Flatbread
Piadina with Fontina and Prosciutto
Piadini look a lot like pizzas, but because the crust is made without yeast and does not need to rise, they are much quicker and easier to make. Piadini are also cooked on the grill rather than baked in the oven, which gives them a nice, smoky flavor and crunchy crust. While you can top a piadina with anything you like, including tomato sauce and mozzarella, this sauceless combination is very typical of northern Italy, where piadini are especially popular.
Lahmacun with Meat
Traditionally, these were made as small pies and rolled up after baking (the dough is not cooked crisp but left soft like a pita); you might make twelve or even more from this recipe. Now, to make them look more familiar to visitors from other parts of the world, lahmacun are often made as large pizzas, which you can do if you prefer.
Piadine
I love aggressively seasoned vegetables (see Broccoli or Cauliflower with Garlic and Lemon, Two Ways, page 452, specifically the second way, with the optional anchovies and dried chile added), and piadine are one of the best ways of justifying a meal centered around them. Piadine are griddle-cooked flatbreads from southern Italy that are sometimes folded and stuffed like calones. But it’s equally authentic, more convivial, and certainly easier to put a pile of piping hot piadine in the middle of the table surrounded by bowls of wilted kale and plates of grilled sausages or prosciutto. Have plenty of red wine on hand and let everybody help themselves.
Pita
Also called pide or pitta, the now-familiar flatbread of the Middle East—pocket and all—is easy to make at home. As with French or Italian Bread (page 570), you can speed up or slow down the time it takes to make these. It’s best to equip your oven with a baking (pizza) stone, but they can also be baked successfully on cookie sheets. Even better is to use a heavy skillet.
Cheese-Filled Pita
A quick street snack found in Greece, Turkey, Lebanon, and other parts of the Middle East. Great hot or at room temperature.
Onion Kulcha
Kulcha are like doughier, softer paratha and are absolutely delicious. Combined with basmati rice, dal (page 433), and an Indian vegetable dish, like the cauliflower on page 451 or the eggplant on page 457, kulcha are a perfect centerpiece for a vegetarian meal. Chaat masala is a deliciously sour-tasting spice mix you can buy at Indian markets (it’s possible to make it yourself, but almost no one does).
Naan
Although there’s something lost in translation between the scorching heat of a tandoor—the clay oven of northern India—and the relatively tame 500°F of a home oven, you can indeed make creditable, even delicious naan at home. With their slightly sour flavor and ultrasoft texture, they’re the perfect accompaniment to dal (page 433) or any Indian meat dish.
Keema Ke Paratha
When they’re hot from the pan, it’s hard not to fill up on paratha alone, though they’re usually served in the context of a larger Indian meal. I learned this spicy, delicious lamb filling from Suvir Saran, an Indian chef and friend who lives and works in New York and whose book, written with Stephanie Lyness—Indian Home Cooking: A Fresh Introduction to Indian Food—is one of the best on the topic written for the American audience.
Aloo Paratha
Not to put too fine a point on it, but this is one of my favorite foods ever. Fifteen years ago, Julie Sahni, the great Indian cook and cookbook writer (her Classic Indian Cooking remains the best book on the subject published in the States), showed me how to make aloo paratha. I continued to follow her recipes for years and never ate a better one until I traveled to India (and even then I may have been influenced by the atmosphere, a truck stop near a mountaintop fort). This is essentially Julie’s recipe, with a few changes I’ve incorporated over the years. Cooked paratha will keep at room temperature for up to twenty-four hours and can be served without reheating or can be reheated quickly in a dry skillet or even a microwave. But there is nothing like one fresh from the skillet. Ajwain comes from carom seeds, which look like celery seeds but taste like very strong, slightly coarse thyme.
Paratha
These simple, flaky breads are easy to make, but there is one caveat: you must not treat them (or any Indian bread) as you would European breads, which is to say that although the dough can be prepared in advance (indeed, it’s better if it rests for a while), the breads themselves must be cooked at the last minute before serving. Serve with any dal (page 433) and a dish like Tandoori Chicken (page 291).
Tarte Flambé
This is a pizza in all but name, and it disproves the notion that “creative” pizzas began in California. Creamy, smoky, and crunchy, it’s a real winner.
Farinata Genovese
Farinata, which is nearly identical to the socca of Provence, is a cross between firm polenta and a primitive pizza. To me it’s the perfect no-work Mediterranean appetizer, a great thing to have in your repertoire if you want to make sure there’s something warm for guests to eat when they arrive—or if you just want to round out a pasta dinner for the family on a weeknight. Keep the pepper mill nearby when you serve the farinata; it’s best with an almost perverse amount of freshly ground black pepper. You can buy chickpea flour at health food stores, Italian markets, Middle Eastern stores, and specialty food shops.
Fig and Arugula Flatbread
GINA You could easily order pizza for delivery, but why not have flat-bread instead, and cut it into little squares? You can just buy the dough from your local grocer (or your local pizzeria, if you ask nicely) and add in all the other ingredients. Ripe figs will turn your traditional pizza into an amazing party favorite. We absolutely love this dish: it’s hearty yet light, fruity, and flavorful. If you find the taste of blue cheese too strong, you can always substitute a mild goat cheese, which has a creamy tang that also goes well with the figs. We add the handfuls of fresh arugula to the flatbread while it’s still hot, to add a pop of bright peppery flavor and color.
Eggplant and Spicy Hummus Flatbread
To my mind, flatbread always calls out for eggplant or hummus, so why not eat the two together? I like to add to the complexity by frying up some extra chickpeas—something that, in greater quantities, makes for a fantastic party appetizer. Look for za’atar spice in Middle Eastern markets or buy it online from spice purveyors such as Penzeys.com.
Barbecue Chicken Pita Pizza
Oh, Barbecue Chicken Pita Pizza, how I love thee! Okay, that might sound kind of weird, but try it and you’ll know what I mean. These silly little pizzas are the easiest things in the world to make and most excellent to eat. In my opinion, that’s the perfect combination. I like making them this way, but you could use almost any toppings you want.
Focaccia
This rustic flat bread is great served with white bean dip or dunked in red sauce. It’s also wonderful dipped in olive oil. Be sure to serve it warm.
Chapatis
These simple, traditional Indian flatbreads are wonderful served with any of the curried soup and stew recipes in these pages.
Grilled Chicken & Caramelized Onion Flatbread with Blue Cheese
When I was a child, we went to Chuck E. Cheese’s for our birthdays. In addition to all of the cool games and the characters, I loved that they cut their pizzas into squares instead of wedges. Not only could you get more crust or less crust as you like (I’m a less-crust girl), I got to eat a number of pieces, since they’re petite. Here, I’ve cut the flatbread into squares to distinguish it from other pizzas . . . and because it just feels more decadent. If you’re making this pizza on a charcoal grill, heat the coals until they are hot and covered with gray ash. Then place the pizza on the grill about 5 inches from the coals for best results. Cover and grill for 3 to 4 minutes.
Cheese-Stuffed Flatbread
This flatbread is a riff on the classic focaccia from Recco, Italy. Unlike the traditional yeasted focaccia, this bread is two layers of unleavened dough separated by cheese. The dough is made by first adding the oil to the flour, mixing it in to coat the starch, and then adding the water. This method keeps the flour from clumping and facilitates a well-blended dough. This flatbread is a great way to start a dinner party with everyone congregating in and around the kitchen, cocktails in hand as the flatbread comes out of the oven. It’s a graphic illustration of the power of steam leavening. After the bread is cut it deflates into a truly flat bread. It’s beautiful and delicious, a sure conversation piece as people relax and settle in for the evening.
