Lentil

Strip Steak with Acorn Squash and Lentils

Although it may sound purely indulgent, this steak dinner is packed with nutrients, from home-sprouted lentils to flavorful nutritional yeast. (But yeah, it tastes pretty decadent, too.)

Sprouted Red Lentils

Try these tossed in slaw, stirred into soup, or fried with roasted veg to make fritters.

Lentil, Beetroot and Hazelnut Salad With a Ginger Dressing

Nourish your body with this welcoming salad complete with a warming ginger dressing. Lentils provide a fabulous source of protein and the beet adds that splash of color I love so much.

Grilled Steak, Vegetable, and Quinoa Salad

Grilled fennel, tomatoes, and scallions, plus cumin-rubbed grilled steak, turn this quinoa salad into a one-dish dinner you'll want to keep serving all summer long.

Quinoa and Red Lentil Burgers

Quinoa and red lentils cook in the same amount of time, right in the same saucepan, making these burgers super convenient.

Four Corners Lentil Soup

My favorite recipe that I've ever posted on the blog is my Four Corners lentil soup, and it remains the most frequently cooked dish in my kitchen. It is so fast and simple to make, really inexpensive, and uses ingredients that are all found in the pantry. It freezes well, too, so I often make a double batch and store some away for when I need a wholesome meal in a hurry. And why the name "Four Corners"? Besides being my favorite soup, it is also much loved by many people I know all around the world. From the busy streets of Singapore to the remote wilderness of northern Ontario, from the scorched deserts in the American Southwest to the rainy shores of Denmark, this soup really has traveled the four corners of the Earth! Highly nutritious and packed with flavor, this lentil soup is a crowd-pleaser that will warm the heart of anyone you serve it to.

Lentil Croquettes with Watercress and Kefir

One of many cool things about (super-nutritious) sprouted lentils: They don't need to be cooked first.

Spicy Lamb and Lentils with Herbs

Sauté ground lamb with cooked lentils and plenty of spice for a lightning-fast weeknight dinner—then pile extras into a rice bowl or pita pocket for lunch the next day.

Lentils with Cucumbers, Chard, and Poached Egg

Start your weekend mornings right with this healthier, more delicious breakfast bowl.

My Mom's Vegetable "Meatloaf" with Checca Sauce

My Mom, Veronica, is pretty much a vegetarian these days. When she invites us over for "meatloaf," this is what we get—and I like it a lot; in fact, even Todd does. The lentils and the brown rice make it hearty while at the same time kind of fluffy and light. My favorite part about it is the fresh tomato sauce, which is almost like a salsa. Checca is a Southern Italian term for this fresh sauce, which is called by different names in different regions. Some of it goes into the lentil loaf and the rest is served alongside.

Canal House Lentils

When cooked with aromatics and rich tomato sauce, lentils are anything but bland.

Good Gravy Bowl with Broccoli & Seitan

Oh lentils, what can't you do? Here they join forces with miso to create a flavorful, silky gravy that you'll want to pour over everything. You have my permission to do so, but let's start here: with quinoa, sautéed seitan, and broccoli that's steamed perfectly, still crispy and bright. For a more organic feel, tear the seitan into bite-size pieces with your hands instead of slicing it with a knife. You'll have more gravy than you need, but reserve the rest for sopping up with toast or biscuits for breakfast.

Roasted Trout with Lentils and Verjus

Yes, there is butter in the sauce, but the key ingredient is verjus. If you can't find it, use half white wine and half unseasoned rice vinegar.

Eggplant With Lentils and Goat Cheese

Eggplants are sensitive to cold; protect them in plastic wrap before refrigerating.

Spiced Black Lentils with Yogurt and Mint

Aptly named beluga lentils look like little beads of caviar. They cook quickly, and they hold their shape.

Armenian Lentil Soup

Steak and Eggs Rancheros

Your brunch guests will never know this is diet-friendly. Steak, lentils and an egg deliver 30 grams of metabolism-revving protein per serving.

Spiced Lentil Tacos

“Vegetarian taco” is typically code for a taco with a black or pinto bean filling. But you can use heart-healthy lentils instead. Standard brown lentils are easy to find, but if you opt for French green lentils, they will take a bit more time to cook. If you’re craving lentil burritos—just add rice and tortillas.

Mediterranean Couscous and Lentil Salad

The perfect compromise between a grain and a salad, this refreshing Mediterranean side makes a lovely accompaniment to grilled lamb for a backyard barbecue. Or, highlight its Middle Eastern influences by pairing it with baba ghanoush and a platter of stuffed grape leaves. Add personal touches by substituting your favorite herb for the mint, topping off the salad with a squeeze of lime and a bit of orange zest, or using spinach instead of arugula. However you decide to frame it, you’ll be set up for a nice snack the next day.

Red Lentils and Kale with Miso

This dish draws on both Mediterranean and Asian influences and uses the very different flavors of sage, miso, and nori in complementary ways. It's a brain-healthy recipe: legumes such as lentils are a key component of the Mediterranean diet, both kale and onions are good sources of polyphenol antioxidants, and sweet potato supplies a dose of beta-carotene.
