While this is often served as a Sabbath appetizer, particularly in homes with Ashkenazic roots, and also as a seder dish, novelist Ellen Levine brings it to the annual potluck picnic that gathers together writers and illustrators of children's and young-adult books from all over new England. It's always swiftly scarfed up. As odd as it may sound to prepare a vegetarian spread whose name references an animal organ, somehow this dish lacks the turn-up-your-nose unpleasantness of many pseudo-meat dishes. Maybe this is because its origins are based in authentic foodways. But it could just as well be because it is very versatile and just plain good. as with all home-style dishes, from bouillabaisse to barbecue to gumbo, there are many versions of pareve chopped liver, and whichever one you grew up with is, to you, the one and only. I've attempted to give at least a nod to some of these variations following the main recipe, but this is my take on Ellen's. Try it as a sandwich spread or with crudités; or serve it with crisp crackers, toasted baguette slices, or, at Passover, matzoh.

Lentils with Ginger, Golden Beets, and Herbs

High-protein lentils are enlivened here by coriander, ginger, mint, and cilantro. For the best flavor, toast whole coriander seeds, then grind them to a fine powder. In a pinch, you can substitute a teaspoon of ground coriander instead of grinding your own. Beets add heart-healthy iron, potassium, and folate.

The fiber in lentils helps to lower cholesterol and regulate blood sugar. French green lentils cook more quickly and retain a firmer texture than the more common brown ones.

Lemony Lentil Salad

Lentils are a particularly robust source of protein, folate, and iron. Red, orange, and yellow bell peppers provide more vitamin C and carotenoids than green ones; these powerful antioxidants support eye health, boost immunity, and fight heart disease. This nutritious make-ahead salad is perfect for a packable lunch, picnic, or barbecue.

Whole-Wheat Pasta with Lentils, Spinach, and Leeks

French green lentils, sometimes called lentilles du Puy, hold their shape well once cooked, making them particularly suited to salads and pasta dishes. Like other legumes, lentils are low in fat and are exceptional sources of folate, iron, and protein, plus other vitamins and minerals. Here, the lentils are combined with whole-wheat pasta shapes called chiocciole (snails), but you can substitute penne or any other short tubular shapes. If you like, grate or shave parmesan over the pasta just before serving.

Warm Lentils with Mushrooms

Beans are wonderful for making dishes that are hearty enough to serve as the main part of a meal or, in smaller portions, as an accompaniment to meat, fish, or chicken. Besides protein, they lend chewy texture that holds up well when tossed with vinaigrette. This dressing is made by deglazing the pan that was used to sauté the mushrooms and aromatics with vinegar, then whisking in oil. You may find that you have some left over; if you like, toss it with frisée or other salad greens, then serve the lentils over the greens. The lentils are also delicious with sausages, pan-seared tuna or roasted salmon, and duck confit.

Lentils Castellucciano

We exclusively use Umbrian lentils in our restaurants, which are smaller than common brown lentils and are various shades of brown to green. Castelluccio, the town where the lentils come from, is a two-and-a-half-hour, winding, hilly drive over the Apennine Mountains from my house. Once you get there, you don’t feel like you’re in Umbria—or Italy—at all. There are no sunflowers. No rolling green hills. The landscape is crater-like, with fields and fields of flowering lentils. It feels more like you’re on the moon, or in Oz. When I visited with a group of friends, we ate lunch at the one trattoria in town. Of course they offered lentils, and I was surprised to find them cooked in a much heartier way than I had ever seen lentils prepared before, almost like a stew or a ragù, with pork sausage, another delicacy of that region. This is Matt’s rendition of the lentils we had that day.

Crisp Duck Leg with Lentils Castellucciano

We serve this as a daily piatto special in the Pizzeria with Lentils Castellucciano and fried sage sprinkled all around. We included it as a variation to the Duck al Mattone because the preparations of the duck, with the exception of cooking times, are identical.

Pan-Roasted Sea Trout with Umbrian Lentils and Red Cabbage Sottaceto

I am a red wine drinker, so any fish preparation that can be enjoyed with red wine, such as this one, which is served with a rich lentil stew and pickled red cabbage, is a winner for me. Sea trout is a freshwater fish that drifted into the sea, so although it is trout, it looks and tastes like it wants to be salmon with pink flesh and the same moist, oily quality that you get from really good salmon. Sea trout is much more consistent in quality than salmon and also less expensive, so I hope you will enjoy this salmon alternative. Sottaceto means “pickled” in Italian. The cabbage here is slow-cooked in balsamic vinegar, so it’s like a pickle, which cuts through the richness of the lentils and the fattiness of the fish. The recipes for the cabbage and lentils both make more than you will need for four servings of fish. You can double the number of fish fillets you prepare, or serve the remaining cabbage and lentils on the side. Since the cabbage is pickled, it will keep, refrigerated, for at least a week.

Whole-Wheat Pasta with Lentils, Spinach, and Leeks

If you like, grate some Parmesan cheese over the tossed pasta just before serving, or offer grated cheese on the side.

Arugula Salad with French Lentils, Smoked Chicken, and Roasted Peppers

The lentils can be made up to a day in advance and the salad assembled at the last minute. Poached or grilled chicken breast would produce equally appetizing results.

You can easily double this recipe and refrigerate leftovers in airtight containers for up to 3 days. The soup can also be frozen for up to 3 months. We used French lentils, but other types of lentils may also be used.
