Grilled Lamb Porterhouse Chops
Many people think the term porterhouse refers to the size of the steak, but that is not the case. Porterhouse is an on-the-bone cut with a portion of the flavorful strip on one side of the bone and the tender filet on the other. With its lacquering of barbecue sauce and side of a corn–collard green tart, this dish is an ode to the South. The Carolinas are fanatical about mustard-based barbecue sauces. Mustard lends a tangy heat that is offset by dark, sweet molasses, and both are mellowed by mild honey and light rice wine vinegar. This barbecue sauce is as at home with lamb as it is with the smoked pork of the Carolinas. The tart’s savory filling is basically a corn pudding run through with strips of collard greens.
Blue Javalina Grilled Lamb with Quinoa Pilaf
I met chef Kevin Stewart and his partner, Richard Cordray, at my friend Loncito Cartwright’s South Texas ranch. Kevin prepared this dish using Loncito’s grass-fed lamb and I asked for the recipe, named after Kevin and Richard’s former Marfa restaurant, Blue Javalina. Wild packs of javalinas—compact, coarse-haired, piglike animals with short snouts—roam the high plains of West Texas. Javalinas do not come in blue, nor do they make for great eating. Loncito’s lamb is a different story. His grass-fed lamb has a mild taste that appeals to even the most reluctant lamb eater. It is available at select farmers’ markets and specialty foods stores throughout Texas.
Sweet-and-Sour Lamb Ribs
Austin chef Jesse Griffiths and his wife, Tamara Mayfield, brought succulent lamb ribs to my Fredericksburg garden party, and everyone devoured them. Jesse cleverly ensures these ribs are partyfriendly for guests and hosts alike—the recipe can mostly be done in advance. The ribs are initially simmered on the stove top and then need just a very short turn on a grill before serving. Jesse and Tamara are co-founders of Austin’s Dai Due Supper Club; their dinners are movable feasts staged at various local farms, vineyards, hotels, and private homes featuring local, sustainably produced ingredients prepared onsite by Jesse. If you can’t find lamb, pork spareribs or beef shortribs will work equally well. If you use beef ribs, they’ll need to simmer for 4 to 5 hours. You can simmer the ribs up to 24 hours in advance, and the glaze will keep for 3 weeks in the refrigerator
Buttermilk Leg of Lamb with the Meadow Sel Gris
The sheep is one of the first animals domesticated by mankind. For about ten thousand years, we’ve been living together and feeding each other. The true testament to the strength of our relationship is that it hasn’t changed much. The passion is still alive. One secret to this longlived tryst is that sheep are uniquely unwilling to give up their sheepy flavor, so that every time we eat them it’s like a first date, or the first time, or an earlier time, or a mythic time. We’ve domesticated the gaminess out of most everything we eat, but every time we toss a leg of lamb on the fire we grow bushy and wild, our countenance waxing fierce amid the ghostly tendrils of burning fat and smoky mountain herbs. And after we toil over the flaming coals, the table is laid, the tapers lit, the dark wine poured. Aromatic and rackling—golden on the outside; savagely, voluptuously rosy on the inside—a leg of lamb is a meal of the ages. Salting a leg of lamb should be approached with anticipation and reverence; this is one of the truly sacred uses of a coarse and lusciously moist salt—in other words, sel gris—in both the cooking and the inishing of the food. Any good, moist sel gris will work here, but I cannot resist calling for my own true love, the rather obscure but sublimely supple salt we have adopted as our house sel gris at The Meadow. The zesty flavors of Parameswaran’s pepper—a whirl of eucalyptus, celery seed, lemon peel, and cedar—is likewise a point of precision that can lend yet more depth to the flavors of the dish.
A Dish of Lamb Shanks with Preserved Lemon and Rutabaga
It’s late March and green leaves as sharp as a dart are opening on the trees that shield this garden from the most bone chilling of the winter winds. The mornings are still crisp. You can see your breath. Stew weather. Unlike carrots, rutabaga becomes translucent when it cooks, making a casserole the glowing heart of the home.
A Lamb Steak with Peas and Mint
It’s mid-June and I have returned home with four lamb steaks. It’s the sort of thing I buy when my mind is elsewhere. I think I was after a “nothing-special” lunch of ease and straightforwardness, yet once the steaks and their fine frame of white fat had been brushed with olive oil and the leaves and flowers of thyme, and were sizzling on the blackened garden grill, I realized I had an extraordinary treat on my hands. Instead of a mound of petits pois at the lamb’s side, I blitzed the peas to a smooth purée with mint and melted butter.
Roast Lamb, Couscous, Red Onion
Onions are used in most stuffings, both lightening the rice, couscous, or breadcrumbs and introducing sweetness. As they melt down, they keep the filling moist. Ask the butcher to prepare your shoulder of lamb for stuffing. When the bone is removed, it provides a neat pocket that will hold just the right amount.
Braised Lamb Shanks with Leeks and Haricot Beans
Users of The Kitchen Diaries may feel they recognize this recipe. Previously I have always made it with cubed lamb, but I recently tried it with lamb shanks and left it overnight before reheating it. The presence of the bone and fat and the good night’s sleep have made such a difference that I thought it worth repeating here. You could make it a day or two in advance to good end.
Grilled Lamb with Eggplants and Za’atar
Za’atar is a mild spice mixture available in Middle Eastern markets and some supermarkets. Fragrant and green, it is usually prepared using dried thyme, oregano, marjoram, toasted sesame seeds, and salt. Some varieties may add savory, cumin, coriander, or fennel seeds.
Roast Lamb with Mint, Cumin, and Roast Carrots
Young carrots, no thicker than a finger and often not much longer, appear in the shops in late spring, their bushy leaves intact. Often, they have a just-picked air about them, their tiny side roots, as fine as hair, still fresh and crisp. At this stage they lack the fiber needed to grate well, and boiling does them few favors. They roast sweetly, especially when tucked under the roast. The savory meat juices form a glossy coat that turns the carrot into a delectable little morsel. I have used a leg of lamb here but in fact any cut would work—a shoulder or loin, for instance. The spice rub also works for chicken.
A Stir-fry of Broccoli and Lamb
Broccoli doesn’t stir-fry well from raw. The beaded crown—the tight flower buds—tends to burn before the stem even approaches tenderness. Heads that have been briefly blanched in boiling water will, however, stir-fry deliciously, soaking up the ginger and soy or whatever other seasoning you might throw at them. In the last year or two I have taken to adding them to stir-fries of ground lamb or pork, letting the meat thoroughly caramelize in the thin pan before adding the greens. It’s a very quick, bright-tasting supper, invigorating and toothsome. But you do need to be brave with the meat, letting it glisten and almost crisp before you add the rest of the ingredients.
A Light Touch for Meatballs
Late spring, 2007. Six small beets, round as golf balls and not much bigger, arrive in a thick brown paper bag, its edges sewn together with string. The air of moist Riverford soil and sweet roots wafts up as the bag is torn open, but the day is leaden with damp and cold and I have rarely felt less like eating a beet salad. Supper is going to be meatballs: fat, crumbly patties of ground lamb with garlic, dill, and parsley. It crosses my mind that a handful of grated beets might sweeten the ground meat and lighten the texture. What we end up eating on the coldest spring day for years is plump rounds of sweet and spicy meat, crunchy with cracked wheat and crimson with the vivid flesh of finely grated beets. The inclusion of the roots has broken up the solid lump of ground meat and married well with the garlic and clean-tasting herbs. We dip the sizzling patties into a slush of shredded cucumber, yogurt, and mint, given a snap of piquancy (to balance the beets) with a spoonful of capers.
Fresh Egg Pasta with Seared Lamb, Asian Vegetables, and Sweet Soy-Ginger Sauce
To tell you the truth, I first created this dish by accident, when I added lamb instead of beef by mistake. But when I tasted it, I realized it was no mistake! Lamb might not be a traditional Japanese ingredient, but it’s delicious when mixed with these Asian flavors and vegetables. If you prefer beef, though, you can always use that instead. Follow the fresh Egg Pasta recipe on page 112, but leave out the optional squid ink.
Pecan Lamb Chops
Most members of my family have never been fond of lamb. Dede always called it “sheepy-sheepy” and Mama thinks they look too gentle and sweet to eat. I was inducted into the lamb fan club when testing recipes for Nathalie Dupree. Lamb chops are earthy, rich, and faintly sweet. However, the fat can be overwhelming and strong, especially when chilled or at room temperature. Remove as much fat as possible before cooking, and serve the chops immediately so they don’t have a chance to cool.

Provençal Lamb Chops
Lamb rib chops have a dandy handle (the rib bone), and are excellent served as lamb “lollipops” for delicious, but rather extravagant, hors d’oeuvres. As the ribs get closer to the neck and shoulder, the nugget of meat becomes smaller, perfect for hors d’oeuvres. The larger ones are best as a main course served with a knife and a fork. Loin lamb chops are cut from the loin and look more like miniature T-bone steaks, with a bit of the loin and tenderloin on either side, and take a little longer to cook, but may be substituted in this recipe.
Basque Lamb Shanks
Spanish Basque immigrants first arrived in the United States in the mid-1800s. This recipe contains typical ingredients found in a Basque lamb stew, which is often served at traditional family-style restaurants in the Basque communities that can still be found throughout the Pacific Northwest and West. I suggest you cook it until the meat is just about to fall off the bone.
Potato and Lamb Curry Puff Filling
One of the most common curry puff fillings features well-seasoned potatoes and a little meat. I like to use ground lamb because it pairs terrifically with the bold spice blend that Malay cooks often identify as meat curry powder. I’ve broken it down for you here, but feel free to substitute 2 1/4 teaspoons of your favorite curry powder (if salt is already in the powder, add salt to taste only after the filling is done). For a vegetarian rendition, omit the meat and increase the potato to 3/4 cup, adding extra water as needed during cooking.
Spiced Lamb Dumplings
Nepalese cooking combines Indian and Tibetan cuisines, and these classic dumplings illuminate that wonderful marriage. In this filling, Indian garam masala is combined with Sichuan peppercorn, an important spice in Nepal and Tibet. Nepalese momos often feature water buffalo, but lamb pairs exceptionally well with the aromatics. You can opt to substitute ground beef, pork, or dark-meat chicken or turkey. Regardless of the meat, these dumplings are like their Tibetan brethren (page 57), full of flavor and delectable juices. If there are left overs, panfry or deep-fry them the next day. Note that these dumplings are eaten with fork and spoon. Chopsticks are the standard and prevailing utensils in only four Asian nations—China, Japan, Korea, and Vietnam.
