Grouper or Other Fish Steamed in Its Own Juice, with Cilantro Sauce
This is an interesting technique: the fish is oven steamed, with just a tiny bit of liquid, thus retaining all of its own juices. Traditionally the packages would be made with banana or other large leaves, and they would be buried in hot ashes. Foil is much more convenient, if not quite as interesting or flavorful. If you make this with fillets, the cooking time will be under 10 minutes. Serve this with Peasant-Style Potatoes (page 477) and a lightly dressed vegetable.
Whole Steamed Sea Bass or Other Fish
The highlight of many meals in Chinese restaurants, yet few dishes are easier to prepare at home. Start with a medium-sized firm-fleshed fish—black bass and red snapper are ideal, but grouper or, if you can find it, small striped bass, are also good—preferably with its head on (if the head won’t fit in your steamer, cut it off, along with the tail). Scales must be removed and the fish must be thoroughly cleaned; any fishmonger can do this for you. Serve the fish with white rice and, preferably, a few other Chinese dishes.
Shallow-Fried Small Fish with Ginger Sauce
Not far from the cooking traditions of American freshwater fishermen, this is simple panfried fish with a separately made sauce. If you’re shopping, look for small specimens of black sea bass or red snapper; if you’re fishing, large mouth bass, croaker, spot, and porgies are all good. In any case, you need the fish to fit in your pan. In fact, two small fish are better than one large one in this instance. Use the best soy sauce you can find for this dish. There’s not much sauce here, so unless you’re from a rice-eating culture, you might find rice a bit dry. Cold Noodles with Sesame Sauce (page 532) would make a great starter, or you could serve this with Egg Noodles with Spring Onions (page 536). For vegetables, try Quick-Braised Root Vegetables with Hoisin (page 499) or Snow Peas with Ginger (page 470).
Fish Fillets Poached in Caramel Sauce
There were two things I couldn’t get enough of in Vietnam: crunchy lemongrass dishes and caramel sauce dishes. Here’s one of the latter, in which the caramel sauce—essentially melted sugar, which becomes oddly bitter while retaining its sticky sweetness as it browns—is used to poach the fish. Make sure you use lots of black pepper, which is one of the characteristic seasonings of Vietnam, and serve this unusual, delicious dish with Basic Long-Grain Rice (page 506). Poached Black Bass with Spring Garlic and Mint
At once light and intensely flavorful, poaching with aromatics is a wonderful treatment for black bass. Here, I use spring garlic and onions, but the recipe is easily adaptable to other times of the year. Make sure you use some member of the onion family for flavor; in winter, add shaved radish, fennel . . . use your imagination. This dish goes quickly if you have your fishmonger do the work for you; just ask for the trimmings to take home for making the fumet.
Black Bass with Thyme, Lemon, and Garlic
There’s nothing fancy about a whole, roasted fish—it’s just good. While the fish cooks, the herbs and lemon perfume the flesh, and the fish turns out moist and succulent with crisp skin. It doesn’t get much better. If you can’t find black bass, branzino, snapper, or rockfish would also work. This recipe is for one whole fish, but it’s just as easy to double the recipe if you’re having friends to dinner. Roast off a couple of fish, add a couple of other dishes, and let everyone share.
Seared Crispy-Skin Black Bass
Crispy fish skin is a treat. When done right, it’s crunchy and salty, and tastes like the ocean. I’ve come up with this method for getting fish skin perfectly crispy because in my career I’ve spent a lot of time being frustrated by sticking fish skin to the pan. My solution is more than a recipe; it’s a technique. And it will work for any fish with skin. This approach is all about having a hot pan, patience, and my secret . . . a second sauté pan. Use my method and you will always make fish with delightfully satisfying and crispy skin.
Spicy Cuban Black Beans and Rice
What better side dish to serve beside Cuban Pig (page 165) than moros y cristianos, or black beans and rice? Black beans are a staple of Cuban cooking, used in soups, stews, and sauces. Black beans can be traced back 7,000 years to southern Mexico and Central America, and their popularity has spread throughout the Caribbean and the southern United States, especially the Southwest and Florida. This spicy and filling recipe breaks the mold on traditional barbecue side dishes but can also be served as a complete meal.
Vegetarian Taco Salad
Such a simple meal and such a great taste! The fresh and tangy blend is wonderful by itself or with whatever additions you have on hand. Check your refrigerator for tomatoes, bell peppers, chiles, or corn to add to this versatile salad.
Steamed Fish With Lime and Chile
This is the definition of minimalist Thai cooking. The steam not only gently cooks the fish until just tender but also creates an instant, complex sauce from a handful of basic ingredients. Scoring the fish's flesh allows more of the flavor to season the fish and facilitates faster steaming. The fish is cooked on a plate that fits inside the steamer, to catch the juices.
