Deep Fry
Italian Fried Olives
Olives stuffed with cheese and fried are a classic bar snack commonly found in Naples and in Sicily. I like to mix the Gorgonzola with a bit of ricotta to tame its strong flavor. Unlike most fried foods, these can be made ahead of time and they will still be delicious a good while later. Pile them on a platter for a party and watch them disappear.
Nadroo Korma
The first time I ate these—I was in Delhi—I was convinced they were pork rind; that’s how crisp and delicious they are. Frying them is foolproof, and they rank with the great finger foods of the world. Lotus roots are sold at many Asian markets and top-notch supermarkets as well.
Crunchy Curried Shrimp or Fish
I have been making this dish for more than thirty years—it’s one of the first South Asian recipes I learned—and I’ve never stopped loving it. After having a similar preparation in Delhi, I loved it even more. Basically, you coat shrimp with a spicy mix, then with a simple batter. Originally it was deep-fried, but shallow-frying, which uses less oil and makes less of a mess, works just as well. Don’t limit yourself to shrimp here; any seafood— scallops, oysters, clams, or fish fillet—will work wonderfully. Cooking time will remain about the same in almost every case.
Churros
In the world of fresh pastry, few things are quicker than churros, the crisp, crullerlike strips of fried dough that are still popular in Spain, where they originated, but perhaps even more so in Mexico. In fact, there are few breakfast or last-minute late-night snacks that can match a batch of churros. Churros served at restaurants can be awful because they’re fried in stale oil and made in advance. But make them fresh once, for breakfast or dessert (ideally, you’ll serve them with Chocolate Español, page 665, or Mexican Hot Chocolate, page 664) and you will have a reliable addition to your repertoire.
Loukoumades
Loukoumades are served across Greece and Cyprus, with a wide range of garnishes. I’ve suggested honey and cinnamon because they’re a simple, delicious, and authentic combination. But you could add a sprinkling of chopped pistachios or a dusting of confectioners’ sugar or even substitute the syrup used in making Baklava (page 628) for the honey.
Fried Satay
This is similar to Grilled Satay, which follows, only in that it is meat on a stick. But this deep-fried version is crunchier, and the skewer itself is best when made from lemongrass or sugarcane, either of which imparts a subtle aroma to the meat (and gives you something to gnaw on, if your tastes go in that direction). Since the meat is pressed around the skewer like a meatball—the result is kind of a meat lollipop—it needs to be finely minced to hold together well; a food processor does the job perfectly.
Amritsari
Crisp-fried ladyfish are a specialty in India, and even though ladyfish themselves are part of the reason they’re so great and we don’t see them here, we can come pretty close to duplicating the dish; both batter and marinade are spicy, distinctive, and exciting. Plan on serving immediately.
Fritto Misto
Like Tempura (page 91), the Fritto Misto batter and technique can be used with almost any morsel of food. An old-fashioned Fritto Misto might have bits of veal or other meat, frog’s legs, cock’s combs, artichoke hearts, chanterelles or other mushrooms, zucchini or other vegetables, pieces of cheese, and, of course, fish. These days, it seems most people—including me—like a fish-based Fritto Misto, with perhaps a few pieces of vegetable thrown in. I have some suggestions here, but please use whatever you like. Because you’ll have to fry in batches, and because it’s good only when very hot, it’s best to serve Fritto Misto as an appetizer and usually only to those guests who are willing to stand around in the kitchen. I don’t think Fritto Misto needs more than fresh lemon as a “sauce,” but you can use aïoli or even a light tomato sauce if you like.
Rebozados
The Spanish version of Tempura (page 91), this produces a much thicker crust. It is most often made with shrimp, but you can use any seafood or vegetable or even bits of meat. It’s a simple but super flavorful frying technique. In much of Spain, olive oil is used for deep-frying, and it’s good; furthermore, it has become so inexpensive that it’s no longer impractical. But you can use a neutral oil, like corn or vegetable oil, if you prefer.
Tempura
Tempura is not the only batter-fried appetizer in the world; in fact, many cuisines have a similar dish, and some of these recipes follow. But tempura is very light, easy to make, and pretty much foolproof; chances are you’ll get it right even on your first try. Shrimp is the most common seafood, and probably the best, for use in tempura, but there’s no reason you couldn’t use other shellfish or even finfish. As for vegetables, it’s a matter of whatever is on hand. Harder vegetables, like winter squash and carrots, should be cut into thin slices so they become tender at about the same time they are browned. More tender vegetables—zucchini, eggplant, mushrooms, and the like—can be made larger or even, in the case of mushrooms or green beans, kept whole. Tempura, like most fried foods, must be served immediately. It will hold in a low oven for a few minutes, but as we all know it’s at its best the second it’s done. As long as you’re comfortable with your guests, serve each piece as you make it, in your kitchen. For frying, use a light, clean oil; grapeseed is probably best, but the more common (and cheaper) corn and safflower are good too. A frying or instant-read thermometer is a good idea, and temperatures of 330–350°F will work well for both vegetables and fish. If you don’t have a thermometer, put a drop of batter into the oil when you think it’s ready; it should neither sink to the bottom (too cold) nor immediately dance on the surface (too hot), but sink slightly beneath the surface and then rise to the top and skitter a bit.
Pakoras
Similar to Tempura (recipe follows), these are usually made only with vegetables—but a very wide assortment—and the batter is best when prepared with chickpea flour (also called besan or gram flour and available at Indian and many Asian markets and most health food stores). Traditionally, the batter also often contains anardana, a powder made from ground pomegranate seeds—if you can find some (try the same stores that have besan), add a teaspoon to the batter, along with the garam masala. Pakora batter can also be fried on its own, as a fritter; mix a medium onion, chopped, into it, and drop it by the tablespoon into the hot oil.
Bacalaitos
These traditional bite-sized treats are served as a starter or a snack throughout the Caribbean (and, for that matter, in parts of Europe). They must be served hot: I recommend that you serve them to your guests while they’re standing around the stove and let them eat them with their fingers (or on toothpicks). If you want to serve them at the table, consider Aïoli (page 603) as a dipping sauce. Or you can follow Moorish traditions and serve them with honey or molasses.
Fresh Corn Fritters
If you’re accustomed to sweet corn fritters—even served with maple syrup—these are going to come as either a joyous revelation or a rude awakening. They’re just as crunchy, but spicy and mildly hot.
Buñuelos
These sweet fritters are a cross between doughnuts and potato pancakes. That may sound strange, but, like doughnuts or churros, they make a great break fast or snack food. Buñuelos are most often made from a combination of three roots. One is yucca (also known as cassava and, confusingly enough, tapioca and manioc); it has a tough brown skin, bright white flesh, and a tough core that should be cut out before cooking. The second is malanga (also called taro), which resembles a hairy yam but has a lovely, creamy interior, sometimes streaked with purple. Finally, there’s boniato, also known as batata or Cuban sweet potato. It’s in the same family as sweet potatoes and yams (and either can be substituted here). The reddish skin encases white flesh, which is dry and has a subtle sweetness. All three of these can be found at major good supermarkets and Latin groceries, right next to one another.
Black-Eyed Pea Fritters
These fritters, which you’ll also find in Texas and Florida, have their origins in the Caribbean—and, if you want to trace them further back, India; see the variation.
Taquitos
This is an amazing finger food, best set up using a simple assembly line of two or even three people. (You can also roll all the taquitos ahead of time and fry them immediately before serving; if you do this, and have cooperative friends, it’s almost as easy to make forty or even eighty taquitos as it is to make twenty.) Best served immediately from the skillet, they can also be made ahead and reheated in the oven. Serve with sour cream, any salsa (pages 610–612), Guacamole (page 22), or a combination.
Chicken or Shrimp Egg Rolls
This finger food is popular in the south of China, Southeast Asia, and, of course, many American Chinese restaurants. It’s perfect for parties and super easy to make, especially with store-bought egg roll wrappers. They can be filled an hour or two ahead of time and fried immediately before serving or—though it isn’t ideal—fried an hour or two ahead of time and crisped in a warm oven later.
Meat Samosas
One of the world’s great dumplings, the samosa has migrated to Southeast Asia and elsewhere. As with most dumplings, the filling is easily varied. And, as with most dumplings, you can use store-bought dumpling wrappers or the simple homemade ones on page 62. But the super rich wrappers here are really the best. Traditionally, you would deep-fry samosas, but more and more often they are baked. They’re terrific either way.
Fried Wontons
Though not traditional, fried wontons are extremely popular. They are an easy finger food for parties and a snack that your kids will love. If you’re making the wrappers, try to get 60 out of the dough, or you may have a little filling left over.
Supplì
A Roman treat and a fine use for leftover rice (especially risotto). Formally called supplì al telefono because the stringy mozzarella center stretches when you bite through the center and is reminiscent of telephone wires, this is a snack, or a very informal starter. If you use packaged bread crumbs, make sure they’re unseasoned.
