Wild Striped Bass with Farro, Black Rice, Green Garlic, and Tangerine

The first incarnation of this dish did not include rice. Tasting it over and over again, I knew it needed a final element that would bring its flavors into harmony: nutty farro, meaty bass, pungent green garlic, sweet pea shoots, tart tangerines. I racked my brain for just the right thing, then remembered a sample of black rice I had stashed in my desk drawer weeks before. I had little experience with black rice—varieties of rice whose kernels are covered by extremely dark bran. The black rice I found was grown in the salt marshes of the Veneto, so I cooked it in an Italian style. As I would for risotto, I sautéed the rice in olive oil to seal the outer layer and toast it slightly. Then I deglazed with white wine, added water, and let it simmer away. When the rice was done, I found it solved my problem perfectly. The rice’s marshy origins gave it a subtle oceany taste, complementing the fresh fish and giving the entire dish a springtime-by-the sea coherence. What’s more, there was a visual bonus: the black rice was gorgeous to behold, coated in its own deep purple sauce.

Mcgrath Farms’ Watercress Soup with Gentleman’s Relish Toast

Super-green watercress makes the perfect starter to a St. Patrick’s Day dinner. One St. Patrick’s Day at Lucques, in order not to lose the bright, vivid green color and fresh lively taste of the watercress, I decided to make the soup to order. Rather than cooking the watercress, I planned to wilt it with hot vegetable stock and then purée it with tarragon, parsley, chives, and a touch of cream. As that night approached, the restaurant was booked solid, and I began to worry about my made-to-order soup scheme, but Daniel Mattern, my equally obsessive sous-chef, insisted we go for it in spite of the anticipated 180 reservations. He recruited the waitstaff to bring their blenders from home, and organized his new found equipment into a lean, mean soup station as if it were business as usual. That night, all 180 bowls of soup were made to order and managed to arrive at the tables pipinghot. Dan must have had the luck of the Irish because he pulled it off without a hitch. Served with an anchovy toast, this “à la minute” soup is great any day of the year.

Swiss Chard Tart with Goat Cheese, Currants, and Pine Nuts

Look in any Sicilian cookbook and you’ll find a recipe for the popular side dish, or contorno, of cooked greens with currants and pine nuts. I make Swiss chard the main attraction of this dish, layering it onto a savory tart with rich and tangy goat cheese, then topping it with sweet currants and toasted pine nuts. Use a crumbly, slightly aged goat cheese, such as Bûcheron, Rodin Affiné, or the domestically produced Laura chanel aged chèvre. Feel free to substitute any other tender greens, such as the tops of beets or turnips, or a bunch of young mustard greens for the Swiss chard.

Spicy Ginger Beer

Ginger beer is often made as a live fermented brew, a time-consuming and messy process—our method shortcuts time, but not flavor. For a controlled version of premade ginger beer, use a soda siphon to provide carbonation.

Pickled Long Red Chiles

Pickling chiles sounds so much more difficult than it really is. For homemade, all-natural pickled chiles, simply cover them with vinegar. They soften while retaining a little bite and get even hotter while developing a headier flavor. Their acidic pop and bright heat make these my go-to condiment.

Yuzu Pickles

I love a good bread and butter pickle, so I decided to create my own version. While I don’t have the classic spices here, my blend of rice vinegar and yuzu juice approximates the same acidity of the original. These are terrific with (or on) sandwiches. Of course, I like to eat them straight, too.

Smoked Chile Glaze

On the weekends, barbecue sauce shows up at nearly every meal. I’ve made countless versions over the years, but this is still one of my favorites. I draw flavors from around the globe to get just the right balance of sweet, spicy, and tangy. You can brush this on any meat while it’s grilling to build a sticky glaze. When mixed with homemade mayonnaise, it becomes an amazing spread.

Barbecue Sauce

Less is more in this simple glaze. The complexity here comes from cooking the garlic and onion until sweet enough to round out the heat of the chiles. I love brushing this on any grilled meat or fish. Another fun use is tossing this sauce with fried calamari or popcorn shrimp.

Scotch Bonnet Hot Sauce

This is more than just hot sauce. The funky, fruity blend can sear your tongue, but in a pleasant tingling way that allows you to still taste the layers of flavors. You can use this the way you use bottled hot sauce—for buttery sauces, soups, eggs—you’ll find that it just makes everything taste so much better.

Red Wine Citrus Vinaigrette

While I use this to dress my chicken salad (page 130), I also like it on soft bitter lettuces. Too often, we relegate vinaigrettes to greens, but they’re also good with proteins. This one, in particular, pairs well with salmon, either poached or slow-baked.

Green Apple and Jalapeño Duo

Whenever I serve something really rich, like Soy-Braised Lamb Shanks (page 168), I like to have something tart and bracing to go with it. The tangy-hot blend of apples and chiles goes well with just about any red meat, and the combination of creamy and crunchy is unbeatable.

Slow-Cooked Salmon in Miso-Yuzu Broth

This broth is so good I could drink it by the bowlful. Be sure to serve this with steamed sticky rice. Even better: When I have leftover sticky rice, I press it into small cubes and fry them until crisp and golden brown. You can find konbu, bonito, miso, and yuzu at a Japanese grocery or a well-stocked Asian market.

Tagliatelle with Pistachio Pesto, String Beans, and Cherry Tomatoes

This pasta dish pairs creamy with crunchy, tart with sweet. Summer string beans also offer a little crunch to balance the juiciness of the tomatoes. I especially like using orange Sunbursts from my garden.

Turkey and Bacon Sandwich with Arugula Mayonnaise

I like to make my sandwiches more French than American, which is to say, I use less meat. Here, there’s just enough turkey proportional to the other ingredients. Be sure to use high-quality roasted turkey here to best enjoy the bright, fresh mayonnaise. Of course, the best turkey option will come from your Thanksgiving leftovers (page 146).

Tomato Gazpacho with Mozzarella, Raspberries, and Almonds

It’s the surprising combination of sweet, tart, creamy, and crunchy additions that makes me crave this summery soup. This gazpacho is all about the garnishes.

Wax Bean and Cherry Tomato Salad with Goat Cheese Dressing

Tangy goat cheese makes a perfect salad dressing for wax beans (haricots verts work well here, too). To balance the creamy cheese, I toss the sweet tomatoes with a bright, acidic vinaigrette. Together, they make an amazing summer salad.

Pineapple Salsa

Easy to make and deliciously different, this lively salsa can be served with tortillas as an accompaniment or appetizer for a Southwestern-style meal. See Big Quesadillas with Refried Beans, Spinach, and Avocado (page 145), in which this is used as a topping.

Tofu Rancheros

Years ago, on a trip to the Southwest, my husband and I (then vegetarians, not yet vegans) discovered the famous breakfast dish of the region and were quickly hooked. Huevos rancheros are scrambled eggs perched atop corn tortillas and topped with an incendiary sauce. It’s easy to veganize this classic, as I’ve done here. Like the next recipe, this can be served for breakfast, brunch, lunch, or dinner.

Plum and Port Crostata

The filling for this Italian-style tart begins with a flavorful reduction of port wine and brown sugar; half a fresh Thai chile is added for a subtle—but entirely optional—bit of heat. Start with the best fruit you can find. Small, oval Italian prune plums are firmer and sweeter than other plums; plus, since they are a freestone fruit, their pits are not attached to the flesh and are therefore easily removed.
