Blueberry Jam

Blueberries bring to mind fingers stained purple-blue, fruity pies and cobblers, and warm, fresh-from-the-oven muffins. When buying blueberries, look for plump, firm, fresh berries that are a light, powdery, blue-gray. If refrigerated, fresh blueberries will keep for up to three weeks. When blueberries are in season, freeze them in a single layer on a rimmed baking sheet. Once they are frozen solid, transfer to a freezer-safe container. This is a basic formula for making jam. I’ve added a small amount of candied ginger at the end. The underlying ginger flavor is subtle, but it really complements the blueberry.

Raspberry Jam

There’s an incredible cookware store in Paris called Dehillerin. When I lived in France as a poor student, I would scrimp and save so I could buy one copper pot a year. Even though times eventually became richer, I still stick to my rule of one pot a year. One summer at La Varenne, after many marathon sessions making preserves, I decided my one purchase would be a copper confiture pot. This special French pot is designed specifically for making jams and jellies. It is large and wide at the rim, providing a large surface area, which allows a mixture to evaporate and thicken quickly during cooking. Trouble was, I was purchasing this mammoth pot on my way home to the U.S. after many months in France; I had no room for it in my luggage. I’m not certain whether they would now consider it a possible weapon, but that summer I flew home with my shiny new confiture pot saddled snugly in my lap.

Shredded Cabbage & Radish Slaw

Mexican taco stands typically offer crunchy pickled vegetables to accompany their tacos. Shredded cabbage and sliced radishes are often found in small containers marinating in vinegar, to which guests can help themselves. The contrasting colors and textures, along with the vivid flavors of these toppings, make for a great salad and accompaniment to any meal.

Pickled Green Beans

These crisp, spicy pickles are a summertime favorite. Feel free to experiment with other vegetables, such as okra or asparagus.

That German Family Sauerkraut

Some simply don’t have the patience to wait the weeks necessary for sauerkraut to ferment, but we prefer this old-school way of preparing it. The wait was actually a big part of the fun when Crystal was a kid (apparently there wasn’t much to do in the North Georgia mountains).

Grilled Sea Scallops with a Watermelon Three-Way & Dandelion Greens

I don’t think there’s anything terribly exciting about grilled scallops—but I do think you can put them together with interesting ingredients and make them exciting. That’s why I pair scallops with—wait for it—watermelon! I know, who would think of putting scallops with watermelon, let alone three kinds (watermelon, watermelon rind pickles, and watermelon radishes)? It may seem wacky, but the sweetness of the watermelon offset by the bitterness of the dandelion and the sharp red onion makes this a spectacular combo. And, if you’re thinking ahead (like we always try to do!), make the pickles a day (or a week) in advance and keep them in the fridge. These pickles make anything taste tangy and delicious; I keep a jar on hand for whenever a salad or sammie needs an extra little pickle-y punch!

Escarole Salad with Walnuts, Pecorino & Pickled Onions

Escarole is one of those greens I LOOOOOVE to use in a salad. It has a firm texture and an exciting flavor; to me it’s a sleeper hit. Whether you cook it or dress it with a nice bright vinaigrette, escarole stands up to whatever you dish out—it’s a green with a strong personality. Add a big ol’ acid punch with these onions, and this is what I call a party in your mouth.

Ricotta-Stuffed Zucchini Blossoms with Panzanella

My mom is a florist so I love flowers—especially big orange ones like zucchini blossoms! I make zucchini blossoms stuffed full of creamy ricotta cheese and then fry them until they’re golden and crispy. In my opinion, zucchini blossoms are nature’s perfect little packages. What’s better than a crispy, crunchy, cheesy flower? A crispy, crunchy, cheesy flower on a bread salad—a gorgeous mix of perfectly ripe tomatoes, basil, cucumber, red onion, and bread, which softens when it absorbs all the veggies’ wonderful juices.

Pickled Crawfish Tails

The Jasper County village of Bay Springs, twenty miles from Laurel, Mississippi, was named in 1901 for an artesian spring flowing from the trunk of a bay laurel; it flows still to this day. I always think of that town when I make this dish. Introducing freshwater crawfish to leaves from a bay laurel, traditional pickling spices, and tarragon vinegar prepares them to sit on top of salads and toasts.

Pickled Eggs and Sausages

In most bait shops throughout the South and beyond, big gallon jars of pink-tinted pickled eggs sit on counters next to smoked summer sausages. Here these two favorite fisherman’s snacks are brined up together and make a perfect take-along lunch for a day out on the lake for the angler gourmand.

Quick Pickled Vegetables

Pickled vegetables are great to have in the fridge as a go-with-everything condiment; try them on sandwiches or burgers, in place of olives at a cocktail party, or alongside Falafel with Tahini Sauce (page 29). A quick brine made of rice vinegar, sugar, and water gives your favorite crisp vegetables a sweet-and-sour flavor. They’ll keep for up to three months in an airtight container in the refrigerator, and the recipe can easily be doubled if you want to prepare a bigger batch. The vegetables in the recipe below are my favorites, but feel free to mix it up by adding others such as raw baby corn, zucchini, or beets. One batch of brine will be enough for any one of the suggested vegetables, below.

Kimchi

A staple on the Korean table, kimchi is a pickled cabbage (and sometimes radish) side dish that is pungent and spicy. Traditionally, it has lots of spices and takes months to make, carefully buried in the ground to ferment. Forget all about that . . . this is a kinder, gentler version. The first thing you need to do is buy a bottle of Momoya Kimchi Base, a sweet and slightly spicy red sauce that has everything in it already. Look for it at your local Asian grocer or online. Once you have it in the fridge, you’re set for a while—a little goes a long way. This recipe couldn’t be easier to make but the kimchi needs at least a couple of hours to do its work, so plan ahead. I use the kimchi in practically everything from a topping on burgers to a filling for quesadillas (page 23). Spoon the kimchi into butter lettuce leaves and sprinkle with chopped peanuts for an incredibly tasty and healthy snack.

Kingfish Escabeche with Avocado

Escabeche is a classic Spanish preparation in which you sear fish or meat, then marinate it in a vinegar sauce until it’s sort of pickled. Unlike ceviche, which is raw fish “cooked” by citrus juice, escabeche is cooked first. The bracing and acidic vinegar cuts through oily fish such as kingfish (also called king mackerel), herring, or bonito just perfectly. This super simple dish makes a light, flavorful starter that wakes up the taste buds and hits the spot on a hot day.

Sauerkraut

I love making sauerkraut and wait to do it on a day when I am alone in the kitchen and it’s hopefully raining.

Pickled Chile Peppers

Both the vinegar and peppers (together or separately) can serve as a condiment for soups like the Red Lentil (page 191), for braised greens and stewed meat, or as a bright winter substitute for dried chiles.

Salt-Cured Chiles

These were introduced to the Lantern kitchen by Fuchsia Dunlop’s exhilarating book Land of Plenty: A Treasury of Authentic Sichuan Cooking. The surprisingly simple method lets you carry the heat and spice of late summer long into the winter months, such as in Roast Moulard Duck with Kumquats (page 214). Pureed along with cider vinegar, garlic, and a little sugar, salt-cured chiles become a vibrant hot sauce for raw oysters (page 188) or rice and beans.

Pickled Pumpkin

Use small organic pumpkins or squashes. Before peeling, taste their skins. If they are very tender, they can be left on. Pickled pumpkin is good served with crispy roast pork seasoned with five-spice or on its own as part of a pickle plate.
