Cold Soup

Chilled Watercress Soup with Onion Cream

The flavor intensity of watercress can vary, so the amount needed for this soup will vary, too, depending on whether you like a strong or mild watercress taste.

Chilled Grape Soup

The gelatin in this refreshing dessert soup sets just enough to give it body but not bounce. All kinds of grapes work beautifully as garnishes for this soup; it's worth seeking out unusual varieties, however, for the extra character.

Peach and Tomato Gazpacho

We use ice in this recipe because it gives the gazpacho just the right chill without the soup having to be refrigerated for any length of time. If you don't have precrushed ice, crush about 1/4 cup ice in a blender.

Watermelon and Cucumber Gazpacho

This fresh, colorful soup makes a great summer starter.

Heirloom Tomato Gazpacho

Stars and studio moguls often do their wheeling and dealing at this legendary Hollywood haunt, where Catherine Zeta-Jones and Tyra Banks have been seen. Chef Sam Marvin tweaks dishes to anyone's liking (A-lister or otherwise) and purchases the freshest ingredients daily from local farmers' markets. Think of this colorful bowl as an alphabet soup of vitamins, delivering a healthy dose of A, B6, C, and K, not to mention lycopene, a potent antioxidant.

Chilled Corn Soup with Adobo Swirl

Adobo is the spicy tomato sauce that comes in the can with chipotle chiles. Look for canned chipotles at supermarkets, specialty foods stores, and Latin markets.

Chilled Zucchini Soup

This creamy chilled soup will make you hope for an abundance of zucchini in your garden this year. Thin-sliced zucchini blossoms, available at produce markets and specialty foods shops, add a beautiful hint of color while lending texture to the soup's smoothness.

Speedy Gazpacho

Fire-roasted salsa adds depth of flavor to this fat-free soup; it can usually be found in the supermarket deli case.

Cold Avocado Corn Soup With Cilantro Oil

Crema — a Mexican cultured heavy cream similar to sour cream — is often drizzled over enchiladas and tostadas and added to side dishes and sauces. Here it lends a tangy balance to rich avocado and sweet corn.

Vietnamese Chicken and Pineapple Soup

Kia Ly Dickinson of Miami, Florida, writes: "This fragrant soup is so good you will be freaking out. It can be served hot or cold, with rice. The recipe is an ode to my homeland, Vietnam, and I'd like to share it with my new friends in America." This recipe calls for fresh lemon verbena, but you can substitute 1 stalk of fresh lemongrass if lemon verbena is unavailable. Both ingredients are sold at specialty produce markets, but lemongrass is also sold at Asian markets and some supermarkets, so it may be easier to find. If using lemongrass, discard 1 or 2 outer leaves, then thinly slice lower 6 inches of stalk. Finely chop, then sautƩ along with chiles and garlic.

Lettuce and Pea Soup

Can be prepared in 45 minutes or less.

Minted Pea Soup

This recipe can be prepared in 45 minutes or less but may require additional sitting time. Even though it might seem odd to use frozen peas during fresh pea season, they are infinitely easier to deal with than fresh peas in the pod — particularly when making a quick dish such as this soup whizzed up in a blender.

Chilled Cucumber Soup

Straight from Bloomfield Hills, Michigan. This is one of mom's specialties for a summer lunch or dinner.

White Gazpacho

When we think of gazpacho most of us think of a cold chunky tomato-based soup. But this world-renowned export from the Andalucian region of Spain is actually one of many different types of soup — cold, hot, thin, red, green and white — which share the name gazpacho. White gazpacho remains closer than most modern varieties to the soup's origins as a simple combination of bread, nuts, salt, olive oil, and vinegar. Cucumbers, grapes and a pinch of cayenne elevate what was once a poor man's meal to a refined soup.

Chilled Avocado Soup

Chili powder and chopped jalapeƱo add a touch of heat to this smooth appetizer. Try sprinkling it with chopped red onion for some crunch and color.
