Coleslaw is an absolute essential in a barbecue joint. We make ours fresh twice a day so the crispness and integrity of the cabbage always contrasts with the tangy, creamy dressing. What I’m saying is, it don’t get better with age.

This dish has some serious garlic happenin’. We developed it as one of a whole bunch of recipes for a Dinosaur garlic festival. It marked the birth of the Custom-Que at the restaurant, a special menu that’s broadened our repertoire and given our customers a taste of some unique dishes influenced by the world of wood-fired cookin’.

Home-Style Pulled Bar-B-Que Pork

Pulled pork is one of the wonders of true blue barbecue. It starts with a pork butt, also called a Boston butt, which is the meat surrounding the shoulder blade of the pig. This is a tough, fatty piece that’s magically transformed with spices, smoke, and slow cookin’ into something lean and melt-in-your-mouth tender.

Jerked Pork Tenderloins

Here’s an interesting technique. We cut (counter to logic) the pork tenderloins into long steaks along the grain of the meat, forming steaks approximately 10 inches long by 2 inches wide. Whip up the jerk paste the night before or that morning, and get the tenderloins marinating early. That way you can grill and eat in minutes after getting jerked around at work all day.

It’s hard for families on the go to eat enough vegetables, so we decided to have one night every week that is only veggies. When we do, I always make this recipe. As the cabbage cooks, it sweetens a bit. I like to let it brown a little in the pan because I like the crispness and the flavor. Try it!

Barbecued Chicken

As a young man, my dad worked with the State of Georgia Extension Service, where he learned to barbecue chickens by the hundreds. Over the years, he cooked thousands of chickens that were sold on the town square, at football games, or horse shows. He and his friends would build a huge pit with cement blocks and top them with specially made racks that could hold about 50 chicken halves each. To turn the chickens, another rack was placed on top, and two men, one on each end of the racks, would flip the entire rack at once! My mom has adapted Dad’s recipe to serve a family, not the whole town.

I’m not a cooked spinach fan, but I do like spinach served fresh in a salad. (And I love any salad that has bacon as an ingredient!) I’m also not a mushroom gal, so I leave these out when I make it, but it’s good either way.

Minty Greek Salad

I am a big fan of Greek salads, but at restaurants I seem to find myself always picking the vegetables and cheese out of the lettuce. One day I thought, why make it with lettuce at all? This recipe is just veggies and feta. I love it!

Boiled Peanuts

If you’ve ever driven through a small town in Georgia, you no doubt have seen signs for boiled peanuts along the roadside. I’ve found that they’re a love-hate thing; people are rarely undecided about boiled peanuts! I include the recipe here because I absolutely love them. When I make them at home in Oklahoma, it takes me back to our family vacation trips to Florida, when we’d stop on the roadside and eat the warm peanuts in the car. Yum!

Ranch Dressing Cheese Ball

This is my sister’s go-to appetizer for church socials, Super Bowl Sundays, and Christmas munchies. Several years ago, she put too much of the ranch dressing mix into the recipe, and it was hard to serve. My dad renamed it the “cheese wad.” We think Ranch Dressing Cheese Ball sounds more appetizing, but at our house, it will forever be known as Cheese Wad!

Cayuga Blue Champignons

Cornell Barbecue Sauce

The delicious sauce has its roots at Cornell University, where legendary Professor Robert Baker developed this recipe for the Poultry Science Department. First, split young dressed chickens and marinate in the barbecue blend, then grill at a low temperature (about 350°F). Finger Lakes classicists contend that this is the only way to fix barbecue. Local volunteer fire departments support themselves with fundraisers featuring succulent “Cornell Barbecue Chicken.”

Black Pepper Crème Fraîche

We can’t stress enough the importance of cleanliness when doing a recipe of this sort. That means a good washing of the jar and other equipment and yourself.

Baked Mushrooms with New (or Old!) Garlic

Here is a simple way to enjoy big Paris mushrooms. I like chanterelles, morels, and even matsutakes, but these common white mushrooms—the kind you see in supermarkets—remind me of culinary school; they smell like la bonne cuisine française. We use banker watch–size mushrooms—as big as you can find. If you’re looking for an upscale alternative, porcini will also work. This dish is best prepared in a cast-iron frying pan, served family style at the table. Bring it out hot and bubbling.

We use this for our Scallops with Pulled Pork (page 30) recipe.

Purée De Fines Herbes

This is part of our mise en place at the restaurant. We mix it with mayonnaise (page 175), serve it straight up with potatoes or fish, or use it to punch up sauces, soups, stews, or anything raw like tartare. Do not use woodsy herbs like rosemary, thyme, or sage in this purée, and be sure to wash all of your herbs well.
