Chinese Egg Drop Soup with Noodles

Though egg drop soup is not traditionally made with noodles, we love the texture and substance they add.

Fresh Tomato Gazpacho

This is also terrific with yellow tomatoes. Garnish with thin cucumber slices and some chopped red onion, if desired.

Red-Cooked Pork with Frizzled Ginger

The flavorful broth that results from cooking the pork is known in Chinese cuisine as a master sauce — save any that's left over in the freezer and use it for braising other meats, such as duck or chicken. Allowing the pork to cool overnight in the broth ensures its succulence — and because it's made ahead, this dish is ideal for entertaining. Active time: 40 min Start to finish: 14 1/2 hr (includes chilling)

Braised Lamb Shanks with Ginger and Five-Spice

These Asian-inspired lamb shanks are wrapped and baked in individual foil packets, then placed atop bowls of steamed rice. Serve with stir-fried bok choy or other Chinese greens. What to drink: Asian lager beer or a fruity red Zinfandel.

Mâche, Parmesan, Pear, and Walnut Salad

A lovely twist on the traditional pear and blue cheese pairing. Tender lamb's lettuce and toasted walnuts provide great contrasting textures. Use a vegetable peeler to make thin shavings of Parmesan.

Mixed-Peppercorn Steaks with Sherry-Marjoram Pan Sauce

Serve with: Tomato salad with red onions and blue cheese.

Shrimp de Jonghe

Glögg

There are a number of variations of this traditional Scandinavian Yuletide drink. Dry red wine, muscatel and sweet vermouth, with aquavit in place of the brandy, may be used. In another version, 2 bottles of dry red wine, preferably Bordeaux, are used with the quantity of aquavit increased to a whole bottle, which is poured over the flaming sugar.

Potted Crab

In manor-house cooking, meat, poultry, and fish were preserved by being "potted" — minced and combined with seasonings, then packed in a container and covered with a layer of fat or butter. The fat was removed before serving, and the contents of the container spread on toasts or crackers.

Wild Mushroom Soup with Sherry

"My husband and I ate dinner at the Dilworthtown Inn, a colonial-style restaurant in West Chester, Pennsylvania," writes Judy Kamp of Oxford, Pennsylvania. "I'd love to know how to make the creamy mushroom soup we both had to start the meal."

Flummeries

Though these 1/4-cup dessert portions may seem small, you wouldn't want them any larger — they're extremely rich.

Chicken Fricassée with Black-Eyed Peas and Spinach

This dish is wonderful served with mashed potatoes.
