Poached Fillets in Caraway Sauce

Caraway seeds have too long been relegated to the tops of rye bread; their bitter, nutty flavor is distinctive and easy to like.Here they dominate a simple Romanian sauce used for fish. To crush the seeds, put them in a plastic bag and press on it with the bottom of a pot—really lean into it, rock back and forth a bit, and you’ll get it. If you can lay your hands on crusty rye or pumpernickel bread, this is the place for it. Salad or any simple vegetable dish, along with rice if you don’t have or want bread, would also be good.

Red Snapper or Other Fish Fillets in Paprika Sour Cream

Sour cream sauce is standard throughout Eastern Europe, and it’s not as bland as you might think or as you might have experienced. The dish should be quite sour, for one thing, and a bit hot—if your paprika has little flavor, either buy a new supply or spike it with cayenne—and it should be finished with fresh herbs. Serve this over rice or buttered noodles or with crusty bread.

Escarole with Olive Oil, Anchovies, and Pepper

Do not skimp on the olive oil here; its flavor is integral. Really, this is escarole braised in olive oil, an extremely useful and wide-ranging technique. You can omit the anchovies if you like or add pine nuts (about 1/4 cup), raisins (1/4 cup), pitted black or green olives (about 1/2 cup), or about 1/2 cup chopped tomato. You can also use wine or stock in place of the water, for a richer taste. Other vegetables you can prepare this way: this is a classic and basic recipe that can be used for almost any green or in fact for “harder” vegetables like cauliflower or broccoli, following exactly the same procedure. Cooking time will vary.

Roast Catfish or Other Fillets with Sauerkraut and Bacon

This dish sparks a vision of an ice fisher on a frozen Eastern European lake, bringing home a fresh carp, combining it with two of that region’s winter staples—bacon and sauerkraut—and roasting it over a hot fire. What a treat that must have been and what a relief from what might have been months without any fresh meat or fish at all. It’s a great dish in a warm winter kitchen in the twenty-first century, too. Use sauerkraut that is fresh or packed in plastic (never canned), which contains no more than cabbage and salt; real sauerkraut needs no preservatives. Serve the dish with mashed or boiled potatoes.

Cod Poached in Cider

The ideal fish for this Norman preparation is Dover sole—the real thing, a fish with great flavor and unmatched texture. But this isn’t an ideal world—you’re unlikely to find Dover sole and equally unlikely to want to pay the asking price if you do. Fortunately, cod is a good substitute. In fact, as long as you don’t overcook it, it’s fantastic here. Any firm but not tough white fillet will also work: red snapper and black sea bass are excellent choices. If you can pick up mussels at the same time, by all means go for the variation; the broth and overall results will be improved markedly. In Normandy, this would inevitably be accompanied by a potato gratin like the one on page 482 and, if you were lucky, a salad.

Cod Baked in Foil

People cook food in packages all over the world—the tamale counts as one, too—but leave it to the Italians to do it simply. In Rome, you would have this with bass or turbot, but really it can be made with any fillet you like. Cooking in packages requires a small leap of faith to determine that the food is done, because once you open the packages you want to serve them. This method has always worked well for me.

Collards, Kale, or Other Dark Greens Cooked in Yogurt

Think of this as the Middle Eastern version of creamed spinach, served at room temperature. The yogurt is uncooked, which keeps it fresh and tangy. Other vegetables to prepare this way: spinach.

Flash-Cooked Kale or Collards with Lemon Juice

Kale and collards are interchangeable here; just make sure to discard any stems more than 1/8 inch thick—they will not cook in time. Other vegetables you can prepare this way: any dark greens, like turnip, mustard, dandelion; shredded cabbage of any type.

Fish Tagine

An easy fish stew with exotic flavors. You can make the same style dish using chicken thighs in place of the fish; just boost the oven temperature to 400°F and increase the cooking time by 15 minutes or so. This is great served with couscous (page 526), bread, or rice.

Run Down

This dish is usually made with pickled or salted fish, but it’s simpler (and, in my opinion, better) when made with lightly salted fresh fish. To be truly authentic, the chile should be a Scotch bonnet (habanero), which has a distinctive though fiery flavor, but any chile will do in a pinch. Serve this with Coconut Rice (page 516) or, even better, Coconut Rice and Beans (page 516).

Snow Peas with Ginger

A small and perfectly easy dish. The finishing touch of hot sesame oil is a common garnish in Hong Kong and a nice one.

Pan-Cooked Grouper or Other Fillets with “Killed” Onions

Like the preceding dish, this one is wickedly strong tasting, not fiery-hot but potent with garlic, onions (which are salted to “kill” their harshness), and lime. Not for the faint of heart, but many people (including me) love it. You can use any firm-fleshed white fish: halibut, swordfish, striped bass, red snapper, and so on. Ideally, you’d serve this with Mexican Radish Salad (page 172), along with some beautiful tomatoes. Rice and beans would also be good.

Lime-Cooked Fish with Crisp Garlic

Limes and hot weather go together; I first had this at a three-walled restaurant in a Yucatán port on the Gulf of Mexico. I loved it immediately, and I love it still. It works just as well with shrimp as it does with flatfish. As for the chiles, the amount is your call. I like just a touch of heat—a pinch of cayenne does the trick for me—but this dish is often prepared scorchingly hot. Serve with rice (Mexican Rice, page 517, is good), or tortillas.

Crisp-Skin Salmon Fillets with Chimichurri Sauce

Strictly speaking, chimichurri is Argentinean, but there is far more salmon in Chile than elsewhere in Latin America, and chimichurri has become pan-continental. Keep the skin on the salmon (make sure it’s scaled), and making it perfectly crisp is nearly effortless as long as you use a nonstick skillet. I love this with Peasant-Style Potatoes (page 477) or Potatoes with Bay Leaves (page 481).

Crisp-Fried Fillets or Shrimp in Spicy Tomato Sauce

Fish or shrimp in a powerful sauce is a common dish in India; this is a good example. If you’re comfortable in the kitchen, you can produce this dish far more quickly by beginning with the onion-tomato mixture and sautéing the fish in a separate skillet. Serve this with Coconut Rice (page 516) or Home-Fried Potatoes with Onion and Amchoor (page 477) or any Indian vegetable dish.

Mackerel Fillets Simmered in Soy Sauce

Many Japanese cooks treasure dark, oily, full-flavored fish and treat it with a simple dose of powerful seasonings and a simple cooking technique that might be called “pan-steaming.” If you think you don’t like mackerel, try it this way; it may change your mind. Serve this with short-grain white rice (page 507).

Soy-Glazed Flounder or Other Fillets

This is an ultraquick recipe, lightly sweet, and one that will work for any white fillet—even thick ones if you extend the cooking time slightly. I prefer very thin ones, though, because the sauce almost permeates them and the cooking time is so short. The soy glaze makes this a natural over white rice.

Halibut or Other Fish Steamed in Banana Leaves

This dish is dead easy to make and will wow everyone you serve it to. Dried banana leaves are sold at many Asian food markets, and though they’re not likely to be the kind of thing you use every week, they are cheap and keep forever. For steaming Sticky Rice (page 508) or a dish like this, they are enormous fun and add a wonderful woody, smoky flavor. Furthermore, they seal in so much moisture that it’s difficult to overcook the fish this way. See page 500 for information on Thai fish sauce (nam pla).

Red Snapper or Other Fillets in Red Sauce

The heat from the sauce—red because of the chiles—and the tartness of the tamarind give these otherwise mild fillets a wonderful kick. For sweet and spicy flavors, try the variation. The spice mixture can be made well ahead of time and this dish finished in just a few minutes. See page 500 for information on Thai fish sauce (nam pla). Serve with any simple rice dish.

Sea Bass or Other Fillets Wrapped in Bean Curd

Bean curd sheets, which have a wonderful chewy texture and the mild flavor of tofu, are sold at Asian groceries, fresh (refrigerated) or dried. They are not difficult to handle; in fact they’re a lot of fun and create a wonderful crisp exterior that offsets the flaky, soy-marinated fish inside. If you cannot find them, substitute the rice paper sheets traditionally used for spring rolls (see the variation).
