I love the simplicity of individual salads in jars. Make the salad, toss it in an ice chest, and off you go. Once you arrive at your destination, the salad is ready to eat right out of the jar. Alternatively, you can skip the jars and toss the salad ingredients together in a large bowl.

Big Easy Whole Flounder

This dish got its “Big Easy” name from the New Orleans–inspired Cajun seasoning that defines its flavor, and also because it’s one of the biggest, easiest party dishes I know. The fish can be prepared and in the oven in less than 15 minutes, and it doesn’t take much longer to cook. Cleanup is a snap, too, as long as you line the baking pan with foil. (Once the fish is cooked, just toss out the foil and return the pan to the cabinet.) For a simple dinner party after a day at the beach, it can’t be beat. I serve whole flounder whenever I can find it because I’m smitten with the clean, light taste of this white fish, and for sentimental reasons, too. I spent many a summer on the Texas Gulf Coast, sunning, swimming, and fishing on the Bolivar Peninsula near Galveston. At night we’d step into our old tennis shoes, and armed with a flashlight and a spear, we’d wade into the Gulf up to our knees, shine the flashlight in the water, and when we spotted a bottom-dwelling flounder, we’d spear it. We tried really hard not to spear our own feet, and succeeded, though we did end up at the local ER a couple of times—never for a speared foot, though. Rustic Bread Salad

This hearty salad is packed with so many vegetables that I often serve it as a main course. It’s a real lifesaver when guests announce, “Oh, by the way, did I mention I’m a vegetarian?” It welcomes just about any edible treasure from the farmers’ market or my garden, from sliced sugar snap peas to colorful nasturtium flowers, slender French green beans to crunchy cucumbers, plus all kinds of peppers. Think seasonally: try fall veggies like roasted acorn squash, steamed broccoli florets, or fall lettuces, or bias-cut and steamed spring asparagus. Any good artisan bread will do, but I prefer a dense white or whole-wheat sourdough; try day-old loaves from your bakery.

Rebecca’s Table Caprese Salad

Every summer I have out-of-control basil growing in my garden, and it’s a serious challenge to come up with ways to use it all. It sometimes seems to grow faster than I can pick it. Then there is my garden arugula and several bountiful bushes of candy-sweet cherry tomatoes of varying colors. This salad guarantees that no cherry tomato or basil leaf goes to waste. For parties, I take a huge platter-size version of the salad, drizzle the pesto vinaigrette over the fresh mozzarella, and leave a small pitcher of the vinaigrette on the side for those who can never get enough of the deliciously pungent stuff.

Corn Risotto with Roasted Cherry Tomatoes

Like so many other American cooks, I learned to make risotto from Marcella Hazan—not directly, of course, although wouldn’t that be great? This is a quintessentially summertime recipe; make it when fresh corn, tomatoes, and basil are all converging on your local farmers’ market or farmstand. Risotto is one of those dishes that makes great leftovers—especially to form into balls, stuff with cheese, roll in bread crumbs, and fry to make arancini. So if you like the thought of that in your future, feel free to double or triple this recipe. Eat this with a vibrant green salad and some chewy bread for a filling supper.

Blackened Salsa

My friend Karin and I moved to Boston at about the same time, and of all the things this fellow Tex-pat and I missed the most, at the top of the list was the spicy, smoky, black-flecked salsa at La Fogata restaurant in San Antonio, where Karin grew up and where we both loved to visit when we were in college in nearby Austin. In those days, La Fogata would sell you the stuff to go, but only if you brought your own container. Karin would fly back to Boston with a gallon jug in her carry-on, something that wouldn’t go over too well with the TSA anymore. Nowadays, you can order the salsa online, but it’s not quite the same, no doubt due to the preservatives required to make it shelf stable. After I saw a take on the recipe at SpiceLines.com, I started experimenting and developed my own. In addition to gracing the top of Tacos de Huevos (page 87) and going into Spicy Glazed Mini Meatloaf (page 65), the pungent, garlicky condiment is good on grilled pork chops or steak. Of course, it can be served as an appetizer with tortilla chips. The recipe doubles and triples easily.

Baked Peppers for a Summer Lunch

My version of classic Italian baked peppers, but without the anchovies and with a last-minute stirring in of basil. There are some gorgeous flavors here, especially when the tomato juices mingle with the basil oil.

Roast Eggplants, Chiles, and Thyme

A sort of lazy guy’s ratatouille this, but better, I think, for its freshness and clean taste. I keep the chiles large here, which is partly why I have suggested using the milder varieties but, as always, it’s up to you. This works hot as an accompaniment to so many main dishes—roast lamb comes to mind—but as a warm salad too, and indeed, piled on hot toasted ciabatta as a weekday supper.
