Yellow Butter Cake with Easy Chocolate Buttercream

A simple butter cake is often referred to as yellow cake, but it’s not the butter that produces its distinctive color; most butter cakes also contain whole eggs, so the yolks contribute to the color (as well as the rich flavor). The creaming method is essential to many classic American layer cakes like this one, but here an electric mixer (fitted with the paddle attachment) is used, rather than a wooden spoon. Be sure to cream for the suggested amount of time to create the finest texture and a velvety crumb. Using a combination of flours is equally important; cake flour imparts tenderness and a delicate crumb, all-purpose flour lends structure.

This cake was a collaboration of sorts between my husband and my pastry chef Roxana Jullapat (don’t ask!). I love this cake so much that, when it came time to think about my wedding cake, I wasn’t concerned with the flowers on top or the color of the icing; all I knew was that I wanted to serve this incredible hazelnut–brown butter cake. A simple recipe of ground hazelnuts, egg whites, and sugar combined with brown butter results in a moist, rich cake with a delicate, slightly chewy crust. Little did I know, it would take 25 pounds of hazelnuts, 25 pounds of brown butter, and 150 eggs to make a cake big enough to feed our 140 friends and family.

You can assemble this showstopping dessert up to eight hours ahead of serving; leave off the last layer of cream and fruit, and refrigerate along with the partially assembled cake. We seem to place a lot of emphasis on birthday cakes in my family. We like for everyone to have his or her favorite cake, but more than that, we like the variety of awesome sweets we get to eat throughout the year! Most people have tried white cake with caramel icing, but my grandma Elizabeth Yearwood spread that amazing Caramel Icing on chocolate layers, and it was even more delicious. The cake recipe came from my grandma Paulk. I guess I could call this Two-Grandma Cake! Now my mom makes this cake for me every year. The Caramel Icing has a mind of its own, so you never really know what it’s going to look like, but it doesn’t matter to me. It always tastes amazing!

Every February, when Garth’s birthday rolls around, I make this beautiful and delicious cake for him. Last fall, he made some sad statement like, “Only three more months until you make me that awesome German chocolate cake again!” I made the cake the next day. (I know, I’m a sucker.) I double the frosting recipe to frost the entire cake, because my husband likes extra frosting, but one recipe will frost the tops of the layers and do the trick just fine—unless you’re Garth, of course! If you have some left over, the frosting is also good spread on a graham cracker or on brownies (page 198). Okay, it’s also good right off a spoon!

Sweet-and-Salty Cake

In this presentation, traditional chocolate cake is enhanced with silky-smooth Caramel Buttercream offset by crunchy, salty chocolate-covered pretzels. This flavor combination is a best seller for adult birthdays, because it’s unique and sophisticated, but also made with recognizable flavors. The base of this icing is Swiss Buttercream (page 155), so it’s more buttery and not as sugary sweet as traditional birthday cake icing. Flakes of sea salt just lightly sprinkled at the edges of the cake give you an extra little burst of saltiness and help enhance the flavors of the caramel and the cake. The Caramel Buttercream requires a little more work than other icings, but it’s well worth the effort.
