Swanky Figs

When our late summer/fall cheater barbecue party guests deserve something fancier than sliced watermelon, we serve Swanky Figs. Like a good barbecue sauce, this dessert demonstrates the appeal of yin/yang balance—salty sharp blue cheese, creamy rich mascarpone, sweet honey, and tannic toasty walnuts. Go ahead and broil the figs early in the day. After dinner, discreetly step into the kitchen and reappear minutes later with a drop-dead platter of edible jewels.

Broiled Peaches

Charred with butter and sugar, Broiled Peaches are a summertime romantic dinner-for-two essential in R. B.’s little black cookbook. Guys who lack strong dessert skills can relax. Broil the peaches early, set them aside at room temp, and assemble the dessert when ready to serve. R. B. likes his peaches with a scoop of vanilla ice cream, a splash of Amaretto, Smoky Caramel Sauce (page 198), and toasted sliced almonds on top. Substitute fruits abound for this dish—you can butter, sugar, and broil banana halves, fresh pineapple spears, seeded melon wedges, and pitted and halved plums. We use whatever is in season. They all taste great with any of our cheater smoked dessert sauces.

Cuban Fingers

Part of the fun of Nashville is the occasional encounter with the music community—Martina at the supermarket, Keith at the sushi bar, Kenny at the gym, Wynonna doing lunch, or Mr. Prine waiting in the school car line. Nashville is good about giving Grammy winners, hit songwriters, and all who keep the music playing plenty of space for living their regular lives. Over at Min’s, we enjoy the occasional drop-in visit by the Malo posse, the charming sons of velvet-voiced Raul Malo. We shoot the breeze about Dad’s latest album, fast cars, and food. No luck getting any Cuban secret family recipes, but the boys have kindly offered Dad’s autograph on our Mavericks and Raul Malo CDs. Listening to Raul gets us hungry for Cuban Fingers, Miami’s favorite crusty pressed sandwiches. We fill them with Ultimate Cheater Pork Loin, or sometimes leftover cheater brisket or beef round roast. Cuban bread is extra crisp on the outside and very tender on the inside, so it’s easy to flatten. Cut the sandwiches into neat fingers for parties.

Hot-Oven Cauliflower

For too long cauliflower has been confined to salad bars, vegetable medleys, and Velveeta sauces. Everything changed for us when R. B. roasted two cut-up heads in a foil packet on the grill. The transformation was amazing—instead of bland, white, and wet the florets were brown, nutty, and rich. Yes, cheese was involved. And some bacon. A nicely browned cheater oven version is just as big a hit and has become a dinner regular. R. B. prefers the cauliflower cooked really soft, not crisp-tender, but fix it the way you like. It’s good to go as is, or dressed up to suit the menu. Give our variations a try. Some are everyday good, others are fancy dinner-party style.

Micro-Broiled Winter Squash

The key to enjoying dense winter squash more often is a time-saving ten or so minutes in the microwave. By cooking them first, you avoid the anxiety and danger of hacking a sturdy squash or your finger in half. Or, look for packages of ready-to-cook precut and peeled squash in the supermarket. After cooking, the other trick is to scoop the flesh into a casserole where it’s easy to char evenly under the broiler in a couple minutes. This way no one has to negotiate an unwieldy squash boat, and everyone gets as much or as little as they want. Make the casserole ahead and you’ll be glad come dinnertime. The trio of squash sauces shows how well squash gets along with a full range of sweet to savory flavors. One sauce is traditional—buttery and sweet with pecans. The second is a sweet-savory exotic beauty blending spicy chutney, dried cranberries, and almonds. The third, a savory tomato, mysteriously brings out the sweetness of the squash without overpowering it. Serve all three sauces with any squash combo and watch everyone duke it out for a favorite.

Oven-Charred-Pineapple Salads

Charring a pineapple slice steps it up from fruit salad and baked ham ornament to a more sophisticated salad sphere. Our sweet and savory charred pineapple salads are all great matches for any style of barbecued pork and run the gamut of pineapple possibilities. Pineapple is easy to char because you’re just adding some smoke and a chic look to the fruit, not cooking it. If you prefer groovy grill marks, use a ridged grill pan to sear in some lines. It takes about 3 minutes a side. For the classic charred diamond grill pattern, rotate the pineapple slices about 45 degrees on one side during the charring process. Skin and core a fresh one yourself, or find one all trimmed in the cut produce section.

Broiled Corn and Rice Salad

Min was first encouraged to make this dish when her fridge was jammed with leftover grilled corn on the cob. We liked this salad so much that now she doesn’t wait for a summer corn surplus—she cheats with a bag of niblets from the freezer. Frozen white shoepeg corn and frozen baby peas are two of Min’s constant freezer staples for ultraquick sides.

Safety First Oyster Roast

Fresh briny oysters out of a jar satisfy our periodic oyster craving without the hassle of shucking. To cheat, swap the half shell for a casserole dish and dress the oysters with smoky shallots, butter, and lemon. A few minutes under the broiler and you’ve got a seaside party anywhere, anytime. Slurp them up with saltines. Cold beer, sparkling wine, and dry white wine are what we’re drinking.

Broiler Steaks with Chimichurri

We had never considered grilling monster kebabs of unidentifiable cuts of meat until we spotted those churrascaria ads in airline magazines. The Brazilian barbecue called churrasco (pronounced shoo-RAS-koo) prepared on oversized spits looks especially good when you’re strapped in a seat at 35,000 feet with only a tiny bag of peanuts. At home, a family-size sirloin, some rib eyes, or beef tenderloin steaks taste just as Brazilian with a side of chimichurri, the traditional spicy mix of fresh cilantro and parsley, onions, garlic, vinegar, and olive oil. We oil up and simply season the steaks with nothing more than salt and pepper before searing under a hot broiler. Instead of bothering with cutting the meat into chunks for skewers, cook the steaks whole and carve them into thick slices before serving. Everyone at the table can see the doneness of the pieces and can choose how much and what they want. Complete the meal with Cuban Black Beans (page 149), rice, and some kind of salad with hearts of palm thrown in. R. B. recommends a spoonful or two of chimichurri in scrambled eggs with cold steak for brunch.

Cheater Kitchen Burgers

This indoor burger recipe make six burgers (too many for one pan), so use the broiler or finish the pan-seared burgers all at once in the oven. Ground beef is available in plenty of designer styles and fat-to-lean ratios. Use what you like. Remember that the higher fat content varieties like chuck have a rich, juicy taste and a smoother texture than the leaner ones, which tend to be dry and grainy. Chuck will also spatter up your stovetop and broiler a bit more. Either way, good ventilation is important. Burger doneness is an individual right that the government recommends you exercise at 160°F for proper food safety. Whatever temperature you pick, remove the burgers from heat when they are about 5 degrees below that target as the temperature will continue to rise while the meat rests. R. B. himself goes into fits above 130°F. He’s still with us, knock on wood, despite rare burgers and the raw oysters he downs with abandon.
