Grilled Caesar Salad
With just 2 minutes on the grill, crisp romaine develops a smoky, charred flavor without wilting. Add a garlicky anchovy dressing, freshly grated Parmigiano-Reggiano, and grill-toasted croutons, and you have a whole new way to enjoy classic Caesar salad. The salad pairs with all your barbecue favorites, but a hearty steak is its perfect match. Prep the dressing in advance—store it in the refrigerator and give it a good shake before using—and grill the romaine while your meat rests.
Shrimp Bisque
When developing this recipe, Epicurious member Joan Higgins of Pearl River, New York, decided to use extra shrimp to make sure that her diners had a piece of shrimp with each spoonful. The bisque’s base is indulgent, too—half-and-half infused with earthy nutmeg and enlivened with paprika. Even with its deep flavor and silky texture, Higgins says the best thing about this recipe is that it’s foolproof.

These are no ordinary poached eggs. Rich, tender toasted brioche—or challah, if you can’t find it—adds subtle crunch while shaved Parmesan lends just the right hint of saltiness. But the real star is the pistou. France’s version of pesto, this basil-and-garlic–infused oil brings an herbal vibrance to the beloved egg, cheese, and bread combo. You might want to make extra pistou; pour leftovers over pasta for an effortless dinner.
Tom's Tasty Tomato Soup with Brown Butter Croutons
When I was a kid and my mom made tomato soup, she would cut buttered toast into squares and float them on top of each bowl. My twist on Mom's toast is to make brown butter croutons, though when I'm really feeling feisty I go all the way and make grilled cheese croutons to float on the soup.
To cut the bread for the brown butter croutons, take a 4-inch chunk of rustic bread (5 to 6 ounces) and cut off and discard the crusts using a serrated knife. Cut the bread into 4 slices, then cut the slices into 3/4- to 1-inch cubes.

I like them sweet-savory: Spread a little bit of sweetened yogurt over a Chestnut Crêpe, roll it, and drizzle with honey. It makes the perfect snack.
If you cannot find chestnut flour, use a combination of 1/2 cup (70 g) superfine brown rice flour and 1/4 cup (35 g) buckwheat flour.

The key to this recipe is using a ripe, in-season peach. Here in Arizona, we get amazing peaches from the farms in the city of Queen Creek, as well as from Utah. It's always good to get to know the produce guys at your local grocery store because they will tell you when peaches are in their prime. Peaches contain numerous nutrients that are good for your body, including niacin, thiamin, potassium, and calcium. They are also high in beta-carotene, which promotes healthy hearts and eyes. The darker the peach's color, the more vitamin A it has in its pulp. Peaches may also help in maintaining healthy urinary and digestive functions. There's some evidence that flaxseed oil, which is a good source of omega-3 fatty acids, may help reduce your risk of heart disease, cancer, stroke, and even diabetes.

Like apple or pear butter, pumpkin butter is gently cooked with some sugar until it's smooth and has a buttery texture. Look for pumpkin butter near the jams and jellies in your grocery store.
