Narsai’s Assyrian Lamb with Pomegranate Marinade

Narsai David’s lamb marinated in pomegranate juice is famous in the San Francisco Bay Area from his days as a restaurant proprietor and popular caterer. Dennis Cakebread remembers that the first time he ever entertained at home, he prepared Narsai’s lamb. Brian has adapted the recipe slightly, reducing the marinade to create a basting glaze that accentuates the sweet-sour flavor of pomegranate. The dish is elegant and foolproof, so even a novice cook can look like a pro. Allow at least six hours for the lamb to marinate.

Tarragon Chicken with Drop Biscuits

Chef Danielle Custer, who attended the 1997 Workshop, devised this modified potpie to use leftover Thanksgiving turkey. She wanted to make a version of the freezer-case classic but without the traditional bottom crust or the peas. Brian has added a California touch: asparagus from the winery garden, transforming the modest all-American potpie into a dish suitable for guests. Tender drop biscuits scented with chives take the place of a pastry crust.

Roast Halibut with Chorizo and Spicy Tomato Broth

Seasoned with chorizo, dried oregano, and cilantro, this deconstructed fish stew tastes like the specialty of some upscale restaurant in Mexico City. But it came to Cakebread Cellars from one of Denver’s foremost chefs, Kevin Taylor, a 1997 Workshop participant. For a dinner party, you can make the tomato broth a couple of hours ahead, stopping after you add the cooked chorizo and potatoes. Then all you need to do at dinner time is steam the fish on this flavorful base. You could add some clams or shrimp to the pot as well.

Slow-Roasted King Salmon with Garden Herbs

Although we grill a lot of salmon at Cakebread Cellars, we have also come to love the creamy texture of salmon roasted slowly in a low oven. This gentle cooking method seems to accentuate salmon’s richness and to yield a notably buttery result. Fish on the grill can overcook quickly, but the oven technique is much more forgiving. Accompany with Braised Radishes and Sugar Snap Peas (page 154).

Narsai’s Wheat Berry and Flax Bread

Narsai David, a San Francisco Bay Area radio personality and former restaurateur, joined us at the Workshop for many years as a sort of camp counselor. He would lead the chefs in their brainstorming sessions, and while the chefs worked feverishly on their courses, he would co-opt one quiet corner of the kitchen to make bread. Narsai surprised us every year with imaginative loaves that almost always incorporated whole grains, like the brown rice from California’s Lundberg Family Farms, or this three-seeded bread that he devised after sampling a similar bread in Australia.

Pizza with Cremini Mushrooms, New Potatoes, and Crescenza Cheese

Brian spreads a roasted-garlic paste on the dough under the mushrooms and potatoes, which gives this pizza an irresistible fragrance. If you have access to wild mushrooms, by all means use them. Bellwether Farms Crescenza cheese is a soft, supple, young cow’s milk cheese that melts well; mozzarella is stretchier, but a good substitute.

Pizza with Asparagus, Spring Onions, Pancetta, and Ricotta

In late spring, when California asparagus are still available and the Cakebread garden is yielding the year’s first onions, Brian makes this delicate pizza bianca (a “white pizza,” or pizza without tomato sauce). The fresh-dug onions haven’t been cured yet, so they don’t have papery skins, and their flavor is mild. Many supermarkets sell “spring onions” that look like thick scallions with a bulbous root end. They would work in this recipe, as would leeks or even cured yellow onions, but uncured onions have the most delicate taste. Choose a fresh ricotta without pectin or other stabilizers. The Bellwether Farms ricotta from neighboring Sonoma County is our favorite.

Quinoa, Golden Beet, and Orange Salad

Brian does most of the cooking at home for his wife, Kristina, and their two small children, but this salad is one of Kristina’s specialties. She adapts it to the season, but quinoa is always the starting point. Nutty and quick cooking, quinoa is high in protein and will hold up for about an hour after it’s dressed. Serve this refreshing winter salad with pork, chicken, or fish, or with feta for a meatless meal.

Autumn Squash Soup with Puff Pastry

By adding a puff pastry top, Chef Albert Bouchard transforms an easy autumn vegetable soup into a first course suitable for company. The puff pastry seals in all the aromas until diners breach the flaky caps with their spoons. Note that you will need individual ovenproof soup crocks, similar to the type used for French onion soup. The diameter on top should be no more than 5 inches to have the proper ratio of soup to pastry. Chef Bouchard attended the 2006 Workshop.

Roasted Mushroom and Bacon Salad with Baby Greens and Sherry Vinaigrette

Many Workshop chefs are unfamiliar with the clamshell mushrooms, maitake, and other exotic fungi that Gourmet Mushrooms cultivates (see page 84), so this company’s table is always a magnet at our opening-day farmers’ market. Chef George Brown, a 2006 participant, took advantage of the bounty to create a warm grilled mushroom and bacon salad. Although many people would be inclined to pair a red wine with a mushroom dish, we chose a mature Cakebread Cellars Chardonnay Reserve, which echoed all the earthy and smoky notes. In this adaptation of George’s recipe, Brian has moved the preparation indoors for ease—first oven-roasting the mushrooms, then tossing them with browned cipolline onions, thick bacon, and tender greens. Serve at the first sign of autumn weather, followed with a pork roast or seared duck breasts.

Heirloom Tomato Salad with Roasted-Garlic Vinaigrette and Chèvre-Stuffed Piquillo Peppers

The Workshop coincides with sweet pepper season, and many chefs are seduced by the varieties they find in our garden. Chef Donald Barickman, a 2000 Workshop participant, succumbed to the small, sweet ‘Lipstick’ peppers—so named for their crimson color—which he roasted and stuffed with creamy goat cheese and served with arugula and roasted-garlic vinaigrette. Bottled Spanish piquillo peppers make a good substitute. Brian adds heirloom tomatoes to make a more substantial composed salad for the end of summer. Serve it before or alongside grilled lamb, sausage, or burgers.

Provençal Garlic and Saffron Soup

Hubert Keller, chef-owner of San Francisco’s Fleur de Lys, patterned this recipe after the traditional Provençal soupe doux (sweet garlic soup), a specialty of the peasant kitchen. But as you might expect from a chef for one of the city’s most elegant restaurants, Chef Keller has refined the procedure, blanching the garlic to temper some of its bite and adding saffron for a richer color. A poached egg set on a crouton in the center of the soup really dresses up the dish. Chef Keller participated in the 1991 Workshop.

Cucumber Cups with Roasted Beets and Yogurt Dressing

The beets and cucumbers in Dolores’s summer garden and the tangy goat’s-milk yogurt from Skyhill Farms, a Napa Valley producer, inspired chef William Withrow at the 2005 Workshop. He folded diced roasted beets into yogurt, then spooned the mixture into edible “cups” made from cucumber chunks. When all of the ingredients are well chilled, this healthful appetizer is incomparably refreshing—just what you want on a warm summer night.

Kabocha Squash Panna Cotta

This modern, savory interpretation of panna cotta comes from Chef Debbie Gold, who participated in the 2000 Workshop. It has the silky, quivery texture of a traditional dessert panna cotta, with an appetizing butterscotch color. For an autumn first course, serve the custard with crisp toasts and a tart salad for contrast. Note that the panna cotta must be chilled for at least four hours before serving.

Olive Oil–Fried Egg with Roasted Asparagus and Parmesan

The affinity between asparagus and eggs is apparent to anyone who has ever enjoyed an asparagus omelet. But here’s another variation on that theme. Brian roasts the asparagus to concentrate their flavor, then tops them with fried farm eggs basted with sizzling olive oil. The edges of the egg white become lacy and crisp while the yolk remains runny. A sprinkling of Parmesan helps make the dish more wine compatible. Serve as a first course for a spring dinner party, or in larger portions for a weeknight supper. It’s best to fry only one egg at a time, but each one takes less than 30 seconds.

Alsatian Tart with Leeks, Fromage Blanc, and Bacon

Canadian chef Rob Feenie made this savory tart during the 2002 Workshop. Unlike quiche with its custard filling, the classic tarte flambée topping includes no egg—just fromage blanc thinned with crème fraîche, sweet sautéed onions, and smoky bacon. The name (“flaming tart”) derives from earlier times, when cooks would bake it near the embers of a wood-fired oven.

Coconut Macaroons

As they bake, these quick-to-make cookies get crunchy on the outside yet remain moist and chewy inside. And because they don’t contain flour, they are a nice gluten-free option.

Hazelnut Espresso Cookies

Instant espresso powder gives these drop cookies grown-up appeal. If you’d rather not remove the hazelnut skins yourself, as described below, look for blanched nuts at specialty shops, then toast them (see page 365).

Lemon-Ricotta Tart

This cheesecake-like tart has a crust made from ground vanilla wafers rather than the standard graham crackers. The top of the tart might brown irregularly; conceal any spots by dusting the surface lightly with confectioners’ sugar (use a fine-mesh sieve).
