The Scandalous Scandinavian

Smoked Salmon, Hard-Boiled Egg, Tomatoes, Greens and Caper-Onion Mayo This is another one of those fabulous "adult sandwiches." It's hearty enough to pack for work, yet it's perfectly appropriate for a luncheon or brunch. The hardest part of this recipe is assembling the ingredients: that's how easy it is, yet it tastes like a gourmet sandwich you'd find on a restaurant menu or at a specialty deli. Thanks to the salmon, the sandwich is loaded with omega-3 fatty acids that our body can't make on its own; it's high in protein and delivers a whopping amount of nutrients per calorie. In other words, it's the heavyweight nutrition champ of sandwiches!

Kippers and Bits

Kippers, Vidalia Onions, Lemony Mayo and Greens When I went to Norway two years ago, I was amazed by how healthy everyone looked. The women, in particular, had complexions that were milky white; their hair was shiny, and they had a radiance about them that could only come from the incredible amounts of omega-3-rich, cold-water fish they ate. When I returned home, I tried to maintain a high level of fish consumption, knowing it would also be beneficial for my brain, heart and muscle mass. Scientifically speaking, the protective effects of fish consumption greatly outweigh any of the risks you may read about. This recipe was inspired by my trip to Norway, and it's as delicious as it is nutritious; the sandwich is bursting with heart-healthy fats, vitamins D and A and the minerals calcium and potassium. Kippers are salted, cold-smoked herring; if you can't find them, try sardines or anchovies. While this meal isn't the most kid-friendly, it will keep you nourished and energized so you can tackle whatever life throws your way!

Woodman Cheese and Crackers

When SFMOMA presented the first Francesca Woodman retrospective in the United States in over two decades, I was excited to immerse myself in the work of another influential female photographer whom I studied in college. I love Woodman's juxtaposition of textures, her way of placing soft and vulnerable human forms in withered, deteriorating environments. My plan was to base a dessert on a photograph with this type of contrast. Of all of the images in the show, the one of the artist wearing a Victorian-style floral coat and flowing dress while posing in a crumbling room was my favorite. At the time the Woodman retrospective opened, I had just returned from a vacation in Scandinavia where I would have been happy to live on only Norwegian hardtack, rye bread, soft cheeses, and smoked salmon. The combination of hearty rusticity and soft refinement of these foods were like elements in the Woodman photo: I saw the crumbling room as a cracker made with whole wheat and rye; her flowing skirt as soft cheese; and the pattern on her coat as beautiful, delicate edible flowers. To create a tender cracker with the heartiness of my Norwegian inspiration, I used two types of rustic flour and incorporated the butter using the same technique that's used to make flaky pie dough. A little bit of yogurt added tang and tenderness to the cracker. To slather onto the crackers, I wanted a soft-textured fresh cheese that was simple to make in our tiny kitchen. Ricotta cheese was just the type. A sprinkling of colorful edible flowers from Leah's garden and a touch of black Hawaiian sea salt perfected the rustic-elegant presentation of the Woodman Cheese and Crackers.

Smoked Salmon Smørrebrød

Smørrebrød only sound complicated. "You can put whatever you want on them," says chef Nicolaus Balla, who serves the Scandinavian open-face sandwiches at San Francisco's Bar Tartine. Simply slather a creamy spread like butter or sour cream on dense rye bread. Top with classic combos like roast beef and crisp onions, or smoked salmon and scallions—and since they're on view, make sure they look good. Finish with herbs, lemon zest—anything, really, except a second piece of bread.

Rösti with Fried Eggs

Rösti is a large potato pancake made famous by the Swiss. This version omits the speck, but feel free to add a slice under the cheese. Chilling parboiled potatoes makes the grating step easier.

Yarnall Family's Fyrstekake (Norwegian Cardamom-Almond Tart)

This tart (pronounced FISH-deh-kakah) has a moist, cakelike filling. For the best flavor, forgo pre-ground cardamom; take the time to shell and grind whole seeds. Hesitant about rolling out pie crusts? This recipe is for you; the crust is simply pressed into the pan.

Sweet Pretzels

Swedish pearl sugar stands in for coarse salt in this sweet take on the soft pretzel.

Swedish Rye

What makes this version of rye different from the more popular German and deli ryes is the use of licorice-flavored aniseeds and fennel seeds, along with orange peel and a touch of cardamom. Nutritionists are now quantifying the therapeutic benefits of orange peel, licorice-flavored spices, and bitters as digestive aids that various traditional cultures have espoused for centuries. By making the bread with a combination of wild-yeast starter and commercial yeast, this formula creates an even more complexly flavored version of the bread than the more customary versions leavened only by commercial yeast. The lactic acid not only conditions the flour, predigesting it to an extent, but it also gives it a longer shelf life and better flavor. Think of this bread as a baked version of anisette.

Linzer Tart with Lingonberry Jam

For this Scandinavian-inspired dessert, bittersweet-chocolate-enriched dough is pressed into the pan, and more is rolled into long ropes and pressed to form a herringbone pattern on top. Lingonberry jam is available at specialty stores or Scandinavian markets.

Swedish Meatballs

C’mon, how could we not include this seventies’ entertaining classic? But fear not, these aren’t tired chafing-dish buffet standards; they are a delicious duo of beef and pork, along with a well-spiced mixture of allspice and mustard powder and a touch of heavy cream. While people may argue over authenticity, we’re not Swedish, but we know these are darn good. Serve them with our Mushroom Gravy (page 63), Mashed Potatoes (page 79), and a bit of lingonberry jam.

Swedish Potato and Beef Sausage with Roasted Beets and Sour Cream

Partially cooking the potato and chilling it before grating serves two purposes: the potato gets thoroughly cooked within the sausage mix, which it won’t if it is added raw, and the sausage doesn’t turn out soft and mushy, which it will if the potato is cooked and mashed first. I prefer to get a jump start on this dish by preparing the potato a day ahead and chilling it overnight. But if you’re in a rush, several hours will do the trick, in which case, use the freezer to hasten the chilling. Rather than the standard Swedish accompaniment of mashed potatoes, I serve the sausage with a side of colorful, almost candylike roasted beets topped with sour cream.

Sweet Cardamom Crackers

Cardamom-flavored cookies are a traditional specialty of the Scandinavian countries. This crisp cracker-like variety is made more crunchy with a topping of finely chopped pistachios and shredded coconut.

Smorgasbord

We never went hungry as kids. And we have no inherent fear of the next Great Depression or anxiety about canned food. Still, we always want more. Wanting and eating four of the Swedish shrimp-egg things you can buy in the restaurant at IKEA is a good example of that. Another good example is how we would have piled more stuff on this modest toast if we could have fit it: a can of sardines from Bretagne, maybe, or quails stuffed with crab hiding in the corner. Our first reaction on seeing this photo was, “Shit, we forgot clams.” There are thirty items here, and if we do another book, we will put in sixty, we promise (just so we don’t run out of food). Disclaimer: In no way do we aspire or pretend to serve authentic Scandinavian food. This is just our view projected onto a classic. The closest we have been to Scandinavia is Fred Heimlich-maneuvering a Dane who choked on the biggest oyster ever eaten raw. And it was a weird experience because it was like they kissed; they were shy around each other for the rest of the evening. In the list that follows, an asterisk means a recipe is included. If there’s no *, it means the item is straightforward and you can figure it out. We suggest serving the items on rye bread or a baguette sliced lengthwise and buttered. You then eat your open-faced sandwich with a fork and knife. Or, you can do as we do: add condiments and eat it like a military strategist, portioning, placing, moving, and rationing. Regarding yields: the smorgasbord is more of a concept than a straightforward recipe. The smorgasbord shown here serves 4 to 6, and includes every single thing listed. You don’t have to follow our lead (though we would be pleased). Typically we put 4 or 5 proteins and 4 or 5 condiments on the average smorgasbord. Following this rule, each of the small recipes serves four.

Gravlax

The intense orange color, meltingly tender texture, and wonderful flavor of gravlax give it an allure shared by few fish preparations—not bad for a dish whose name means “buried salmon” in Swedish. The curing process intensifies the color, tenderizes the texture, and enhances the flavor. Although most chefs jazz up gravlax with sauces and side dishes, it is brilliant on its own or with just a few drops of lemon or mild vinegar. And the rankest kitchen novice can make it at home. Be sure to check your salmon fillet for pinbones, the long bones that run down the center of the fillet; these are not always removed by routine filleting. Press your finger down the center of the flesh and you will feel them; remove them, one at a time, with needle-nose pliers or similar tool.

Braised Red Cabbage with Apples

Traditionally served throughout Scandinavia as part of the smorgasbord or Christmas dinner. The apples dissolve, leaving a sweetness that is balanced by the tartness of the vinegar. To emphasize one element or the other, add either the (sweet) jelly or the (astringent) red wine. Lovely in midwinter. Other vegetables you can prepare this way: any cabbage, including white, Savoy, or Napa.
