Spinach Salad with Citrus Vinaigrette

When I make a salad I like to bring in lots of different textures and flavors. This one has citrus for zing, herbs for freshness, and nuts for crunch. The citrus vinaigrette cuts through the raw spinach flavor.

Sablefish in Tomato-Saffron Stew

This aromatic stew can be made with other types of fish, including haddock or regular cod, but sablefish delivers higher amounts of omega-3 fatty acids. A whole-wheat baguette is good for sopping up the broth.

Rainbow Trout

This native American fish—a relative of Pacific salmon and Arctic char—is prized for its delicate flavor. While fishing is the only way to obtain wild rainbow trout in this country, supermarkets carry stock from U.S. farms. Fortunately, rainbow trout farms are generally well managed and sustainable, with a low risk of pollution.

Fresh Muesli with Apple and Almonds

Made from uncooked oats, dried fruits, and nuts, muesli does not contain sweeteners, oil, or other more fattening ingredients found in many store-bought cereals. Nondairy milk, such as hazelnut, almond, or hemp milk, makes an easy substitution for those with lactose intolerance.

Spiced Nuts and Seeds

Store-bought snack nuts tend to contain high amounts of salt and sugar, and can sit on the shelf for months. This healthier mixture relies on spices and honey for flavor, and it tastes much fresher than the prepackaged varieties.

Panfried Trout with Almonds and Parsley

Chopped almonds contribute substantial fiber, calcium, potassium, and zinc to simply prepared trout fillets. For a light supper, serve the fish with baby lettuce leaves and lemon wedges for squeezing over the dish.

Don’t let the cauliflower’s pale hue fool you into thinking it’s less nutritious than more colorful vegetables; a member of the Brassica family, it contains powerful compounds that help detoxify the liver and fight cancer.

Berries, blended with ice and almonds, make a simple, refreshing dessert that is also packed with fiber and antioxidants. Raspberry and strawberry crushes are shown here (left to right), but blackberries and blueberries would work well, as would cut-up peaches or bananas.

Whole-Wheat Spaghetti with Herb-Almond Pesto and Broccoli

A snappy almond-and-herb pesto is a fresh departure from the classic pine-nut-and-basil version. For an even more nutritious variation, add three tablespoons ground flaxseed to the pesto.

Burrata with Asparagus, Brown Butter, Guanciale, and Almonds

From my vantage point behind the Mozzarella Bar I can see people’s faces when they’re eating, and their expressions when they bite into this dish are that they’re wowed. I like brown butter with asparagus, and I like asparagus with almonds, but putting brown butter with burrata—that was a really indulgent decision and a combination I’m not even sure how I had the courage to put together. We use Sicilian almonds, which have a strong almond flavor and also a slight bitterness. If you can find them, use them. When making brown butter, the trick is to brown it enough to get the delicious, nutty flavor that you want without letting it burn. It’s best to do this in a stainless steel pan as opposed to a black-bottomed pan, so you can see the butter browning as it cooks.

Salsa Romesco

Romesco is a Catalan condiment traditionally made of fried bread and dried peppers, and served with seafood. We make our Romesco using roasted red peppers because we love their charred, sweet flavor. We serve it with mozzarella because we love the way it contrasts with the mild flavor of the cheese—and because we are a mozzarella restaurant! If you happen to have Garlic Confit, use it in this recipe; but if not, your Romesco will still be delicious without it.

Orange Marmalade and Almond Crostate

This is a cross between a cookie and a crostata. Orange marmalade is one of the only fruit tart fillings that we don’t make from scratch because there are so many good versions of orange marmalade available in stores. Almond meal is available in the baking section of specialty food stores. If you can’t find it, grind fresh almonds in a food processor with a small amount of confectioners’ sugar until the almonds are the texture of fine meal. You will need a 3 1/4-inch round cookie cutter to make these.

Toasted Almonds with Sea Salt

This isn’t really a recipe, just a method for toasting almonds, but I felt that it was important to talk about almonds since, as I’ve said, they are my favorite thing to set out before a meal, not to mention to snack on while setting up at work or at home. Toasting the almonds enhances their flavor, and then tossing them with olive oil and sea salt turns them into something really worth eating. We call for toasted almonds in various recipes, such as Burrata with Asparagus, Brown Butter, Guanciale, and Almonds (page 76). Anytime we ask for toasted almonds I suggest you make more than what the recipe calls for, as I know you’ll want some to snack on.

Toasted Coconut Biscotti

The recipe for this was a gift to me from Fred Chino, one of the members of the Chino Farm family. Fred loves to bake—and he’s really good at it. The first time I tried his coconut cookies, they were so good I couldn’t stop eating them. Now we make a slight variation at Mozza2Go to make them feel more Italian. Even though I see the cookies every day, I still have a hard time resisting them. You will need a 2-inch round cookie cutter to make these.

Almond Orange Nougat

This classic nougat is chock-full of almonds and candied orange peel. After you try it, you will doubtless never eat store-bought nougat again.

Torrone

Torrone is the Italian version of nougat. The origin of torrone is uncertain, but legend has it that it was served in Cremona, Italy, during the reign of Francesco Sforza, in the fifteenth century. Torrone is full of almonds, hazelnuts, pistachio nuts, and honey.

Marzipan II

This version of marzipan is made by adding ground almonds to a cooked sugar syrup.

Florentines

These rich and chewy confections are an old-world classic, unusual in that they are first cooked and then baked. A mélange of ingredients, including honey and candied orange peel, is used to make them; their underside is covered with bittersweet chocolate.

Marzipan I

Made from almond paste but having a firmer and smoother texture, marzipan is easier to handle. It is used for decorating and as an ingredient in candies.
