Japanese Pork and Shrimp Pot Stickers
“If I can’t have sushi, I must have gyōza,” says my friend Makiko Tsuzuki, a self-described gyōza otaku (dumpling fanatic). The Japanese love pot stickers, ordering them at ramen noodle shops, patronizing gyōza restaurants, and visiting the Gyōza Stadium food theme park in Tokyo. They consider the dumplings essential to their cuisine, despite the fact that gyōza were popularized only after World War II, when Japanese soldiers returning from China brought back their taste and knack for making Chinese dumplings. Gyōza is the Japanese pronunciation of jiaozi. Like their Chinese parent, gyōza can be boiled, steamed, fried, or served in soup (see Variation). Pan frying is the most popular cooking method, which is why gyōza are commonly known as pot stickers. The filling strays from Chinese tradition by including a kick of garlic, a touch of sugar, a dose of black pepper, and a smidgen of sake. Sesame oil has a lesser role in the filling but a bigger role in pan frying the dumplings. Sesame oil has the same smoking point as butter and thus cooking with it is fine.Gyōza may be dipped in vinegary soy dipping sauce or biting hot mustard.

Even my meat-eating friends, quietly polite when invited to a dinner featuring tofu, rave about this one. It is easy and delicious and contains flavors traditionally considered typical of both Japanese- and Korean-style cooking. Serve over brown rice.
Green Tea Financiers
It was as if someone hit the switch one day and all of a sudden, a flash of electric-green took Paris by storm. You couldn’t walk past a pâtisserie without seeing something sweet and shockingly green standing out among the more traditional-looking pastries in the lavish window displays. Although the deluge of green tea desserts spread far and wide throughout the city, the best can be found at the shop of Sadaharu Aoki, a Japanese pâtissier who wows normally blasé Parisians with his classic French desserts made with a twist. He incorporates ingredients like black sesame seeds and sweet red beans into his pastries, creating a marriage of flavors that would’ve stunned Escoffier. I came up with my own recipe for these flavor-packed almond teacakes flecked with a bit of salt and sesame seeds because I was certain that the staff at his shop was tired of wiping my nose prints off the windows.
Sushi Soup
I‘m a big fan of vegetable sushi, so I thought it would be fun to concoct a soup that featured all of its flavors and textures, without all the work of rolling and cutting. The result is an offbeat, rice- and nori-filled broth topped with colorful raw veggies.
Japanese Soba Noodle Soup
Serve this soup Asian-style. Slurp the noodles from the broth with chopsticks, then use an Asian soup spoon to scoop up what’s left. This simple soup comes together in less than 30 minutes.
Miso–Butternut Squash Soup
Once you’ve got the squash baked, this Japanese-style soup comes together quickly, and is as pleasing to the eye as it is to the palate. Use chopsticks for “slurping” the noodles.
Basic Dashi
Like miso broth, dashi is another traditional Japanese stock that may be embellished in a number of ways, or eaten as is. It also makes a good base for certain Asian vegetable soups. Look for the sea vegetable kombu and dried shiitake mushrooms in Asian groceries or in natural food stores.
Vegetable Sushi Rice Salad
Here’s a simple Japanese way with cooked rice that Hiroko Shimbo showed me when I asked her one day what she would do with leftover rice. It’s called sushi salad because it’s made with sushi rice. As Hiroko points out so persuasively in her book The Sushi Experience, it’s the rice that makes it sushi, not all the various garnishes or tasty bits that are wrapped—or, in this case, tossed—in the seasoned rice. This is one of those dishes that are subject to variations depending on the season, but it’s hard to improve on the following intoxicatingly delicious summer version.
Dashi
Leftover dashi freezes well and can become a fast miso soup or used instead of water to poach vegetables or cook grains.
Eggplant Salad with Walnuts and Garlic
Steaming eggplant gives it a suave, custardy texture that helps it resist soaking up too much oil, setting it up for this rich dressing. I like Anaheim chile flakes here, which are milder than the standard-issue chile flakes. They provide sweet pepper flavor without too much heat.
Miso-Glazed Eggplant
This way of cooking eggplant makes the flesh soft and creamy. The miso glaze sweetens it with a Japanese flair.
Strawberry-Rhubarb Mochi
Mochi are sweet, filled Japanese dumplings that are served chilled. I’ve been fascinated by them from the first time I had one, but I’d always been told that they could be made only in factories. And since the commercial ones are artificially flavored and colored and filled with ice-hard ice cream, that didn’t surprise me. One day, I promised my friend David Chang of Momofuku that I’ d make fresh mochi for him. It became a mission. Once I learned how to do it, I found that it really wasn’t difficult at all to make the tender, sweet rice dough and flavor it naturally. And since I fill mochi with a compote, they’re fork-tender. The basil fluid gel is an ideal herbal foil to the compote. I use 2-inch demisphere molds when I make mochi, but I’ve found that an egg carton works fine. The secret to the dough is working quickly. This recipe makes twice as much as you need for the fourplay, but I hardly consider leftover mochi a problem. The mochi will keep for 1 day in the refrigerator.
Glazed Beef Strips with Sugar Snap Peas
This recipe boasts a Japanese marinade and a slightly sweet glaze. Like many other Asian stir-fries, it goes well over steamed brown rice.
Shrimp and Sesame Soba Noodles with Scallions
The Japanese spin buckwheat flour into culinary gold with their rich, flavorful soba noodles. Buckwheat flour has many health benefits, including being much richer in antioxidants than wheat pasta. If you have a choice, buy inaka or “country” soba, because it’s made entirely from whole, unrefined buckwheat—which means more fiber. Traditionally, soba is served hot in a broth or cold with a sweetened soy dipping sauce called tsuyu. This simplified version is flavored with sesame, an American favorite.
Thirteen-Minute Onsen Eggs
Onsen means “hot springs” in Japanese, and the original onsen eggs were cooked in natural hot springs and served for breakfast. They are famed for their soft, silky texture. We’ve been chasing the perfect onsen egg for years. By increasing the temperature of the cooking water from the modern standard of 147°F (63.8°C) to a more traditional 167°F (75°C), we shortened the cooking time and produced both whites and yolks with the textures we prefer. The results are tender, just-cooked whites paired with a warm, liquid yolks. This version is a great stand-in for the poached eggs in eggs Benedict because the eggs can be cooked ahead of time and then warmed when you are ready to serve.
Salmon Sushi with Green Tea Salt
The flavors of the salmon, cucumber, and green tea salt are really fresh. The green tea salt will keep for months and is also terrific sprinkled on popcorn.
Spicy Tuna Hand Roll
The Japanese man I buy my fish from gave me this recipe. One day I noticed that he was making hand rolls for lunch from the trimmings of a No. 1 grade A tuna loin. He let me have a roll since I’m such a good customer, and I have to say it was the best spicy tuna roll I’d ever had. You’ll get the hang of rolling these in no time—practice makes perfect.

If you make this ahead of time, keep it refrigerated but bring it to room temperature before serving.
Traditional Japanese Breakfast
This dish might not be to everyone's (westernized) taste on a hungover morning, and it's also a breakfast with many components—rice, grilled fish, miso soup, pickles and a Japanese-style omelette—and some relatively obscure ingredients. Having said that, this is as clean, wholesome and nutritious as breakfast gets, so if anything is going to make you feel better it may well be this. However, I advise you to steer clear of tofu with a hangover (vegetarians: you may shoot me now); I've used cubes of potato instead.

Matcha Muffins
This moist and fluffy steamed green tea confection has a texture similar to that of chiffon cake. My favorite version includes sweet-simmered black beans randomly scattered throughout the batter. A dried fruit-studded kinako (toasted soy flour) version (see below) is also popular.
