Individual Coconut Rum Chocolate Cakes

Can be prepared in 45 minutes or less.

Mini Brownie Cupcakes

We used waxed candy/muffin liners for these cupcakes, which kept them from sticking and helped them develop attractive domed tops. (Spraying your muffin tins will keep them from sticking but tends to result in flat-topped cupcakes.) The liners are available by mail order from Sweet Celebrations, (800) 328-6722. They are not always well labeled; ask for item #601524 (red) or #502332 (white with gold).

Gingerbread Muffins with Lemon Glaze

"I love cooking with the new recipes every month when Bon Appétit arrives," writes Gabriella Hughes of Windham, Maine. "One dish I'd really like to make is the gingerbread with lemon icing from Standard Baking Co. in Portland, Maine. Could you request it?" Serve these tender gingerbread muffins with whipped cream for teatime or dessert.

Bittersweet Chocolate Cupcakes

"I recently went to the Good News Café in Woodbury, Connecticut, with my husband and some of our friends," says Phyllis Hertzberg of Englewood, New Jersey. "For dessert, I ordered a chocolate cupcake, and it was absolutely divine—rich and gorgeous. Everybody had a bite, and we all thought it would be a nice addition to your magazine." More like individual flourless chocolate cakes, these "cupcakes" would make a sophisticated dessert for a dinner party. They are delicate and may crumble on top, but don’t worry, since they're served upside — down with a glaze spread over them.

Cinnamon-Scented Devil's Food Cupcakes

Vanilla and Almond Frosting is an accompaniment for this recipe.

Cranberry Cupcakes with Maple Cream-Cheese Frosting

Can be made in 45 minutes or less.

Wellesley Fudge Cupcakes

The following cupcake recipe is adapted from a rich chocolate cake first served in the late 1890s at the Wellesley Tea Room, a genteel establishment catering to students at the well-know Massachusetts women's college. Can be prepared in 45 minutes or less.

Carrot Cupcakes with Molasses Cream Cheese Icing

For ease of transportation, the cupcakes and icing may be brought on board in separate containers.

All-Occasion Downy Yellow Butter Cake

If I had to choose among all my cakes, this one would win first place because it is delicious by itself yet versatile enough to accommodate a wide range of buttercreams. The cake combines the soft texture of white cake with the buttery flavor of yellow cake. Using all the yolks instead of whole eggs produces a rich yellow color, fine texture and delicious flavor.

Carrot-Coconut Cupcakes with Cream Cheese Frosting

Dorothy Williams of Vancouver, British Columbia, writes: "To celebrate our 25th wedding anniversary, my husband and I spent a week in Victoria, British Columbia. We particularly enjoyed Abigail's Hotel, where we had some delicious carrot-coconut cupcakes." For a lovely breakfast muffin, omit the cream cheese frosting.

Lemon Cupcakes with Lemon Cream
