White Wine
Chicken, Mushroom and Leek Fricassée
Round out this French-style meal with rice and steamed asparagus; polish things off with raspberry tarts from the bakery.
Chilled Cream of Corn Soup with White Truffle Oil
Truffle oil adds earthy nuances to this summer soup, but don't worry if you don't have any on hand: The soup will still be good without it. Open a nice bottle of Champagne to go with the meal.
Chicken Breasts with Prosciutto and Sage
This can also be prepared with duck breasts, which is how it is often made in Tuscany. Either way, the dish is good with rosemary-flavored mashed potatoes and sautéed artichoke hearts.
Molto Mario's Clam Stew
Mario Batali, star of the Food Network's Molto Mario, is one of the top chefs in New York City, where he owns three restaurants with Joe Bastianich — Babbo, Lupa and Esca. This dish, from Batali's book Simple Italian Food, is served at Lupa.
Braised Veal with Gremolata
Gremolata, a mix of finely chopped lemon zest, parsley, and garlic, is an Italian topping classically served with osso buco. We added some basil to make it even livelier.
Mussels in Cream Sauce
Serve these mussels with a frisée salad dressed with red wine vinaigrette. Add french fries, plus a baguette for sopping up the sauce. Lemon tart would be good for dessert.

Brandied Onion Soup with Croque-Monsieur Croutons
A version of the famous Parisian ham-and-cheese sandwich pairs up with a classic soup.
Roast Turkey with Corn Bread Stuffing and Giblet Gravy
A flavorful turkey prepared in an interesting way. It is soaked in brine, which helps tenderize the bird, and then rubbed with a citrus-thyme butter. The butter keeps the turkey moist and also enriches the pan drippings for the gravy. The stuffing borrows from the long tradition of corn breads in America. Be sure to make the Giblet Broth before you start roasting the turkey. Pour hard cider throughout dinner.

Chicken Fricassée with Carrots, Mustard Greens and Avgolemono Sauce
Avgolemono, a classic Greek sauce flavored with lemon juice and thickened with eggs, adds richness to the tender stewed chicken in this outstanding main course. Pour a chilled Chardonnay, and offer purchased baklava for dessert.

Grilled Rib-Eye Steaks with Black Bean Sauce
Indigo's chef and owner is Glenn Chu, who was born in Hawaii and learned to cook from his Chinese grandmother — and by watching Julia Child on television. The result: Eurasian cuisine, which Chu showcases in selections as eclectic as goat cheese wontons with four-fruit sauce, and grilled shrimp with Thai macadamia-nut pesto. The romantic dining room has a tropical-island motif, with ceiling fans, bamboo, and bird-of-paradise.

Tuaca Zabaglione with Sauteed Vanilla Pears
Tuaca, a sweet, citrus- and vanilla-flavored Italian liqueur, enhances this sophisticated dessert. Tuaca is available in many liquor stores. But if you can't find it, use Grand Marnier or any other orange liqueur.

Penne with Pancetta and Tomato-Cream Sauce
Using the fresh-tasting canned diced tomatoes eliminates the chopping step. Serve with: Arugula and radicchio salad.
Pumpkin and Shrimp Bisque
Buttery, slightly sweet pumpkin is the perfect mate for the briny flavor of oysters, scallops, or other crustaceans. This soup is made with shrimp, whose shells are turned into an aromatic stock that serves as the soup's liquid. Classic shellfish bisques are thickened with rice, but here pumpkin provides body for the soup. Sage's earthy flavor complements both pumpkin and shrimp and steers the focus of flavor from sweet to savory.
This is a satisfying soup to prepare throughout the fall. If you serve it as a first course for Thanksgiving dinner, you might start a tradition in your family.
Steamed Clams in Wine and Chorizo
Serve these clams with some crusty bread for sopping up the sauce, or spoon them over linguine or rice.
Garlicky Mashed Potatoes
Vermouth-roasted garlic and Yukon Gold potatoes are terrific in this mellow dish.
