Cheese Blintzes with Blueberry Sauce

The filling of these classic cheese blintzes gets its perfect consistency from a mix of cottage and farmer cheeses. The latter, a drier version of cottage cheese, is available at most supermarkets. A simple blueberry sauce tops off the dish. If blueberries aren't in season, frozen berries can be substituted. Use unsweetened, and do not defrost them before combining with the sugar and cornstarch.

Peach Blueberry Cake

This cake bakes for a long time at a moderate temperature, which helps keep the ripe fruit from bursting and releasing its juices. The easy-to-make pastry bakes up moist and crumbly, with a texture that's like a cross between a biscuit and a cake. A note from our cooks: We've received some letters from readers complaining about a burned crust when making the peach blueberry cake (August 2005 cover), so we ran through the recipe two more times. Baked in a standard light-colored metal pan, the cake was perfect; baked in a dark metal pan, however, it burned — be aware that the cake's high sugar content makes it more susceptible to burning at high heat. As you'll see in "Tips: A Guide to Using Gourmet's Recipes" (located on the recipe index page) we recommend always using light-colored metal pans for baking. Dark metal pans, including nonstick, will cause your baked goods to brown more quickly. Manufacturers suggest reducing the oven temperature by 25 degrees when using dark pans.

Simply Blueberry Sorbet

Editor's note: This recipe is adapted from Gabrielle Carbone, coproprietor of The Bent Spoon ice cream parlor in Princeton, New Jersey. This recipe makes a luscious, blue-purple sorbet that's perfect for our red, white, and blue cake. It's a pretty simple recipe — the quality comes from fresh, organic berries picked at the height of their flavor. The quality of the water is important as well — if your water has a bad aftertaste, so will your sorbet — so we recommend using bottled. The optional egg white helps to stabilize, emulsify, and preserve the texture of the sorbet if you are going to keep it in your freezer for a few days. Also optional is straining. At the shop, we don't strain — we like to keep the fruit as close to its natural state as possible. But if you dislike bits of seeds in your sorbet, feel free to strain the base before chilling it.

Berries with Geranium Cream

Check your local farmers market or Chef's Garden (800-289-4644) for the geranium leaves or experiment with other leaves such as fresh basil or mint.

Blueberry Hill Cupcakes

Freezing the berries before adding them to the batter prevents them from sinking to the bottom and from discoloring the cupcakes. Maple sugar can be found at some supermarkets and natural foods stores.
