Grilled Shrimp on Arugula

This marinade is my favorite for shrimp, chicken, and flank steak or any other red meat. As with any marinade, the longer you let the shrimp or meat marinate, the better, but on many occasions I’ve had only enough time to throw it together and put it straight on the grill, and the results are still great.

Thyme-Smoked Four-Inch Porterhouse Steak

So you feel like steak? This one is a monster! For all of the card-carrying carnivores out there, this dish will turn you on. Porterhouse is a great cut because it’s like two for one—on one side of the steak you have the tender filet and on the other, the firm New York strip. Grilling with wood chips is a common way to infuse flavor into meat, but for extra oomph, I turn to herb-infused smoke instead. Tossing damp woody herbs like thyme (rosemary would work here as well) directly onto the fire lends a distinctive earthy essence. The intoxicating smell makes your belly grumble and always has a “wow factor” with guests. Serve with Roasted Garlic (page 238) and/or Porcini Worcestershire Sauce (page 242).

Grilled Leg of Lamb with Salsa Verde

Bone-in leg of lamb has marvelous flavor and is a traditional roast for festive family gatherings. There is a great deal of versatility in this cut, but my favorite way to prepare it is on a grill. Slow cooking on a grill keeps the lamb really tender and moist while adding an awesome smoky taste. The yogurt and lemon marinade helps carry the deep flavors of the lamb and also gives the meat a nice crust. The lamb needs to marinate for several hours, so plan accordingly. I love this with Greek Farro Salad (page 79), a bright, refreshing complement to the charred lamb.

Mustard and Molasses St.Louis Ribs with Celery Root Slaw

When it comes to pork ribs, for my money I prefer St. Louis ribs to baby back. They’re long and thin with a good amount of meat, not to mention less expensive. Grilling the ribs to crisp them up after they have slow-roasted for a couple of hours may require a little extra effort, but believe me, you’ll reap the rewards with insanely tasty ribs that will have everyone licking their fingers. A creamy cool slaw and sweet-rich barbecue sauce round out this comfort-food meal.

Grilled Wild Salmon Steak with Fennel Hash and Sweet Onion Sauce

Salmon steaks are shaped sort of like a horseshoe and have the bone left in the center. They’re really thick and meaty and don’t stick like fillets, which means they’re perfect for the grill. Wild salmon is preferable to that raised in fish farms, as it tends to be healthier for you and taste better. Be sure to remove all the little pin bones with a pair of tweezers or have your fish guy do it. With the bounty of produce on the planet, I gotta say onions are probably my favorite vegetable. They can be transformed in so many different ways. This onion sauce is so velvety you’d swear there is butter in it. The trick is to cook the onions low and slow so they don’t brown or caramelize. This fennel hash is also killer with steak or eggs in the morning.

Grilled Tuna Steak with Spring Onions and Provençal Vinaigrette

This might be the easiest recipe in the book and one you’ll pull out over and over again for its ease and deliciousness. All you need are a few good ingredients and a hot grill. When it comes to buying fresh tuna, the species, or even the bright red color, is not necessarily an indicator of quality. In fact, fatty tuna, which is more desirable, is often paler but of no lesser quality. Fresh tuna is shiny, bright, and redolent of the ocean; it should talk to you. The Provençal vinaigrette is a full-flavored condiment you’ll want to have on hand—always! Use it on everything from grilled fish to crostini and sandwiches. If you want to serve the tuna with another side dish, Sautéed Broccoli Rabe (page 192) is a good choice.

Grilled Skirt Steak with Shaved Fennel, Orange, and Green Olive Tapenade

I love thinking of alternatives to your classic steak and potatoes. This main course salad is hearty without being heavy and contains all of the elements of a balanced meal—meat, starch, and vegetables. Grilled beef, crisp fennel, chewy fregola (see Note), and bright oranges are finished with a drizzle of briny green olive tapenade in this Mediterranean-inspired skirt steak salad. Varying texture and temperature play a powerful role in the makeup of this dish, adding a whole other dimension. I’m a believer that opposites do attract; hot and cold—the grilled meaty steak and the cool crunchy salad—play off each other. Tapenade is a rich olive spread popular in the Mediterranean. The salty earthiness of green olive tapenade is the perfect complement for pasta, spread for crostini, or topping for baked sweet potatoes. Visit your market’s olive bar and purchase high-quality green olives; leave the little pimento-stuffed ones for martinis.

Grilled Bacon-Wrapped Peaches with Aged Balsamic and Piave Vecchio Cheese

In my book, bacon-wrapped anything is good. Here crisp bacon and juicy peaches strike a perfect balance of salty and sweet. It’s hard to beat a fresh-picked slurpy peach, but these little bites are a sexy way to dress up the luscious summer fruit, making for a sophisticated, beautiful small plate.

Mexican Corn on the Cob

Elote—roasted corn on the cob spiked with salty cheese, creamy mayo, lime, and chile powder—is traditional Mexican street food, slightly exotic but homey enough to anyone who has scarfed roast corn at a state fair. It’s also solid party food: guests can garnish their own, and because the pulled-down husk is used as a handle, it can easily be eaten standing up. Cotija cheese, widely available in supermarkets and Mexican tiendas, is a crumbly aged cow’s-milk cheese, weirdly similar to both feta and Parmesan, and either can be substituted here.

Squab with Grilled Red Onion and Sweet Cherries

While the squab is resting, fry up the livers in a little butter in a small pan and season with salt. Mash them with a fork and flavor with a little gold rum to taste. Spread on grilled bread as a snack while you wait, or serve it alongside the squab.

Grilled Spanish Mackerel with Green Sauce

The fact that our great-grandchildren may never eat a real seafood dinner gives those of us who still eat fish a responsibility not to put blue cheese on it. I like to serve this with pickled beets (page 142) and the potato salad that follows. This treatment would work for almost any flavorful, rich fish.

Charcoal-Grilled Asparagus

As traditionally seasonal delicacies like asparagus, strawberries, and peaches have become everyday food, the idea that they are a treat has somehow stuck—but with none of the flavor or meaning. Year-round asparagus has become a stand-in for a kind of perfunctory idea of good eating—the Whole Foods near us recently installed a permanent granite waterfall shrine to asparagus in their entrance—yet is a shadow of its tasty springtime self. When you put just-picked asparagus on a hot grill, they are so juicy they actually jump as they start to cook.

Campfire Bacon and Eggs in a Bag

I ate this magical meal at Girl Scout camp and then thought about it for the next thirty-odd years until we went camping in the mountains near Joe’s. It’s a full breakfast in a paper bag, easy to make if you already have a campfire burning (or hot embers in a charcoal grill or fireplace), portable, and delicious. As the bacon in the bottom of the paper bag renders and becomes crispy-chewy, the fat protects the paper from burning and gently steams the egg. This cannot be prepared in advance: after the eggs are cracked, the bags should be dangling over the hot coals within a minute. If your mess hall prefers scrambled eggs, they work well, too.

Grilled Broccoli with Parsley, Garlic, and Anchovies

Delicate fresh broccoli and cauliflower from a garden or small farm don’t resemble the useful California sorts that are a fixture in our produce drawer the rest of the year, and so we enjoy them while we can. But because broccoli and cauliflower do travel and keep exceptionally well, I make these recipes year-round, just allowing for slightly longer cooking times when dealing with more mature vegetables.
