Dip
Salsa Fresca
Probably the quickest salsa you can make and a fresh, delicious one for chips or simply cooked fish or chicken. Best with good fresh tomatoes, but still decent with canned (and definitely better with canned than with hard, unripe “fresh”).
Blistered Tomato Salsa
If you can grill the tomatoes for this salsa—especially over wood—so much the better. But you can broil or even pan-grill them, and the salsa will still be good, as long as you make sure they blacken a bit. This makes a wonderful all-purpose condiment, and a great salsa for burritos and tacos; it’s also fabulous used in an omelet or scrambled eggs.
Salsa Roja
A standard and very useful salsa, great with anything grilled. I don’t make it fiery hot—it’s based on mild chiles—but you can add more of the hot ones if you like, and it’s easy enough.
Habanero-Garlic Salsa
The variously colored habanero (also called Scotch bonnet, for its shape) is blisteringly hot. It also has wonderful flavor, which, I suppose, is why people tolerate it. This salsa will turn up on any grilled meat, but it’s often served with Cochinita Pibil (page 351). Care is needed when handling all chiles, but especially habaneros; do not touch your eyes or other sensitive parts of your body after touching the chiles until you wash your hands very well (some people wear gloves to handle them, and that’s not a bad idea).
Pasilla Salsa
When dried—as you will usually find them—pasillas are often called chile negro, or black chile. They are thin, small, shriveled, and very dark. They are also earthy and not especially hot, so they yield a rich, densely flavored sauce traditionally used with lamb, beef, and chicken. If you want some heat, soak a dried chipotle or two with the pasillas. If you can find fresh tomatillos, use them in place of the tomatoes. Slip off the papery husks and add a little water to the sauce.
Papaya and Red Onion Salsa
The best substitute for papaya here, believe it or not, is watermelon. Cantaloupe isn’t bad either. Serve this with any grilled meat, poultry, or fish.
Salsa Verde
This is a sharp, spiky sauce, but not a superhot one (it’s not a supergreen one, either!). Use it as a dip for chips or vegetables or as a basting sauce when roasting meat, fish, or vegetables.
Salsa Verde with Tomatillos
A raw salsa, with nice strong flavors. Best with tomatillos, but still good with not-too-hard green tomatoes. I like to mix a little just-ripe red tomato in as well.
Roasted Onion Salsa
Somewhere between a vegetable dish and a salsa, this is great as a topping for simple grilled fish or chicken. If you have a gas grill, you can make this almost effortlessly; it’s easy, too, when you’ve started a charcoal fire for another purpose.
Queso Fundido
The original and superior version of nachos with cheese has the smoky spiciness of roasted chile and chorizo. While it can be served with tortilla chips, it is best scooped and wrapped into warm corn or flour tortillas. This makes a great simple lunch served with salad or soup.
Bagna Cauda
A classic Niçoise appetizer that is like fondue—a “warm bath”—of anchovies, garlic, and olive oil (you can use butter in place of some of the olive oil if you’re feeling indulgent), served with fresh raw vegetables. It’s an unusual dish by today’s standards but remains a wonderful combination. A fondue pot is the ideal serving vessel, because it’s important to keep the sauce hot at the table; an earthenware dish that retains heat well will work if you preheat it and serve the Bagna Cauda immediately.
Roast Pepper Spread with Walnuts and Garlic
This stuff is great, and I have never tasted it in this country except in my own kitchen. I first had it in Turkey, where it was quite spicy, but have since learned that it’s equally acceptable milder. Dried urpa or aleppo pepper, or hot paprika, is the ideal seasoning—a bit of bite but not overwhelming—but judicious use of hot red pepper flakes is also good. You can also omit the heat entirely. This spread can be made hours or even a day in advance. Always, however, serve it at room temperature, never cold. Serve with bread or vegetable sticks; it makes a great sandwich ingredient too.
Beet Caviar
This brilliantly colored starter is an unusual and extremely elegant way of using beets. Serve it with chips, bread, or toast or as an accompaniment to any roast poultry dish. Make this ahead of time if you can; it’s best after marinating overnight.
Eggplant Caviar
Its flavor bears no resemblance to real caviar, its ingredients (except for the salt) have nothing to do with caviar, but its texture—supposedly—is akin to that of caviar. If there are enough seeds in your eggplant—not necessarily a good thing—I suppose you could argue that its graininess is like that of caviar. In any case, it’s a wonderful spread for Crostini (page 41), as a dip for fresh vegetables, or as a stuffing for roasted peppers or tomatoes (pages 492).
Red or Black Bean Dip
Like most other bean preparations, this is far better with beans you cook yourself than with canned (frozen beans, now available at many supermarkets, fall somewhere in the middle). But even with canned beans, it is so much better than commercially made bean dip you may never go back. If you cook the beans yourself, start with the recipe for Black Beans with Garlic and Cumin (you can cook red beans this way too), page 438, and cook them until they are quite soft. Reserve the cooking liquid. Serve with tortilla chips, toasted pita bread (not a traditional combination but a good one), or raw vegetables.
Taramasalata
This creamy dip is made from tarama, the salted (and sometimes smoked) roe of mullet or other fish (we usually see it made from cod or salmon roe). Serve it with strips of fresh vegetables, like cucumber, red pepper, carrot, and celery, toasted pita bread, or both.
Guacamole
In Mexico, guacamole is traditionally made in a molcajete, a mortar made from volcanic rock. It’s a lovely tradition, but since you probably don’t have a molcajete, use a bowl and fork or a potato masher. The admittedly more complicated variation that follows is superior but not nearly as quick.
Herbed Cheese Dip
We have all eaten herbed cheese, but most of it is store-bought and contains who-knows-what. This is a traditional herb cheese with almost nothing in it; you can also make it with fresh goat cheese or with Yogurt Cheese (preceding recipe). Serve with crackers, lightly toasted pita, and/or raw vegetable sticks.
Yogurt Cheese
This might be a new, unexpected way to use yogurt, yet it’s probably as old as yogurt itself. It’s the easiest cheese you can possibly make, since it needs no special equipment or curdling agents—basically, it’s yogurt with the excess liquid removed. There is, however, a key here: you must start with good whole-milk yogurt. Thick, locally made Greek or Turkish yogurt is the ideal (well, the ideal is yogurt you make yourself), but any high-quality yogurt will produce a nice cheese. Serve with crackers, chips, and/or raw vegetables.
