Valley-Style Arroz con Pollo

“The Valley” is what we, in Texas, call the Rio Grande Valley. It’s located on the southernmost tip of the state, bordering Mexico, and it’s where Sandy grew up. The Valley is a melting pot of American and Mexican cultures, and is known for its festivals, architecture, and cuisine. So when Sandy talks about comfort food, she thinks of dishes that are often heavily influenced by traditional Mexican flavors. Arroz con Pollo (rice with chicken) is one of her favorites. Many Spanish-speaking countries claim this dish, so there are many different ways to prepare it. This particular recipe is served up Valley style and is uniquely Texan.

This dish has been a favorite at T. W. Graham & Co. for more than 30 years, due in no small part to the quality and freshness of the local crabmeat used.

Qatayef

At sunset throughout Palestine during the Muslim holy month of Ramadan you will find vendors with hot plates lining the streets preparing these flat cakes. They are made in many different ways; this version is filled with cheese and nuts and then fried. Instead of the syrup, you can also top the cakes with cinnamon sugar.

Jalebi

Jalebis are small, bright yellow, web-shaped cakes similar to funnel cakes. They are popular celebration and street cakes in Bangladesh, Nepal, Pakistan, and India. Soaking them in saffron syrup and then drying them gives the cakes a crispy outer shell. They are made with maida flour (a finely milled wheat flour) and Bengal gram flour (a flour milled from chickpeas), both of which can be found at Indian groceries. If you can't find them, use cake or pastry flour. If you can find fresh yeast, use it instead of the dry yeast; that is the traditional method and it adds to the flavor.

Crab & Sweet Corn Cakes

I just love cooking these little snacks as a starter. I like to think of them as the grown-up version of potato wedges with sweet chile and sour cream. Whoever came up with that combination deserves a medal. These cakes work well with shrimp, crayfish and even roast chicken but I especially like them with crabmeat. Enjoy!

Waffles

From cornbread slathered with jam to peanut butter and jelly, there are few things closer to my heart than the combination of salty and sweet. After I’d worked out the pancake recipe, it occurred to me—by way of an Eggo-heavy childhood—that a waffle recipe would be the perfect opportunity to explore salty-sweet in depth. Personally I find that a dollop of coconut oil and a sprinkle of salt on each waffle before the Agave Maple Syrup is perfect. Even more perfect? Making them chocolate-chipped! The next time you’re roaming the grocery store aisles and you happen—accidentally or otherwise—onto that wonderful section stuffed with every known variety of organic and sweetened and unsweetened and flavored chocolate, make sure to attack it full force. Then head immediately for the vegan whipped cream and pick it up. Find some vegan powdered sugar and place it in your basket. Load these groceries into your trunk or into your little go-cart to push home and get on your phone and offer up your waffle-making services to anyone willing to clean up the mess you’re about to make.

Little Quinoa Patties

goat cheese, garlic, herbs Anytime I have leftover cooked quinoa, I make these little patties. They're good hot or cold and are well suited to fighting afternoon hunger pangs. It's a bit of a stretch, but they could be described as a (very) distant cousin of arancini, Italy's beloved deep-fried risotto balls. In contrast, these are pan-fried in a touch of oil, and smushed flat in the pan to get as much surface browning and crust as possible. I'm including my basic version, but often times I'll add a handful of very finely chopped this-or-that: broccoli, asparagus, or cauliflower, depending on the season. They're great on their own, slathered with ripe avocado or drizzled with hot sauce.

Carrot Potato Latkes

Latkes combine an ingredient and a technique that have gone together very well for centuries: potatoes and frying. This variation on a traditional crisp potato pancake is enhanced with the addition of carrots, which add a hit of earthy sweetness.
