Spicy Black Bean Soup
"For me, cooking is a very relaxing and creative process — I just wish I had more time for it," writes Katherine Burk of Seattle, Washington. "I make a point of fixing dinner during the week, but with my hectic schedule (I work in information technology), there are some nights I'm too wiped out to attempt anything more complicated than a peanut butter and jelly sandwich. Usually, though, I can put something together — my spicy black bean soup, for example — in under thirty minutes."
A southwestern favorite, simplified: Most of the ingredients are pantry staples.

Black Bean Soup with Cumin and Jalapeño
Jennifer Smith of Tyler, Texas, writes: "Now that I'm a stay-at-home mom, I cook more than I used to. My husband and I have discovered that dining out with a 16-month-old is messy at best, so we tend to eat in. Even then, cooking is a challenge, since my daughter is always underfoot.
My husband and I like simple comfort foods, so I don't have to spend too much time preparing elaborate meals. I just keep plenty of garlic and herbs on hand to spice up whatever I'm making. My must-have pantry staple is flavored petite diced tomatoes. They're great in chili and my black bean soup."

Spicy Black Bean Cakes
"I attended a function that featured wonderful hors d'oeuvres—among them, spicy black bean cakes—from chef Matthias Radits of The Breakers in Palm Beach," writes Ruth Acteson of Lantana, Florida. "Do you suppose he would share his recipe?"
The chef serves these little cakes with a mango-avocado salsa, but a purchased salsa would make a fine substitute.

Black Bean, Yellow Pepper, and Cumin Chili
Canned chipotle chilies — which give this dish a smoky depth — are available at Latin American markets and many supermarkets. Top the chili with chopped cilantro and green onions, and serve sides of corn bread and spinach salad. For dessert, try lemon sherbet with sugar cookies.
Chipotle-Black Bean Burritos
