Campanelle Pasta Salad
An Italian brunch wouldn’t be complete without a pasta dish. Campanelle pasta is named for the church bells it resembles, and the nooks and crannies are great for trapping sauce, making every bite delicious. If you can’t find campanelle, any small shaped pasta will do. There are lots of bold flavors in this pasta salad, the base of which is canned tuna. Although it’s definitely more caloric, tuna packed in olive oil rather than water gives the salad a much fuller, richer flavor.
Chicken Milanese with Tomato and Fennel Sauce
Cutlets cooked à la milanese—breaded in a cheesy crumb coating and pan-fried until crisp—are popular in every part of Italy (and here, for that matter!). They are usually made with veal, but my little aunt Carolyna wanted something she could serve her college friends, many of whom don’t eat veal. So I substituted chicken for the veal and added fennel to the quick pan sauce in this dish I devised for her; it is quite light and fresh-tasting, yet still true to the original.
Cheesy Baked Farro
We think of mac and cheese as a true-blue American invention, but this homey dish, made with nutty farro, is actually very traditional. Farro is one of the first cultivated grains and was ground to make bread, cereals, and pasta in ancient Italy. It’s becoming more popular in this country, but you still may need to visit an Italian specialty store to find it. Use it in salads, pilafs, and soups as you would use barley, which is also a good substitute for farro.
Pasta Ponza
Ponza is an island off the west coast of Italy where my aunt Raffy and I first tasted this dish, in the home of a family friend. Like all the best pasta dishes, this one is simple; what makes it special is how the sauce comes together. The tomatoes and capers are roasted with a bread crumb topping, concentrating their flavors and making them very juicy with a crunchy crust. When they’re mixed with the hot pasta and cheese, the textures and flavors explode in your mouth. This just might be my favorite recipe in the book!
Orecchiette with Greens, Garbanzo Beans, and Ricotta Salata
We should all be eating more dark leafy greens, but sometimes a side dish of steamed chard is a tough sell. Not so with this pasta, which is full of bright colors and flavors. If you’re not familiar with ricotta salata, it may remind you of feta cheese but with a milder flavor and creamier texture. This is a pasta dish I really feel good about eating, and with all those greens and the protein contributed by the garbanzos, it’s a complete meal.
Beef Skewers with Cherry Tomatoes and Parsley Sauce
Beef filet always makes an occasion special, but in the case of these mini beef kebabs it’s the parsley sauce—almost a fresh salsa—that makes the dish shine. For an interesting change, mix it up and substitute fresh pineapple chunks for the tomatoes; they make for a surprisingly harmonious combination. One note: Don’t marinate the beef any longer than three hours because the vinegar in the marinade will break down the meat and ruin its texture.
Tomato Basil Tartlets
When it comes to cocktail food, I like one-biters and I like things that are dainty and beautiful. These pretty little tarts fit that bill and more. They taste as fantastic as they look. I prefer to use black-olive tapenade because of its richness, but you can certainly try green-olive, which is tangier.
Green Beans and Tomatoes
This dish of slow-cooked green beans yields soft and sweet beans. It is a perfect side dish for a midwinter meal because it does not depend on sun-ripened tomatoes or crisp just-picked beans for its appeal.

Mussels in Spicy Tomato Sauce
The Mediterranean is rich in mussels, in particular in the rocky coastal regions. They are also abundant in the coastal regions of the United States. Cozze, or mussels, are a very popular dish in Italy, especially around Naples. It seems that just about every Italian American restaurant has some rendition of a mussels dish: alla Posillipo (spicy tomato sauce), alla marinara (mild fresh tomato sauce), and so on. Well, here is a spicy one. Mussels are not an expensive seafood and deliver a lot of flavor if fresh and still briny from the sea. Otherwise, save your San Marzano for another dish.
Green Bean Gratinate with Cherry Tomatoes, Mozzarella, and Basil
One day, when I was wondering what to make with a nice batch of fresh green beans, my daughter Tanya remembered a salad she’d had on a recent trip to Italy—perfectly cooked green beans, cherry tomatoes, basil, and cubes of fresh mozzarella. Because I love to take things a step further, I decided to combine the very same ingredients in a casserole and bake them with a crosta (crust) of bread crumbs and grated cheese. It was wonderful. And it is a fine example of how one simple procedure—baking ingredients coated with cheesy bread crumbs—can work so well with so many foods. The Broccoli and Cauliflower Gratinate (page 243) and the Crispy Baked Turkey Cutlets (page 310) use the same method. Of course, there’s another kitchen principle evident here: good ingredient combination lend themselves to different preparations. If you want to try Tanya’s original salad with green beans, tomatoes, basil, and mozzarella, I give a formula following the main recipe.
Baked Shells with Cherry Tomatoes
You can make this colorful and fresh-tasting dish anytime with a batch of Twenty-Minute Marinara Sauce and cherry or grape tomatoes, which are in the market almost year-round and often are sweeter than large tomatoes. This is one baked dish in which I use fresh mozzarella in the filling. I love its texture and fresh taste in uncooked or quick cooked pastas, and these can be lost in long cooking. Buy small whole mozzarella balls, an inch in diameter, if you can. Sometimes they are called bocconcini, little mouthfuls, but in my neighborhood the supermarket calls them ciliegine, little cherries. Toss them whole with the hot pasta so they keep their integrity in the baking dish—you don’t want them to melt away like shredded mozzarella on top.
Roasted Eggplant and Tomato Salad
Serve this colorful and delicious salad as a first course by itself, with other antipasti, or with grilled foods. You can use this low-fat method of preparing eggplant in other dishes too. I top it with shavings of ricotta salata (ricotta that has been salted and dried in a small round cheese form for about 4 weeks).
Empanadas de Jitomate
When I visited the city of Monterrey, a family friend, Amado, lovingly and kindly drove me around, showing me the wonderful delicacies of the surrounding towns. He took me to the small town of Marin where Martha Chapa has a small shop famous for her cookies, where I tried an amazing tomato empanada that I couldn’t stop thinking about. She told me how to make the jam, and, when she saw how excited I was, she gave me a large container filled with it. I kept eating spoonfuls of it on my way home and adapted the recipe once I was back in my kitchen. You can keep the jam chunky, or, if you like a smoother consistency, you can pulse it in a food processor after it’s cooked. The jam can be made well in advance and will keep for months if properly stored. It is very tasty on its own and I recommend that you make a big batch.

Summer Rice Salad
PAT Grilled corn is good enough all by itself. Here we feature it in a light, slightly smoky salad with rice, bell peppers, cherry tomatoes, and kidney beans. It’s an awesome combination, but once you add in the feta cheese, “Girl, you did that!” That’s what Gina’s mom always says. We used white rice, but brown will work just as well and give it an earthy, nutty flavor.
Grilled Mini-Pizzas: Roasted Vegetable with Smoked Mozzarella, and Pepperoni
Don’t let these puppies fool you. We call them mini-pizzas, but there’s nothing all that little about them, in either size or flavor. It just makes us feel better, because you find yourself eating a lot of them before you know it!
