Turkey Meatball Garlic Bread Heroes
One look at these meatball subs and you might be inclined to bypass an entire summer's worth of burgers and dogs. Heroes, hoagies, subs, grinders—regardless of what you call them, we guarantee this recipe will be an instant crowd favorite thanks to toasted garlic-butter buns piled high with tender meatballs and tangy tomato sauce. Although you may be tempted to head for the grill, opt for your oven broiler instead and avoid the need for skewers or special grill baskets.
Editor's Note: This recipe is part of Gourmet's Modern Menu for Summer Fair Favorites. Menu also includes Fried Onion Dippers with Balsamic Ketchup and Frozen Chocolate-Dipped Bananas with Peanut Brittle.

Bacon, Egg, and Tomato Club Sandwiches
This triple-decker amplifies the classic fLavors of a BLT with sliced hard-boiled eggs, chive mayo, and a bundle of fresh herbs.
Asparagus, Green Pea, and Egg Salad Crostini
This crostini is a fresh, satisfying mix of vegetables and eggs. Roasting the asparagus bring out its flavor without adding any more fat. Easy to make and pretty to serve.

Shaved-Radish Sandwiches with Herb Butter
Drape plastic wrap over the prepared sandwiches until serving. Itll keep the bread from drying out.

Open-Face Grilled Chicken, Maytag Blue Cheese, and Toasted Pecan Sandwich
Maytag Blue cheese, made by the same family that became world famous for its appliances, is handmade from cow's milk and has a peppery, piquant flavor. Start this sandwich about an hour in advance so the chicken has time to marinate. This is an easy recipe to double or triple for a larger group, and the chicken can be made ahead. I like to serve this sandwich on raisin pumpernickel bread, but feel free to use another favorite loaf.

Sourdough Toasts with Mushrooms and Oysters
Redzepi uses whatever foraged mushrooms he finds to make this rich ragout; feel free to do the same while foraging at your local farmers' market or supermarket. Omit the oysters and lardo (used here in place of Speck), if desired.

Crostini with Anchovy Butter and Cheese
Garlic bread done even better: the salty, buttery, garlicky topping makes these toasts absolutely addictive.
Toasted Ciabatta with Balsamic Syrup
I love this sweet syrup. It’s similar to chocolate sauce; in fact, beyond the antipasto platter, you could even use it as a dessert topping, drizzled over ice cream or berries.
Bruschetta with Frisée, Prosciutto, and Mozzarella
Think of this bruschetta as a portable salad that doesn’t require utensils or a plate—perfect for entertaining!
Goat Cheese Toasts
Goat cheese is something I like to use in many different ways, and this herb-y mixture is especially versatile. You can toss it with hot pasta for a quick, creamy sauce, or roll it into balls to top a salad, but I probably like these little toasts best of all. They’re so easy to make and they fly off the platter every time I serve them. The recipe can easily be doubled for a party.
Baked Caprese Salad
Be careful not to overheat the crostini; the cheese and tomatoes should be just warmed through and softened but not melted or falling apart. It’s perfect if you have slightly underripe tomatoes.
Quinoa-and-Turkey Patties in Pita with Tahini Sauce
These patties are inspired by the Middle Eastern dish kibbe, most often made of ground lamb and bulgur wheat. The combination of turkey and quinoa is particularly rich in protein, with a chewy texture that contrasts nicely with the crisp cucumber and red-onion slices, and the creamy tahini dressing served alongside.
Egg, Kale, and Ricotta on Toast
Lightly sautéed greens transform a standard egg-and-toast breakfast into a special morning meal that could also serve as a light supper. The kale adds a healthy boost of calcium, folic acid, and carotenoids, as well as vitamin K.
Pita Sandwiches with Spinach-Chickpea Spread
Iron-and folate-rich chickpeas and spinach combine in a delicious sandwich spread that can also be served atop halved cherry tomatoes for a snack.
Open-Faced Tomato Sandwiches with Herbs and Creamy Tofu Spread
These open-faced sandwiches are a delicious way to showcase the season’s best tomatoes. Try the tofu spread as a low-fat and nutritious alternative to cream cheese; the recipe makes about three-quarters of a cup, enough for four additional sandwiches.
Whole-Grain Toast with Goat Cheese and Raspberries
Goat cheese may be a good option for those who can’t tolerate cow’s milk, and when combined with tart raspberries on toasted bread, it’s hard for anyone to resist.
