Chili Mayonnaise '21' Club
Can be prepared in 45 minutes or less.
This sauce is great with roast beef, grilled steaks, and roasted chicken. It is also delicious as a sandwich spread or as a dip for crudités or tortilla chips.
The "heat" of the mayonnaise will depend on the variety of chili you use. In a bind, chili powder can be substituted for the chili paste.
Poblano Chile Sauce
This sauce can be prepared with yellow bell peppers instead of poblano chiles. Both sauces go equally well with the chicken-and they also complement each other nicely. So follow your mood: earthy poblano or sunny, sweet yellow bell pepper-or make half a recipe of each and serve them both.

Trenette with Pesto, Potatoes and Green Beans
Basil is one of the favorite ingredients of the Italian region of Liguria, and there is no place in the world where it is more fragrant or put to such delicious use. It's the basis of the classic Genoese sauce, pesto, in which it is partnered with garlic, olive oil, pine nuts, and Parmesan and Pecorino Romano cheeses. It shows up most typically floating atop minestrone, drizzled over potato gnocchi, or - as here - tossed with trenette (the local ribbon pasta), potatoes and green beans.
Carolina Red Barbecue Sauce
This recipe can be prepared in 45 minutes or less.
Unlike sauces from Texas and Kansas City, this sauce from South Carolina's Piedmont area is thin and vinegary. Note that it is not cooked. To tone down the tartness, add more ketchup and brown sugar to taste.
Kumquat and Cranberry Compote
If you can't find kumquats, don't panic — the recipe works fine without them.

Yukon Gold Potato and Artichoke Salad
Onions, olives, basil and lemon accent this unusual combination from Un Grand Café in Chicago, Illinois. If you cannot find Yukon Gold potatoes, regular white-skinned potatoes will do nicely.
Anaheim Chile Salsa Verde
This recipe originally accompanied Grill-Roasted Brined Turkey with Anaheim Chile Salsa Verde . This beautiful, mild-flavored green salsa may be served heated or at room temperature. For the brightest green color possible, add the cilantro just before serving.
To Crack and Grate Fresh Coconut
This recipe can be prepared in 45 minutes or less.
When buying fresh coconuts, look for ones without mold (check the eyes) or cracks. Choose coconuts that are heavy for their size—a sign that they contain plenty of liquid, which keeps the flesh from drying out. The thin, clear liquid, or "coconut water," can be used in soups or for cooking rice. You can also drink it as is. If it tastes sweet, the coconut is fresh; if it tastes oily, the coconut is rancid and should be discarded.

Roasted Garlic Oil and Roasted Garlic
Few foods metamorphose as dramatically or alluringly as garlic when it is roasted. Hardly a savory recipe exists in which one could not imagine this substance. I always have these garlic preparations on hand.
