White Chocolate–Vanilla Cake

For all the years I’ve been working with Jean-Georges, I’ve had his legendary molten chocolate cake on the dessert menu. Finally, I decided I had to do something to make the cake my own, so I took it apart and put it back together with white chocolate and a good hit of vanilla. This cake isn’t molten; it’s much more a lush, custardy soufflé. I love combining citrus with chocolate, hot with cold. The frozen mandarin orange refreshes and cleanses the palate.

Strawberry Soda

Recently, I’ve become infatuated with bubbles and carbonation, and I’ve been on a mission to find ways to introduce bubbles as a texture in desserts. So adding a soda to the menu was a natural. With the help of David Arnold, Director of Culinary Technology at the French Culinary Institute, I’ve built a carbonation rig for the pastry kitchen at Jean Georges. Don’t let that scare you from trying this recipe, though. All you need at home is a soda siphon. Using a half-size hotel pan and perforated hotel pan (which you can buy online from BigTray) ensures that the strawberry water freezes and defrosts evenly during the clarification process.

Strawberry-Rhubarb Consommé

Maybe I like rhubarb so much because I started eating it when I was a child; my mother’s strawberry-rhubarb pie is one of my earliest memories. And I love summer fruit soups; that’s something I learned from François Payard. So this combination is a natural for me. You need just the pod from the vanilla bean for this dessert, so if you have saved some used pods, now is the time to recycle. And you will need a whipped cream charger (see page 279) for the foam. You will have leftover consommé (which you can freeze) and foam; you simply can’t successfully foam less liquid than is in the recipe.

Strawberry-Rhubarb Mochi

Mochi are sweet, filled Japanese dumplings that are served chilled. I’ve been fascinated by them from the first time I had one, but I’d always been told that they could be made only in factories. And since the commercial ones are artificially flavored and colored and filled with ice-hard ice cream, that didn’t surprise me. One day, I promised my friend David Chang of Momofuku that I’ d make fresh mochi for him. It became a mission. Once I learned how to do it, I found that it really wasn’t difficult at all to make the tender, sweet rice dough and flavor it naturally. And since I fill mochi with a compote, they’re fork-tender. The basil fluid gel is an ideal herbal foil to the compote. I use 2-inch demisphere molds when I make mochi, but I’ve found that an egg carton works fine. The secret to the dough is working quickly. This recipe makes twice as much as you need for the fourplay, but I hardly consider leftover mochi a problem. The mochi will keep for 1 day in the refrigerator.

Flank Steak Burritos

These “pass arounds” will be a family favorite. You’ll like them because they utilize planned-overs from Taco-Rubbed Flank Steak (page 184), making it easy to get dinner on the table in next to no time. Your kids will like choosing their own combination of condiments and creating their own burritos. And everyone will like the taste.

Mushroom Quesadillas

Mushrooms and chiles are covered with cheese that’s been fired with jalapeño, then wrapped in a warm tortilla to make a rich and creamy—and slightly messy—Tex-Mex treat.

Southwestern Chicken Salad

Here’s a new twist on chicken salad. Serve this one with baked tortilla chips on lettuce-lined plates, garnished with jalapeño rings.

Gooey Gramwiches

Years ago, I used to make these gramwiches all the time. Every time, my ex-boyfriend, Kyle, would watch the marshmallow as it gooed out of the cracker when I took a bite. He would say, “You’re such a child,” with a smile on his face. He didn’t like marshmallows, but I know he wished he did because this quick treat always put a smile on my face.

Super-Speedy Sweet Potatoes

If you can’t find 6-ounce potatoes or don’t have them on hand, you can simply use one 12-ounce potato. Add 1 minute to the microwave cook time if the potato isn’t tender after the 5 to 6 minutes, or an additional 10 to 15 minutes in the oven, and use all of the butter and brown sugar for the one large potato. A 12-ounce potato will make two servings, so the recommendation is to eat only half.

Buffalo Mashed Potatoes

Most mashed potatoes are full of butter, cream, and other added fats. But this dish pairs wing sauce with blue cheese, packing tons of flavor and thus eliminating the need for added fats or butter.

Baked Brie Turkey Wrap

To brie or not to brie . . . that is the quandary for many. Well, now that I’ve found ways to stave off the cravings without overindulging, I’m definitely a happy camper. Though the flavor is subtle here, the brie is great paired with the cranberry sauce and arugula leaves. In minutes, you’ll feel like you’re eating at a gourmet sandwich shop, but without the gourmet sandwich consequences.

Onion-Garlic Puree

This aromatic puree is designed to be a base ingredient and is a great way to build flavor and texture without adding fat. It eliminates the need to add a lot of butter and cream to Macaroni and Cheese with a Crusty Crunch (page 174), for instance. You can stir it into just about any sauce or soup for a fat-free flavor punch.

Not so Basic Vinaigrette

I first learned how to make a real French vinaigrette when I was eighteen years old and living with a very generous chef in Paris. It was actually his twelve-year-old daughter who taught me. The first thing she did was separate two eggs and put the yolks in a bowl; these were followed by Dijon mustard, then vinegar, then olive oil—fat (egg yolk) followed by fat (olive oil). It’s the Dijon–sherry vinegar combo that really makes this dressing—and those are both fat-free. A shallot puree provides the thick texture you normally get from creating an egg yolk/olive oil emulsion. Use this to dress salads and cooked vegetables—both hot and cold.

Loaded Baked Potato Skins

This is a healthy version of one of the greatest inventions of the 1980s: the hollowed-out deep-fried potato skins filled with sour cream, bacon, and cheese that first appeared on the menu at T.G.I. Friday’s in New York City. There are a few differences, though. Here, the potato skin is baked until crisp, not fried, and the fillings are all reduced-fat products. The result is a pretty spectacular loaded potato skin at one-third of the calories and less than one-fourth of the fat of the original.

Sweet Potato Puree

I learned that sweet potatoes are the single healthiest vegetable. They’re loaded with carotenoids, vitamin C, potassium, and fiber. You can dress them up a bunch of different ways, but this simple puree is ideal.

German Sweet Potato Salad

There are two basic types of potato salad: mayonnaise-based and sugar-and-vinegar-based. I have always preferred the latter because of the sweet-and-sour element—plus it has bacon in it. This alluring sweet-and-sour salad replaces not-so-nice white potatoes with sweet potatoes (much nicer for you), and the texture of the salad has been bulked up with cauliflower.

Roasted Chicken Burritos with Corn and Black Beans

Although white rice is always included in the fast-food version of this dish, I left it out here. It would have added about 100 calories per serving, and these burritos are really good without it—even better, I think. If you can’t find corn salsa, buy fresh refrigerated salsa and stir in some low-sodium canned corn.

(Almost) General Tso’s Chicken

Sweet and spicy General Tso’s Chicken was likely invented in the kitchens of Chinese restaurants in New York City (its first known mention was in the New York Times in 1977). Some say it’s similar to a classic Hunanese dish the general is said to have loved—a dish that is more sour than sweet. It’s usually made with battered and deep-fried chicken thighs bathed in a glossy sauce flavored with ginger, garlic, soy sauce, chiles—and lots of sugar. This chicken breast version is breaded and baked until crisp, then tossed with a reasonable version of Tso’s sauce that is low in fat and contains no sugar but is still sweet.

Smoked Turkey Reuben

Some say the Reuben—corned beef brisket, Russian dressing, Swiss cheese, sauerkraut, bread—was invented by an Omaha grocer named Reuben Kulakofsky to provide sustenance to participants in a late-night poker game. This reformed version was invented to help you eat better. (Following that logic, don’t stay up late playing poker, either.)

Mixed Green Salad with Fennel-Tarragon Dressing

A great green salad has always been a staple on my restaurant menus and on my table at home. The combination of Dijon mustard, good-quality vinegar, and olive oil gives tender green leaves their raison d’être. There is no olive oil in this dressing and it still tastes great. I kept the Dijon mustard in the mix because it’s very low in fat—and because few ingredients can pack a punch like Dijon mustard. Yogurt, lemon juice, and aromatics like tarragon and fennel round out the dressing. You’ll never again eat a green dressed with artificial-tasting, gloppy, low-fat dressing.
