Grilled Lamb Skewers with Bay Leaves
When I was served this dish, of alternating bay leaves and chunks of lamb, the bay leaves were fresh (I was told that the world’s best bay leaves are grown around Smyrna, in Turkey). I couldn’t imagine that dried bay leaves would be much less delicious, and indeed they’re not. Either a rice dish or ordinary crusty bread is fine here, along with a salad like Spicy Carrot Salad (page 191), any of the eggplant salads on pages 191–193, or simply some plain roasted peppers or grilled vegetables. Other cuts of meat you can use here: chunks of boneless pork shoulder (which will need somewhat longer cooking) or beef tenderloin (filet mignon).
Chicken with Walnut Sauce
Boiled chicken may seem a thing of the past, but if the chicken is good to begin with, you don’t overcook it, and you serve it with this classic walnut sauce— sometimes called tarator or skordalia—it can be quite fabulous. Make the chicken and the sauce in advance if you like; both are good at room temperature. And, if you prefer, sauté the chicken and serve it with this sauce; see, for example, Chicken Escabeche (page 294) for the cooking technique. If you want to make the sauce without stock, see page 600. Walnut sauce, or tarator, is good not only with chicken but also with plain steamed vegetables— that’s what I’d serve with this, perhaps along with a rice or potato dish.
Beef Stew with Prunes
A wonderful spin on beef stew containing both dried fruits and vegetables. You see this combination throughout Central Asia (and occasionally in the Middle East and Europe), and it’s an easy one to exploit. Dried fruits keep forever and take no preparation to add their wonderful body, sweetness, and acidity to what otherwise might be a dull dish. Other fruits often used here are quinces, chestnuts, or dried apricots. You can make this up to a day ahead of time and reheat before serving—it only gets better with time. Serve with couscous (page 526) or any other simple grain dish. Other cuts of meat you can use here: lamb or pork shoulder, lamb shanks or short ribs (both of which will take considerably longer to become tender).
Hunkar Begendi
I’d heard of hunkar begendi and even tried it in Turkish restaurants elsewhere before I went to Istanbul, but I was not prepared for the reverence it inspires. Not only is this dish delicious—its name means “Sultan’s Delight”—but its appearance causes a hush to fall over a table. This is great stuff, a creamy, eggplant-laced béchamel topped with tender braised lamb. It’s a fair amount of work, but worth it.
Lamb Shanks Cooked in Yogurt
This lamb braises in its own juices and those produced by the onions. A large quantity of whole garlic cloves brown and become sublimely tender during the long cooking process, nicely offsetting the creamy, almost bland sauce. Do not skimp on the herb garnish, which is essential in this case. Serve with crusty bread, warm pita, or a good pilaf (page 513). Other cuts of meat you can use here: chunks of boneless lamb shoulder, which will cook considerably faster.
Panfried Kofte with Potatoes
Sweeter than grilled kofte like the one on page 355—and too delicate for the grill—these may be broiled but are at their best when panfried. Serve with any Raita (page 175) and a cooked vegetable.
Kofte with Bulgur
While most kofte are quite smooth in texture, this one has the nutty graininess of bulgur, the staple grain of the Middle East. It’s best to season these even more than you would Grilled Meat Kofte (page 355)—the bulgur cuts the lamb’s flavor—and broil or panfry them; they are too delicate to grill.
Lentils and Rice with Caramelized Onions
A slightly labor-intensive but wonderful vegetarian dish that, with its contrasting textures and slight sweetness, makes a terrific main course or a first-rate side dish. Other legumes you can prepare this way: split yellow or green peas.
Lentils with Bulgur
A relative of tabbouleh, but (usually) served hot and made with lentils. This is a good vegetarian main course, but also a fine side dish at a Middle Eastern or other meal. The onion-mint garnish is terrific stuff.
Pkhali
Made throughout the Balkans, into Russia and Turkey, this is essentially a chopped vegetable—it can be almost anything—combined with a strong version of Tarator (page 600). It can be eaten alone or used as a spread or as a dip for pita. Most people let it sit for a few hours before serving, which allows the garlic to mellow and the flavors to marry. This isn’t a bad idea, but if you’re in a hurry, plunge right in. Other vegetables you can prepare this way: eggplant (roasted or quickly boiled, as in Eggplant Salad with Mustard-Miso Dressing, page 185); red beans, cooked until tender; green beans; spinach or other greens.
Meat Filling for Grape Leaves, Cabbage Leaves, Peppers, and Tomatoes
The more-or-less standard meat filling for stuffed vegetables, made with a lot of herbs and spices. It’s so delicious that you can bake the vegetables with no sauce around them, as in the recipe on page 492, or use one of the preparations on pages 445–447. You can add pine nuts and currants to this mixture if you like or make the vegetarian version that follows.
Collards, Kale, or Other Dark Greens Cooked in Yogurt
Think of this as the Middle Eastern version of creamed spinach, served at room temperature. The yogurt is uncooked, which keeps it fresh and tangy. Other vegetables to prepare this way: spinach.
Braised Leeks with Olive Oil and Rice
A simple little thing (the hardest part is cleaning the leeks) but delicious. The sweetness of the carrots really comes through, and the reserved olive oil adds a nice touch. Good with sautéed or roast poultry or meats. Other vegetables you can prepare this way: Belgian endive (cut in half the long way), bok choy, and chard are all good.
Patra ni Machhi
One of the most popular dishes in Parsi (Zoroastrian) cuisine and wonderful with basmati (or brown) rice, this is traditionally made with pomfret, a fish that is not always readily available here. Use pompano, if you can find it, or any fillets, from mackerel to sole. You can prepare the banana leaf packages up to 3 hours in advance—just cover and refrigerate until ready to cook.
Eggplant and Yogurt Salad
Eggplant is everywhere in the Middle East; you see it as often as you do tomatoes. Here are three takes on a creamy, mild dish of eggplant and yogurt. The first relies on the charred flavor you get when you grill or broil eggplant; especially when seasoned this way, it’s really the best. The variations are easier and still very good. As always, small eggplants are best; regardless of size, they should be as firm as you can find.
Lahmacun with Meat
Traditionally, these were made as small pies and rolled up after baking (the dough is not cooked crisp but left soft like a pita); you might make twelve or even more from this recipe. Now, to make them look more familiar to visitors from other parts of the world, lahmacun are often made as large pizzas, which you can do if you prefer.
Tabbouleh
Tabbouleh, the well-known salad that uses bulgur as its base (usually; there’s also a rice version, which I’ve included as a variation), should be dominated by its herbs, mostly parsley but also mint. You can prepare the bulgur ahead of time and toss in the herbs right before serving.
Batrik
Bulgur, which is precooked cracked wheat (see page 525), needs only to be reconstituted to be ready to eat. Usually this is done with water or stock, but here freshly made tomato juice is the liquid. (I had no idea what I was tasting when I first had this, but fortunately it was explained to me so I could experiment.) The nuts add a welcome crunchiness to this wonderful salad.
Pita
Also called pide or pitta, the now-familiar flatbread of the Middle East—pocket and all—is easy to make at home. As with French or Italian Bread (page 570), you can speed up or slow down the time it takes to make these. It’s best to equip your oven with a baking (pizza) stone, but they can also be baked successfully on cookie sheets. Even better is to use a heavy skillet.
Cheese-Filled Pita
A quick street snack found in Greece, Turkey, Lebanon, and other parts of the Middle East. Great hot or at room temperature.
