Old-Fashioned Sugar Cookies
There are untold numbers of sugar cookie recipes circulating throughout the Midwest. As students of this sweet know, lard makes for a particularly toothsome cookie, with a texture at once crisp and sandy. For a cookie that is crisp but also chewy, vegetable shortening is best.

Here's a variation on the classic raspberry-jam-filled Viennese specialty, Linzertorte. Show off these cookies in a box that's lined with lace or a linen napkin, and trimmed with wire ribbon.
Pecan Crescent Cookies
The recipe for these melt-in-your-mouth pecan crescent cookies has been in my family for years," says Marilynn Bonecki of Marengo, Illinois. "They can be made a couple of weeks in advance, but it's hard to keep them in the house that long."
Be sure to chill the dough overnight before shaping and baking the cookies.

Chocolate, Hazelnut and Ginger Biscotti
For the crispiest cookies, slice the dough no thicker than a half inch. The biscotti keep well and look great wrapped in tinted cellophane tied with a silk ribbon or raffia, or packed into pretty holiday bags.

Tender chocolate shortbread topped with a rich chocolate ganache just might be the perfect gift for the chocoholics on your list. For an elegant accent, decorate the shortbread with gold leaf, place the cookies on a tray or round platter lined with gold-colored tissue paper, and wrap it all up with cellophane and gold ribbon.

"When I lived in South Africa, rum and raisin chocolate bars were a special treat," says Beth Peterson of Phoenix, Arizona. "I created this brownie recipe based on that combination of flavors, and perfected it with the help of friends and colleagues who sampled the brownies at each stage of development. These have a grown-up taste with the right balance of sweetness and rum."

These biscotti can be baked in different size pans — even free form on a baking sheet — depending on what shape you’d like them to be. We used an 11- by 4-inch pan for a square shape. A 9- by 5- by 3-inch pan yields a long, narrow rectangle. The cooking time will not be affected by the pan you use.
